I tried this recipe and it seemed easy enough but when I blended the yogurt with the cilantro, it came out liquidy. (I used whole milk yogurt -- the kind with the cream on top and stirred that first before adding to the blender.)

This recipe had good bones but it just didn't taste like the raita you would get in an authentic Indian recipe. I would not add as much lemon as suggested in the recipe as the Greek yogurt already has a lot of bite to it. I'm going to try a little sugar next time to balance out the savory, sour and astringent.
Use Greek yogurt or cheesecloth

Melanie - Try using Greek yogurt next time. It's much thicker. If you can't find it, use cheesecloth to strain the regular yogurt, which thickens it. You might also want to try stirring by hand instead of with a blender for a courser texture. Good luck! Katrina
