I read some reviews about the cookie not going thru the pastry bag. Another option is to use a cookie press. I also saw that freezing the dough overnight, then letting them thaw to softness completely changes the way they taste. In other words, when I baked one batch right after making the doguh, they didn't have the bakery taste. I froze the rest of the dough for 2 days until I needed it. I thawed it completely, and when they were baked and sandwiched with jam (and dipped in choclolate) the taste was complete different and just like the bakery. I think that's called "mellowing" the dough...letting it sit for a day or two before baking. You can also let it sit in a cool place for a couple of days before baking...it doesn't have to go in the freezer. I loved them.

i'm a terrible baker, but these cookies were so yummy and easy to bake. i stirred in some mini chocolate chips for chocolate chip cookies. i personally like my cookies a little more crispy, so next time i'll be sure to press them a bit more. but these are great if you love soft cookies. i also noticed the dough getting a little soft while i pressed them into rounds. i just put them in the fridge for about 10 mins to firm up again before popping them into the oven, and they turned out just fine.

I attempted to make the star shape. Unless you have a "real" (i.e. cloth) pastry bag---forget it. I used my usual makeshift pastry bag (plastic bag fitted with tip)---the dough was too stiff to pipe. I kept blowing the bags seams or the tip would shoot out. Just as well I guess from reading the previous reviews. I thought I could solve the spreading by chilling the dough but according to previous reviewer that didn't work. So instead of elegant looking cookies...I have rustic looking cookies that any good Italian Nona would be proud of. Did I mention that they taste delicious. Do yourself a favor, make the thumbprint version---you'll enjoy them more.

After reading the reviews for these cookies, I decided to try them, in hopes of coming up with a solution to the spreading problem that most of you have been experiencing. First, I creamed the butter cold, with the sugar, insuring that it wouldn't soften too much, which I thought might be the reason for the spreading. After I piped the dough into perfect stars, I chilled them in the fridge for two hours. They were so firm, you could have played ping pong with them, and they still would have retained their shape! I was positive the cookies would hold their shape, but they spread. I decided to try again, this time freezing them for two hours. I preheated the oven once again (I forgot to mention that I only preheated it for 10 minutes, to insure that the oven wasn't too hot), and checked the cookies after 15 minutes..they had spread. On my third try, I decided to add a little more flour to the dough, and then chill it. No dice. I give up! Could anyone here who managed to keep the cookies in their perfect star shape, please enlighten us? :) I would give this recipe 5 stars for the flavor, but I have to subtract 2 stars, -1 for time wasted -- as you take the time to fill the bag and pipe them, and it's all for naught. Another -1 for looking forward to beautiful stars (especially if you're having company) but ending up with vanilla wafers.

With all the low star reviews, you seem to all have the same problem -- runny cookies. Your problem may be in your choice of bakeware. Plus, I believe she used a silicone (not sure of spelling right now) pad on her cookie sheet. You could also use parchment paper which would help with runny cookies. DON'T GIVE UP, try it once more!!

I loved these cookies. The recipe list is so simple I always have the stuff to whip up a batch. I have pastry bags and tips so piping the cookies into starts was no problem for me. I used a little frosting to hold the cookies together. They are always a hit.

These cookies reminded me so much of the ones my grandma used to make for us when we were little. They were very easy to make and my son loved helping me roll the dough into balls and pushing his thumb in them to make a thumbprint.

These cookies looked great on t.v. They are the same Italian butter cookies a friend brings back from Chicago. I was looking forward to surprising him with a batch of these. When I made them they spread into little crisp disks! There was nothing tender about them & they completely lost the pretty star shaped that I'd piped them in. What went wrong? I noticed from reading the other reviews that one other person had the same problem as I, and the others seemed to have more sucess. Does anyone know why? I'd love to try them again, but it pains me to throw anything away...even if it's a flop!

These cookies looked so good when Giada made them, I knew I had to give them a try-- plus there were only a handful of ingredients you needed, all of which I had in my pantry. Normally, I don't bake much from scratch, but these cookies were EASY to make, and tasted so authentic (like the ones you get at a bakery), buttery, and tender. I went out and actually bought a pastry bag to get the fun shapes she had. I'm making a double batch this weekend!

I tried these cookies because when I was a little girl my grandmother would bring these to my house from her Italian neighborhood in Williamsburg, Brooklyn, NY. I can't believe I made these, and they were ohhh so delicious and ohhhhh so easy. Thanks Giada for the blast from my past and making me remember my grandmother.

I just watched this episode this afternoon and just by looking at them, knew I had to try them. So I did, and they were absolutely delicious and easy to make. I live in Pennsylvania and finding good italian cookies are difficult. I originally am from N.Y. and I am italian so gosh what a treat this was. This show always has amazing recipes and I am glad to add this to my collection. Try it, you won't be disappointed:)

I made this cookie as the Thumbprint cookies. The taste was very good, and the dough was nice to work with. The cookies spread out too much when baked, so next time I will roll them in nuts first. Over all, they are a simple, tasty cookie.

These are great! So easy to make, and with ingredients that are always on hand. I recommend doing the thumbprint version. I fill mine with strawberry jelly and they come out wonderfully.

at first i wasnt sure if these cookies would turn out well because i heard so many reviews of the cookies loosing their shape and not being so tasty. BUT i still decided to make them and they were a hit!!! my boyfriend loved them and he doesnt really like cookies but these he couldnt get enough! as well i took some leftover to work and they were a hit!!!! great recipe and the cookies kept their great shape!!!!!! so happy they turned out, i will be making these years to come!

Fantastic! I didn't like ordinary sugar cookie. But this cookie is rich and crispy. Super easy,tasty and looks good. Piping is fun and finish up elegant. I love it.

Why Italian American? I had 1st tried these cookies in Italy. My aunts & grandmother, taught me how to make them. It was a butter cookie, not a shortbread as Giada's. Sorry! Nutella, Marmalade, Fig Jam; Vary the extract flavorings - orange, almond, rum OR combine some flavorings. 1/4 teaspoon lemon extract & 1 teaspoon vanilla extract. I like to substitute 3 - 4 oz mascarpone cheese or cream cheese for some of the butter. Another neat idea to get a mocha taste - I add powdered cocoa & instant coffee. Substitute Vanilla Sugar for regular sugar. Basic tips: 1) Don't grease cookie sheets. 2) Cream butter & sugar till light & fluffy. 3) Add flour gradually. 4) Check for dough consistency before adding all of the flour. U might not need it all. 5) If dough is too dry, add 1 egg yolk. 6) If dough is too soft, chill 30 to 60 minutes.

I just made these a couple days ago for a Mother's Day gathering, and they were so good and so easy to make! The dough requires a little pressure on the pastry bag, but it was still much simpler to pipe than other similar recipes I've tried. I was kind of dissappointed because the star shape "melted" a little bit in the oven, but it seems like a lot of people had the same problem. It still looked like a star, just a little deformed. I thought it was because I used margarine instead of butter, but I don't think that's it. I think next time I will try shortening. Other than that, great taste and texture. My finacee loved them, just ate one after the other as if they were m&m's :)

For thumbprint, this should be ok but, for piping, would hold back 1/4 cup of the flour & use 2 egg yolks (instead of the one egg) then bake at 375 for 12 mins.

This cookie was great. I didn't pipe it through the pastry bag, just made thumbprint cookies. I filled half with jam and the other half with the chocolate chips, then when they came out of the oven I sprinkled them with some powdered sugar. Next time I will make them all with jam. I like them better. Great recipe!

After watching the show I decided to try this recipe. I followed the instructions precisely. I also had my eggs at room temp as Giada stated on the show and was careful not to overmix. Despite all my efforts, the cookies did not hold their shape. So very dissappointing. When the cookies came out of the oven and my 3 1/2 year old son said "what happened to the cookies?" I had to laugh. The flavor was great though. Think I will experiment using baking powder or soda. If I am successful will let you know.

These cookies were very good. Although they did not come out of the pastry bag as easy as it did for Giada. I just made round clumps and they held there shape. I made sure all my ingredients were at room temp. and Giada stressed taht you should. The only down fall was that it didn't come out of the pastry bag easy. But the cookies were eay to make and were very good. I also made a batch with splenda and they also came out good. Enjoy

I did not have the pastry bag that I should have and between my move I lost my bag and big tip so I had to use a smaller tip, but I learn after first time in my cookies. Meaning that the first time is ok, but next time will be awsome. But these cookies were absolutely delicious. I cut marachino cherries in half and stuck it in the middle of the cookie. My husband could not stop eating them!!! If I had the right equipment they would have been perfect! Thank you for your recipie. I watch your show all the time. I love the food channel and web site. I piped it thru my cookie press which can be transformed into a piper by attaching tips. It doesn't matter if they don't look perfect cuz they bake up fine & the taste is delicious! We even love 'em plain! Didn't have butter but used half marg & half shortening instead. Still turned out great. For V-day, plan on pressing it thru the heart cookie press, indenting the top to fill w/preserves, & baking. Thx Giada for the DELICIOUS, quick-n-easy, new cookie recipe!
