I made minor substitutions based on what I did/didn't have in my cupboards - fresh cooked green beans for canned, no pimentos, brown rice mix instead of white-and-wild - and though the amount of mayo and cheese nearly kept me from making it altogether, I was surprised how comforting the results were. It's still very rich so serve small portions with BIG salads, but nice recipe, Paula; my husband loved it!

Yummy and filling!!

I didn't have all of the ingredients listed and had to sub. I used Tyson diced chicken, 1/2 lite mayo-1/2 no-fat sour cream, and cream of mushroom soup and left out the water chestnuts. My husband was skeptical about the dish but really liked it. Next time I'll use 1 can of green beans and add more cheese. Overall, it's really yummy. P.S. If you get to Savannah, you HAVE to eat at Paula's place. We ate twice in 3 days and it was WONDERFUL.

I already had the ingredients on hand, minus the water chestnuts. I boiled 2 boneless chicken breasts in chicken stock and microwaved some brown rice. In less than 30 min, the casserole was in the oven next to a pan of Grands biscuits. And my husband liked it! I like that it was SUPER EASY and inexpensive for a busy weeknight family meal.

I tried this recipe with left-over turkey from Thanksgiving. I substituted the water chestnuts for mushrooms, used only one can of french-cut green beans, and added more cheese! I also substituted the cream of celery soup for cream of chicken. My husband was crazy over it! I actually froze half of it and had to take it out of the freezer to cook that night! We absolutely loved this recipe. This is definitely a keeper! I know that this will be one that I will use for years and years! Thanks Paula!

I didn't add as much mayo as it called for and also added artichoke hearts and doubled the pimentoes. The red and green was a great holiday hit! Cut up a rotisserie chicken to make it flavorful and even easier! My entire family really enjoyed it.

This casserole goes together really quickly. If you are super concerned about fat, it's easy to modify. If you aren't a fan of cream of celery, try cream of mushroom soup. I think the funkiest flavor came from the seasoning on the rice mixture. May try a different box of Rice A Roni next time. PS. If Paula Deen ever tries her hand at "low fat", I'm no longer a viewer. At least the woman eats the food that she's preparing! Go Paula!

User: Bobbi from Flushing, NY    User Rating:
Although a beautiful lady,Paula is a scary cook. Most of the time there are no real veggies in her recipes and they all seem to follow the same path..butter,mayo,sour cream, half & half, heavy cream and enough chedder to chock a horse. What I would like to see is more real veggies..green beans is not the only veggie out there. And,if you can't cut down (or out) the fat at least advise on subs to use.You have new cooks just learning give them alternative ingredients for your recipes like most other cooks on the FN do.Saturated fat will kill you..lighten up,Paula. You like to call yourself the Queen of butter, you're more the Sat(saturated)fat Queen.

My family really liked it. It's an easy weeknight casserole that I can toss in the oven after we get home from dance & gymnastics. I try to lighten the recipes and so I used Fat Free Mayo (and less of it..about half) and then I used low fat sharp cheddar cheese. Next time, I'm going to try some of the suggestions from the other reviewers and use broccoli & cream of chicken.

Extremely Versatile To Meet All Tastes

Some in my family do not likewater chestnuts, celery soup, or the calories from regular mayonnaise. I have made it leaving the water chestnuts large enough for people to eat around them, left them out, or added carrots in their place. I usually substitute either cream of mushroom or cream of chicken for the cream of celery. As for the mayonnaise, I either split 1/2 regular with 1/2 lite; if I have a bunch of fat gram counting people coming I just use all lite mayonnasie. Any way I fix it everyone has always been happy. Just remember that cooking is an art not a science and you have to have fun with it.

This did not appeal to my children at all and my husband & I were luke-warm about it. It's not bad but just didn't bowl us over. I have so many recipes and find new ones all the time online so I'm only keeping the ones that we love! I'm sorry to say this just wasn't one of them. I used canned chicken which probably was a mistake. My hubby thought he was eating tuna! I could try again with cut up rotissere chicken and make some other changes but if a recipe isn't good enough to start with then what's the point?

I read many of the reviews before attempting this, and reduced the mayo to approx 1/2 c. (I also eyeball everything). Also in reading the reviews I saw how one reader recommended poutry seasoning, and I thought that would be a good idea, but forgot to add it. I'm sorry I didn't add it, as this was bland, and definitely missing something. I will make it again, but adding in the poultry seasoning for a little bite. It was good comfort food, just a little bland. But on an up note, it was more than 1/2 gone with only 4 of us eating it, as some took second helpings!!!

My daughter look at it and said yuck before I put it in the oven, and that she won't eat it, especially because it had mayo in it. However, I had to be gone while it was baking, and when I came home and asked how supper was, my husband said it was REALLY, REALLY GOOD!!!! and was heading for another helping.(When I got home about half of it was gone already!) Then I asked my daughter if she even took a bite, and she said "That was really, really good mom!! I ate a whole bowl!" It was quick and easy.(Kind of!)

I saw Paula make this a while ago but never hads a chance to make it. I read all the reviews and decided that some of them are just plain bunk. The use of canned green beans didn't faze me at all. After all working moms need to have all the short cuts they can get that are dependable. I do have to admit though that I did not have any on hand so I uses frozen instead. I also thought that 1 cup of mayo was too much and used 3/4 cup. I also added 1/4 teaspoon of poultry seasoning which gave it very good flavor. I forgot to add the cheese into the mixture and added it to the top instead. My husband really liked it, and I really appreciated it the next day when I could pack the leftovers for our lunches. It was really good the next day since the flavors had time to "marry". I think this would be really good served as a pot pie type of dish also.

I have had a recipe for several years now called "Castle Rock Chicken Casserole", that my Mom gave me when she lived in southeastern Kentucky. This is almost identical, but adds cheese, and it seems to round out the flavors more. Plus, who can resist cheese? Castle Rock also had no green beans, which give a nice color and texture; it does add some toasted almonds for a nice crunch and flavor. I made it today with leftover turkey, so it can be one of those Thanksgiving weekend leftover treats.

I made this recipe for dinner tonight and it is an absolutely wonderful dish! Only substitution was frozen green peas instead of the canned beans which I don't care for and didn't have fresh ones to cook. I would serve this to anyone and be proud of it. The combination of the ingredients is wonderful.

I was very nervous about serving this dish to a group of 4 women in their 30's. But everyone loved it! I didn't include the pimentos and I used rotisserie chicken and it was s huge hit. Although it did not have a nice presentation the taste was wonderful. I would definitely make this again. Just wondering what else to serve with it.

User: JoAnne from Smyrna, GA    User Rating:
Sorry, I'm definitely in the minority here by not liking this recipe. I had great expectations hoping this would be outstanding so I could make it for company coming in the day before Thanksgiving and the convenience of making something I could prepare ahead of time. It's easy and convenient alright, but nothing special at all. I had one portion and threw the rest away. Sorry, I was hoping I would love it too.

Just okay

This is extremely easy and a great supper to take to a friend in need. I did substitute frozen baby green beans for canned & used half of the recommended pimentos. I also used half of the recommended water chestnuts and I chopped them very finely. I didn't use the entire cup of mayo, nor did I use the entire can of soup... Enough to incorporate all ingredients. These changes made it seem more "homemade."

User: SAYURI from Pleasanton, CA    User Rating:
I tried a lot of things people mentioned. I used cut green beans (frozen), just rinsed them under water a bit. I didn't use the pimentos and tried red bell pepper for flare. I used all natural rice from Near East and light mayo from Trader Joe's to help make it a little more healthy. It tasted fine. It was very creamy, not saucy. That was good. I used a bit of french fried onions on top and the bisuits as suggested by someone else. It was comforting. I just wouldn't give it a 5 because it's semi homemade and it doesn't have that extra zing that would make it a 5.

The only substitution I made, was using a 14 1/2 oz can of whole chinese straw mushrooms, as I only had one can of the green beans. I highly recommend this dish, as it's quick, delicious, and a fantastic cupboard cleaner! :)
