The soup was very tasty but, I added more chicken stock to it and I also added pasta. It was a hit this on Christmas Day! The meatballs were really easy to prepare and although I have never cooked with Escarole before it was delicios!

This recipe was a hit each time I've tried it. I've used both my own chicken soup and canned stock, and had none left. I personally like it better with my own chicken soup made with turnips and parsnips, as well as carrots, celery, onions, and dill. The meatballs are the best part!

I was looking for something to do with a pound of hamburger. Didn't use pork and added basil and thyme to the meatballs. I also didn't have enough chicken broth so I used part beef broth and no escarole or endive so substituted 2 packs of frozen spinach. It still turned out great. Next time I'll try following the recipe!

This is a great tasting and easy recipe. I was low on chicken stock so I added some beef stock & used spinach instead of escarole. My husband raved about it - and it was done in about 30-45 minutes.

For starters, it needs pasta...and not just any pasta but a specific pasta. Be sure to pick up Acini-de-pepe pasta. It is what this soup is missing. Also the sugesstion regarding pork sausage to add some spice to the meatballs is also excellent. In addition if you want to flavor the meatballs without the spice, mix the ground meat with parmesan cheese and sprinkle in some basil.

This soup was easy to make and a great hit at my house. My husband proclaimed it was like his mother used to make but she just called it "escarole." I used escarole instead of curly endive. The flavors are wonderful and it's surprisingly filling.

I have made this over and over again! I have a hard time finding curly endive so I substitute it for kale. It even taste better the next day as most soups do!

I saw Giada making this recipe, and I was amazed to see how much it was being prepared just as my Grandma used to. She didn't leave these recipes behind, as many great cooks don't, but I made only a couple of modification and WHALA! it is just amazing! My entire family loves this recipe and will be having this on Christmas Day. It's still the wonderful tradition it has always been. Be careful though..This soup is highly addicting! It can easily be the main course with a fabulous Foccocia Bread along side. I had a tasty difference when I substituted the Parmesean for freshly grated Picorino Romano, and mixed my favorite Italian sausage instead of ground pork. Shop for some fresh dry herbs as well, and I mixed up the endive and the escarole. DAHLISH!

I just loved this soup. The egg and cheese give it that special touch and the meatballs (the most complicated part of the soup) only took me about fifteen minutes! Besides that, I thought it was delicious. And so did my family.

My grandparents always made wedding soup and I've been dying to try it myself. This recipe is great. Some changes I made: One change I made was using ground fresh italian sausage mixture instead of regular ground pork. Ends the bland meatballs other people have complained about. I also added a pound of Pastina pasta, because thats how my gram and gramps made it. I cut back to one egg because of this. Cook the pasta seperately and add it to the soup.

I love wedding soup and never tried to make it until now. This recipe is simple and very tasty. The only thing I would do differently is make half the portion because it was too much soup for a single person. I froze half and still had alot of soup to drink all week.

I have made it a couple of times now. I added veal with the beef and pork mixture. Yummy. Hers's a neat thing: Take a bag of Italian seasoned croutons mix with one egg and water( like an egg wash consistancy) dip croutons in egg wash remove with slotted spoon and fry in olive oil and butter until golden brown. And serve in soup with romano cheese. Always a hit!!

This is a very wonderful recipe and so comforting to eat! I made it twice already. The first time I substituted it with kale and the second I used endive. I would make it again with Kale since endive tends to get soggy. Kale with the soup is excellent. The meatballs are wonderdful and delicious.

This is delicious and so easy! I used spinach instead of endive and it was fine. Also, someone suggested adding Accini de pepe pasta which I did. Be careful - the first time I added the entire box which was too much. It got kind of gloppy. This time I only used half the box and it was perfect. This is a perfect winter dinner.

Unlike other Italian meatball recipes, these are fairly small in size. If you are familiar with Swedish meatballs, this is the size you are after. I made 32 meatballs with the ingredients listed. With the amount of cooking experience I have, my standards for good food are quite high. It's no secret fresh ingredients and lengthy preparation generally yields the best results. I am pleased to say this quick recipe yields amazing flavor without hurting your pocketbook. The meatballs are sooo tender you'll wonder how something so simple could be this good.

Wow - this was great, my husband had seconds & He's usually the cook! Intead of endive - I used Bok Choy & I added 1 celery stalk, (more would have been ok) a handfull of left over fresh baby spinach & 2 russett potatoes. This is a wonderful Wedding Soup recipe. The only changes I would make would be to make the meatballs smaller and omit the salt in the meatballs. All in All, this is a keeper.

I saw this on an episode of Everyday Italian and decided to try it. We love soups. I had most of the ingredients on hand and it was very easy to make. I could not find endive or escarole, so I used Baby Arugala. It was delicious! My husband and I both had seconds. My 2 year old daughter loved the meatballs. This is definitely a keeper and one I'll make for guests.

I followed the recipe for the meatballs exactly as written and it smelled wonderfully fragrant raw but once they were cooked, they tasted surprisingly bland. I've checked out a lot of other Italian Wedding Soup recipes and the meatball recipe is pretty much identical with all of them so I'm not sure what caused my bland meatballs. Maybe cooking them in the soup instead of roasting them separately? The broth was thin though not tasteless. I'm sure the reason is that I used low fat/low sodium commercial broth so I'm not blaming the recipe but I think the addition of some carrots and onions to the broth would help.

This soup is terrific. I used ground turkey instead of the beef and pork, and the meatballs turned out great. Also used 1/2 c. Italian breadcrumbs instead of the white bread. I added 1/2 c. star shaped pasta at the meatball step, and swapped out spinach for the endive/escarole. The only thing I would do differently next time is to add the spinach at the very end (I made this three hours ahead), because by the time I served it, the color wasn't great. I'll definitely make it again!

Everyone from Pittsburgh knows that authentic wedding soup must have Acini Di Pepe pasta in the broth (cook separately) and shredded chicken in addition to the meatballs. It makes the soup into a meal. No fresh greens in the fridge? Add half a box of frozen chopped spinach instead of the greens. There's rarely a wedding in Pittsburgh that doesn't have this wonderful soup on the menu. Thanks Giada!

My family always requests that I make this for everything from a special occasion to just a normal dinner. It is quick and easy to make. The worst part is just when I cry from grating the onion! I would highly reccomend this recipe to anyone!

I started with this basic recipe and made some modifications. I haven't eaten wedding soup often, but my husband who is from an Italian community up north loves it so I thought I would give it a try. I used celery, leek and grated carrot to start the base then added the broth. I used 1 lb of mild italian sausage instead of the beef and pork mixture. I added orzo to the broth because I couldn't find anci de pepe and kale insead of escarole. I also precooked the meatballs in the oven before adding to broth. At the end I used more cheese and only one egg. Very good, will make again.




If only there was some pasta. . .

The flavor of this recipe is outstanding, especially with the addition of the egg and endive. I experimented a bit and substituted the endive with swiss chard, and loved the results. The one thing I missed in this recipe was a touch of pasta. I added a half cup of orzo and it added just enough dimension. Loved it!

This is an awesome recipe for Italian Wedding Soup. Here's how I modified it: I could not get either Endive or Escarole at the market, so I substituted Kale. I doubled the chicken broth. I also added about 1/4 cup of Sun Dried Tomatoes to the broth. Instead of mixing the hamburger and sausage meat, I just bought 1 lb of Italian Sausage. To this I added the onion and about 3 teaspoons of parmisan cheese, and then baked the meatballs until done. Made them really tiny. I added them just before drizzling the egg/cheese mixture into the broth. For an excellent pairing, cut small slices of French Bread. On a plate, sprinkle Italian seasonings and about 1/4 (or more to taste) of extra virgin olive oil. Dip bread in this mixture. It is....Magnifico!

I share recipes with my neighbor but only gave her a dab as this soup is addictive. I used ground chicken and pork and it was fabulous. Added two shakes of red pepper flakes and fresh thyme too as it goes so well with chicken. I would not use ground turkey--too foul! Thanks Giada

The soup was really good. When I first tried it I thought it was just ok, but the more I ate it the more I really ended up loving it. I used a lot of substitutions-- beef with Thyme and basil instead of pork, added orzo pasta and spinache -- and I really liked how they added to the soup. It made a really big pot and my family (and friends) were eating it all week long. Try this soup, and don't hesitate to make some revisions.

I have to say that this recipe is SOOOOO easy and so wonderful! With a loaf of crusty bread, you have a great meal! Make sure and use the low sodium broth because the parmesan will add enough salt to the soup. I've even made it with fresh spinach instead of the other greans! This is winner!!!!

I made this soup tonight and it was a hit. However, I changed the recipe a little to satify my little ones. If your kids don't like white-ish colored meat balls I suggest browning them a little before dropping them into the soup. I added a little pasta - maybe 1/4 to 1/2cup of tiny pasta. I skipped the escarole because my kids would have went yuck! Instead I added a little diced green onion for color. I also added about 16oz more broth. Oh and I used Italian sausasge instead of pork. It came out delicious!

I grew up with Italian Wedding Soup - this is not authentic Italian Wedding Soup. The meatball recipe is good but meatballs should be teeny - nowhere near 1" - way too big. They should be about the size of regular marbles. There should be chicken in the soup, the escarole is right - lots cooked and chopped up and put in the soup. But the egg drop? Where did that come from? No self respecting Italian I know would call this Wedding Soup! It may tast good, I wouldn't argue with that but call it what it is, Egg drop meatball soup!

I paired this with Paula Deen's Chicken Divan. Some blue cheese garlic bread rounded out the menu. Because the meatballs are labor intensive, this recipe takes longer than some soup recipes, but it's well worth the time invested. The store I visited today didn't have the vegetables recommended, so I used fresh spinach and a little leaf lettuce. It was excellent. The little meatballs make the soup.

I usually like Giada's recipes and I appreciate her looking out for my waistline, but this was very disappointing. The "soup" part was almost flavorless. The meatballs were fine, but not great. I can't help but wonder if it would taste better if you browned the meatballs first. I notice other recipes for this dish include this step. I find the 5 star rating for this recipe puzzling.

She told me that her mom used to make her IWS when she was sick and that "she added orzo." So I did the same. Friend was so grateful and BF loved the soup as well. I highly recommend it. The meatballs were the most time consuming part of the prep but the soup is entirely worth it. And PS - I'm Italian.

I thought the soup was okay. It did seem like it was missing something though. I used low sodium stock along with regular chicken stock. I think I made the mistake and used a cheese that wasn't pure parmesan. So I believe that's why my meatballs were tasteless. I also used spinach, which was good. I probably would not make this again.

This was by far, the best recipe I have made for Italian Wedding soup! So fresh and you can taste it's homemade! I still prefer the escarole however, instead of the endive/chicory. (The first time I made it, I used both and just prefer the escarole in this soup.) Excellent recipe for the meatballs...and the egg with parmesan whipped into the broth - yum!

I loved this soup as did my husband. After reading the reviews, I decided to put some herbs in the soup to give it some flavor. One teaspoon thyme and one teaspoon basil did the trick. Next time I will also use the basil in the meatballs. Delicious!

This soup was great, especially on a cold night! I did make a few changes, using escarole instead of endive and substituting ground turkey and hot italian turkey sausage for the beef and pork. The flavors worked very nicely and the broth was not bland at all. I also added 1 cup of small pasta and omitted the egg. I will definitely be making this again!

Endive works much better than the that is often used in Italian Wedding Soup. It maintained it's beautiful color and taste, instead getting generally icky like Spinach does in soups. I was surprised that Giada didn't use pasta, however. Since we like that part of the soup at my house, we added "frog eye" pasta to the bottom of the bowl before spooning in our soup and that came out rather nice.
