I thought 375 was too high and was right. I baked the first round @ 365 at they were very brown and crusty all over...good if you like them that way. I love the original version and I love what I can make it into differently. Overall a great recipe. I would recommend that you do not skip the step that mashes 2 bananas seperately. I subbed one cup of whole wheat flour for 1 cup of white flour. I have made these a few times. This recipes also works with with white or brown sugar. Here's my take on the very few people who don't rate them high: Ripe bananas are RIPE, black skins, mushy insides. Perhaps a few more days on the shelf would have improved the flavor? Make sure you use Brown sugar, this adds a maple-like candy flavor that really sets these muffins apart. If you don't like pecans, don't use them. Try english or black walnuts, but make sure they are fresh. Your flour needs to be fresh. If you use flour that you bought 6 months to 1 year ago, the flavor will show it. Also, since the recipe calls for a lot of butter, I used 1/2 cup safflower oil and 1/4 cup butter instead of 3/4 cup butter and I found that the muffins were a little moister. I used walnuts too, since they were on hand and I toasted them the second time I made the recipe, which I liked better, though it does add an extra step.
