Excellent roasted, rustic flavor 12/04/2004 at 11:26am User: DEBORAH from Franklin, MA User Rating: This recipe is very simple and has a delicious slightly roasted, true rustic Italian flavor. I find that using plenty of fresh basil and a generous amount of black pepper along with approx. 1 tsp. of dried red pepper flakes gives the sauce just the right taste; and don't skimp on the fresh garlic and olive oil either. I blend the roasted eggplant, cherry tomatoes, and additional basil into the sauce over a low heat just before mixing in the pasta, and I use two 800 gram cans of San Marzano tomatoes. The eggplant practically melts into the sauce and isn't too overpowering for people who aren't big eggplant fans like my husband. Once, I made it without the fresh cherry tomatoes, and it was still delicious. A definate keeper. I did like the eggplant and even my husband ate it. Maybe I didn't use enough cherry tomatoes. The eggplant added a wonderful creamy texture to the dish. Nothing like the bitter, semi-crunchy, weird vegetable I remembered from my childhood. I am very much a sauce-du-jar person. But this took, maybe, just five minutes more than my usual pasta meals, and was 50 times more flavorful. To make this recipe even easier, I used canned whole tomatoes that already had basil added, and used some dried basil to taste. Also, instead of mashing up garlic cloves, I used pre-minced garlic. There was one little snag; the eggplant peel was hard so we just ate the middle. I think next time I will peel the eggplant. The recipe seemed to yield for more than 4 people, which was great because it gave my friends the opportunity to fight for leftovers. I think this made a really big difference. Also key to this recipe is the chopped garlic that you roast with the eggplant. I used Japanese eggplant because it is less bitter. At the end of cooking the sauce I added the tomatoes, eggplant and some capers. Everyone in my family loved it! If you try this recipe, just please please, after you toss the eggplant with the chopped garlic (which is probably pointless), DO NOT leave any garlic pieces on the eggplant before putting in the oven. At 425 for 20 minutes, the garlic burns and gets SO horribly bitter and disgusting, and ruins the whole dish. I'm sorry but though Tyler seems nice and usually his stuff looks as though it will taste good, it never does!!!!!
