She didn't leave these recipes behind, as many great cooks don't, but I made only a couple of modification and WHALA! it is just amazing! My entire family loves this recipe and will be having this on Christmas Day. It's still the wonderful tradition it has always been. Be careful though..This soup is highly addicting! It can easily be the main course with a fabulous Foccocia Bread along side. Hers's a neat thing: Take a bag of Italian seasoned croutons mix with one egg and water( like an egg wash consistancy) dip croutons in egg wash remove with slotted spoon and fry in olive oil and butter until golden brown. I've checked out a lot of other Italian Wedding Soup recipes and the meatball recipe is pretty much identical with all of them so I'm not sure what caused my bland meatballs. Maybe cooking them in the soup instead of roasting them separately? The broth was thin though not tasteless. I'm sure the reason is that I used low fat/low sodium commercial broth so I'm not blaming the recipe but I think the addition of some carrots and onions to the broth would help. I added 1/2 c. star shaped pasta at the meatball step, and swapped out spinach for the endive/escarole. The only thing I would do differently next time is to add the spinach at the very end (I made this three hours ahead), because by the time I served it, the color wasn't great. It makes the soup into a meal. No fresh greens in the fridge? Add half a box of frozen chopped spinach instead of the greens. I haven't eaten wedding soup often, but my husband who is from an Italian community up north loves it so I thought I would give it a try. I used celery, leek and grated carrot to start the base then added the broth. I used 1 lb of mild italian sausage instead of the beef and pork mixture. I added orzo to the broth because I couldn't find anci de pepe and kale insead of escarole. I also precooked the meatballs in the oven before adding to broth. At the end I used more cheese and only one egg. Very good, will make again. Here's how I modified it: I could not get either Endive or Escarole at the market, so I substituted Kale. I doubled the chicken broth. I also added about 1/4 cup of Sun Dried Tomatoes to the broth. Instead of mixing the hamburger and sausage meat, I just bought 1 lb of Italian Sausage. To this I added the onion and about 3 teaspoons of parmisan cheese, and then baked the meatballs until done. Made them really tiny. I added them just before drizzling the egg/cheese mixture into the broth. For an excellent pairing, cut small slices of French Bread. On a plate, sprinkle Italian seasonings and about 1/4 (or more to taste) of extra virgin olive oil. Dip bread in this mixture. It is....Magnifico!
