The fritters were tasty, crisp on the outside, and soft interior. We were not sure about the interior consistency, as we cooked them for 3 minutes. We were afraid to cook them any longer. We did a drizzle of cane syrup first, and then tried adding a 100% maple syrup drizzle also.

Wow! These were really great! I cheated and used can corn. As a mother of 4 under the age of 5, I didn't have time to do the whole fresh corn bit. Anyway, I made these for my daughter's Thanksgiving Celebration at school (1st grade)and the platter was gone in no time. The teachers enjoyed them just as much. When my husband tried them, I had to make another batch for him at home. Very easy and a great way to get kids to eat pumpkin and corn!
