Great Taste 04/28/2008 at 11:30pm User: Vanessa from San Antonio, TX User Rating: The chicken was a huge hit!! LOVED IT!!! 11/26/2007 at 03:10pm User: Lauren from Furlong, PA User Rating: I made this for my boyfriend and me, and we both LOVED it...Mr. "It's-Okay" RAVED about this and asked me to make sure to keep the recipe. I did eliminate the zest from the breading, as I don't care for it, but it was still AWESOME. Loved the sauce, too. It was the perfect complement, as were the plum tomatoes, to the chicken. Yum-mo!! 10/18/2007 at 07:02pm User: Jen from Atlantic Beach, FL User Rating: These were de-licious!! The sauce was very easy to make and the lemon in both the sauce and the zest in the breading really brighten this dish. Top that with some juicy ripe tomato and it's wonderful! Great chicken! 08/27/2007 at 08:11am User: KRISTINE from Parkville, MO User Rating: First of all the chicken itself was to die for. Something about the breading mixture was perfect. Second, the sauce had the perfect kick and when well with the chicken. I had no leftovers! Very good 08/21/2007 at 07:04pm User: Jasper from Cedar Grove, NJ User Rating: The chicken turned out juicy on the inside and crispy on the outside. Versatile breading 08/19/2007 at 09:47am User: Anonymous User Rating: Excellent with boneless chicken breasts as well. Just a little longer for cooking Perfect Pairing 08/15/2007 at 09:41am User: Sandy from Forest Hills, NY User Rating: The pignoli, bread crumbs, and parmesan crust go perfect with the basil and parsley pesto. It was very easy to make. Although I had a lot of left over bread crumbs. Keep the leftovers to crust pork chops for the next night. Great weeknight dinner 08/07/2007 at 09:52pm User: LISA from Bellaire, TX User Rating: This was excellent for a weeknight. If you aren't up to the risotto, use Rachel's Cheesy Orzo recipe. Very tasty. 08/06/2007 at 11:00pm User: Abby from Seattle, WA User Rating: A nice, easy, quick recipe for a weeknight dinner. I also made the risotto suggested along with it. Very good combination. Absolutely Excellent 07/31/2007 at 11:32am User: Ann from Knoxville, TN User Rating: I made this the first time after watching Rachel make it on TV. It is one of my family's all time favorites! I use the risotto recipe for a number of different meals because it is so versatile. New Twist on Chicken 07/24/2007 at 07:52am User: Carrie from Jacksonville, FL User Rating: This recipe was very good. It's a new way to serve chicken breast that isn't bland at all. Thumbs up!!! 07/07/2007 at 10:28am User: Elizabeth from Orlando, FL User Rating: Nice & easy recipe. Chicken was very tasty and tender. But, next time I will cut chicken in bite size for extra crunch. maybe will try panko breadcrumbs next time 06/12/2007 at 03:02am User: Anonymous User Rating: chicken was little dry, but the sauce was tangy and fresh-tasting Fantastic 05/27/2007 at 12:35pm User: ROBYN from Belleville, IL User Rating: Great taste and presentation. Served it several times now and my family keeps requesting it. Delicious! I am going to try the breading on fish soon. Yummmmm 04/27/2007 at 12:29pm User: Whitney from Bellevue, NE User Rating: Never made the basil sauce for the chicken, but the chicken itself is excellent....like it too without the lemon zest. Loved it! 04/24/2007 at 12:19pm User: Anonymous User Rating: Everything was great. I cut up the leftover chicken and put it in my salad and used the leftover sauce as salad dressing. Popular Demand 04/21/2007 at 11:50am User: Anonymous User Rating: Made it after seeing it on TV at gym - get requests at least once a week! excellent!! 04/16/2007 at 06:20pm User: Mardi from Hendersonville, NC User Rating: there have been few of R/R's recipes that I've enjoyed so far....but this one is RIGHT ON THE MONEY!! I used chicken breasts, pounded them thin and then cut them in half. I cooked on medium low heat otherwise the breading would have cooked faster than the chicken. At the tail end of cooking and then right before serving, I squeezed fresh lemon juice over them. We are watching our carbs so I served with a nice green salad. My husband and I enjoyed this very much - thanks Rachel. And yes, it took me much longer than 30 min! I'm sure it's b/c she has everything right there ready for her like pots, pans...and a GREAT knife that is ALWAYS sharp!!!! Excellent!!! 04/12/2007 at 09:39am User: Mickie from Nottingham, NH User Rating: This recipe was awesome!!! I followed the exact recipe and my husband and I both loved it - thanks Rachel. A Big Hit! 04/12/2007 at 09:33am User: CATHERINE from Sugar Land, TX User Rating: This was very easy to make and my whole family loved it. I didn't use the whole amount of pepper flakes and I used chicken tenderloins instead of the whole chicken breast so it would be easier for my children to pick up and eat. We loved the basil sauce but you could easily substitute marinara or any other sauce you like. I will definitely make this one again. Breading just OK 04/09/2007 at 08:32pm User: Stacy from Battle Creek, MI User Rating: I made the cutlets as the recipe stated, but instead of the sauce, used homemade pesto and slices of tomato on a sandwich. It was really good, but the breading wasn't any better than other more simple breadcrumb mixtures that I've used. Not worth the expense on the pinenuts - that flavor didn't come through for me. Delicious! 04/02/2007 at 12:55pm User: Laura from Falls Church, VA User Rating: We enjoyed this meal on Friday, it wasn't too hard to make and it tasted wonderfully. I only made 1 pound of cutlets which was enough for 2 ppl. Otherwise I left the recipe as is because I didn't want to run out of breading or sauce. The sauce was great too! Family Really liked 03/30/2007 at 10:18am User: Pam from Roswell, GA User Rating: my husband couldn't stop talking about the crust and the sauce. The kids were iffy on the sauce, but liked the rest of it. It was pretty easy, I had extra crust left over and next time I might make more sauce. flavorful 03/25/2007 at 11:43am User: Laura from Newton Falls, OH User Rating: Wonderful chicken! The sauce for the chicken was great too. The rice was just so so though. good change 03/21/2007 at 12:49pm User: Anonymous User Rating: Looking for something different, this is it. Nice and easy. All ingredients in the home. Delicious 03/16/2007 at 02:30pm User: Elizabeth from West Reading, PA User Rating: Very yummy. The lemon and parsley make the dish taste very vibrant and the peas and rice was perfect with it. Yummy 03/04/2007 at 07:10pm User: Anonymous User Rating: Great -- although I prefered using half the amount to wine called for in the risotto. Basil-Parsley Sauce 02/15/2007 at 12:21pm User: Linda from Liberty Corner, NJ User Rating: The basil-parsley sauce highlights the cutlets. This is an absolutely delicious dish! An excellent way to enjoy chicken cutlets, not to mention nutritious too! Yum 02/10/2007 at 06:06pm User: Anonymous User Rating: I have made this many times abd my husband and I both love this recipe! Great chicken recipe! 02/09/2007 at 10:01am User: Anonymous User Rating: Getting my 4 year-old to eat meat is usually traumatic, but even she loved it! Yum-O 01/16/2007 at 08:45am User: Alicia from Richmond, VA User Rating: I'm a very inexperienced cook with very little confidence in the subject. This recipe was so easy and turned out perfectly! My boyfriend and I both were taken back at how good this was! He gave me all the credit but I have to thank Rachel Ray for this one! If you haven't tried this one, it's a must! Husband says "do again" 01/11/2007 at 12:01pm User: Anonymous User Rating: I didn't make the sauce but the chicken was great by itself! yummy and easy 12/17/2006 at 08:26pm User: Kristin from woodbury, MN User Rating: I made this chicken for my husband and he loved it. I made it faster by buying prepared pesto in the grocery store and I cut up some tomato to put on top to add some color. served it will some leftover mashed potatoes! Very yummy! 12/17/2006 at 07:56pm User: Amanda from Mount Prospect, IL User Rating: This recipe was great and really easy. I breaded the chicken twice, fist I breaded them once and cooked them until breading was brown, then I flipped chicken in breading again while it was still hot. The basil parsley sause was suprisingly tasty, I was scepticle about it at first but it really added flavor to the chicken. EXCELLENT 11/16/2006 at 12:16pm User: Anonymous User Rating: This is the best chicken cutlet idea yet... Tony from GTMO 09/26/2006 at 07:20pm User: Anthony from FPO AE, NY User Rating: I am a 72 year old person who has inherited the cooking chores while the wife continues to work to support two grandkids. I can not cook without a recipe. The Crispy Chicken Cutlets was excellent and easy to do. The wife want me to cook it again for company. Thank you Food Network and your many show host. Phenom! 09/26/2006 at 11:23am User: Anonymous User Rating: This was such a gorgeous dish. We just loved it. I didn't have parsley and had to substitute with arugula and it was still wonderful. We'll definitely serve this when we have company. It took about half an hour, which was perfect. wonderful dinner 09/09/2006 at 10:14am User: Anonymous User Rating: This chicken was fabulous. My husband and son cleaned their plates. I didn't have poultry seasoning on hand but used lemon and herb seasoning which added just a little more lemon flavor but worked really well in this dish. It was very simple to make but tasted great. Terrific 09/04/2006 at 08:34am User: J.J. from Columbus, OH User Rating: This chicken was terific - my whole family loved it (which is unusual for any receipe!). Thanks Racheal for a great meal. Awesome 09/01/2006 at 02:47pm User: Jennifer from State College, PA User Rating: My husband dubbed this the best Rachel Rey recipe I've ever made (and I've made a lot of them). The chicken is fantastic, and the risi e bisi could be played with in a million different ways. Yummmmmmmo 08/31/2006 at 10:29pm User: Shameka from Streamwood, IL User Rating: I was planning on making this dish for the first time for some dinner guests who ended up canceling. Boy did they miss out on an absolutely fabulous dinner. My husband absolutely loved the chicken and the rice wasn't bad either. This is a VERY tasty meal. Will definitely add this to my dinner repetoire. Doesn't need the sauce. 08/30/2006 at 02:30pm User: Anonymous User Rating: I think it may be because its hard to measure fresh basil and parsley, but the sauce was not the best. The chicken was FANTASTIC and really doesn't need the sauce. Loved it! 08/29/2006 at 08:24pm User: Anonymous User Rating: Quick and easy to make and turned out simply delicious. Yummo 08/27/2006 at 03:03pm User: Anonymous User Rating: As Rachel would say, "Yummo." Easy, delish, pretty on a platter. We didn't change a thing, and loved it. Excellent! 08/23/2006 at 08:45pm User: Anonymous User Rating: This dish was a great success! The chicken was crunchy and tasty on the outside, and moist, flavorful, and juicy on the inside. Topping the chicken with the pesto sauce added a nice, bright flavor to the dish that both my husband and I enjoyed. Awesome!!! 08/23/2006 at 07:30pm User: Anonymous User Rating: This is a great chicken recipe, the sauce is unbelievably good for how simple it is. Pairs wonderfully with the rice!! Very good meal Wonderful 08/22/2006 at 08:43pm User: Linda from St. Paul, MN User Rating: I watched this on TV and had to go in the kitchen and try it. I had bone in pieces of chicken ready, so I used them. I browned the chicken as suggested and then put in a 350 oven for 20 minutes and then 20 minutes at 450. It was fabulous. I mistakenly used a whole lemon in the sauce, too much, so I added some Parmesan cheese, and that was not bad either. Very good and looks great. very tasty chicken 08/22/2006 at 07:41pm User: Anonymous User Rating: Loved the chicken, it's even delicious without the sauce. I liked the sauce but thought I was going to love it. I will certainly make this recipe again, but I'll try more garlic and more cheese for the breadcrumb mix. I did not make the rise e bisi. I make this all the time 07/05/2006 at 11:15pm User: Anonymous User Rating: The only chicken recipe my husband asks for! Great for entertaining..and I don't cook 06/21/2006 at 10:00pm User: Anonymous User Rating: I was able to follow the recipe without confusion. Everything tasted great! My husband didn't care for the frozen peas in the Risotto. I made it a second time and only added a few LeSuer Baby peas and it was much better. husband gave rave reviews! 06/21/2006 at 02:47pm User: Caroline from Tallahassee, FL User Rating: the combo of the pine nuts with the spices was great and my hubby raved over this one!! Ridiculously Good 06/03/2006 at 04:59pm User: Anonymous User Rating: I cannot believe that anyone couldn't love this chicken! I made it for a wide and varied audience - including my picky kids, my *sauce should be red* husband, my sister (who is a chef)and my health food addicted best friend. All agreed this was one of the tastiest recipes for chicken cutlets to be found! I would encourage those naysayers to give it one more shot - maybe go a little lighter on the lemon or be a little more heavy handed with the pine nuts. And the food processor DOES make a difference... Happy Eating! My kitchen was an absolute mess 04/03/2006 at 06:19pm User: RENEE from Thiensville, WI User Rating: but the meal turned out great. I highly recommend it. Tasty! Tasty! Tasty! 03/24/2006 at 08:01am User: Billy from Chevy Chase, MD User Rating: The 'breading' for the chicken was so delicious that I used it again to make hamburger patties. The sauce was zesty. This may be the best chicken cutlet dish I've ever made or eaten. Wonderful 03/09/2006 at 10:42pm User: Sandy from Navarre, FL User Rating: I made the crispy chicken cutlets and they were wonderful with the rice. I wasn't hot on the basil parsley sauce. Love it, Love it, Love it! 03/09/2006 at 03:15pm User: Gabriella from Sylmar, CA User Rating: Delicious! Easy to make and my family loved it. The wonderful secret is that the flavor is all in the breading. Highly recommend it, especially if you're not much of a cook. Moist & Flavorful 03/07/2006 at 06:22pm User: Jessica from Ephrata, PA User Rating: These chicken cutlets were so moist you didn't even need a knife to cut them! I don't have a food processor but I just chopped up all the ingredients and mixed them together and it made a great coating. I'll definitely make these again! Excellent even without the sauce 03/07/2006 at 01:54pm User: Dianah from El Dorado Hills, CA User Rating: I thought the crispy chicken was very flavorful. The sauce added color, and a little zing from the lemon, but next time I will probably just add lemon slices to the serving plate and skip the sauce. FABULOUS!!!!! 03/04/2006 at 02:11pm User: christina from stow, OH User Rating: I absolutely love this recipe and so does my husband. It really only takes 30 minutes to prepare and it is so delicious. There is a review on here that says it took 3 hours to make. Wow, I feel sorry for that person as I can put together a party for 20 people in 3 hours and cook 7 or 8 different things. De-Lish 03/03/2006 at 10:04am User: Wendy from New Haven, CT User Rating: This crust was delicious! I should have held off on chicken until rice was half-way done cause this chicken cooks fast. The sauce was OK...only had dry basil but I liked the zest. Fast & easy 02/27/2006 at 06:31pm User: Beth from Lakeland, FL User Rating: Had 2 chicken cutlets to fix for dinner tonight but I've never fixed them before. I will use the breading again and again. Going to try it on fish this weekend. The sauce was a welcome tangy contrast to the chicken. Delicious 02/22/2006 at 12:33pm User: Ina from Brooklyn, NY User Rating: My Husband is Italian and he cooks his chicken great, but Reachel's chicken cutless with the pesto sauce is out of this world delicious!!! Yum-O! 02/22/2006 at 01:20am User: Libby from colorado springs, CO User Rating: These cutlets are to die for! They were so easy to make, I whipped them up in about 15 minutes. The second time making it I used cod instead of chicken and it was just as great, maybe even a little better! This is definately an easy, delicious, and fancy dish. crowd pleaser!! 02/20/2006 at 06:55am User: Sandra from Piscataway, NJ User Rating: I made a huge batch of the chicken over the weekend. He rarely reacts this way to a meal!! less than average 02/20/2006 at 12:23am User: Anonymous User Rating: We didn't care for the chicken cutlets this way and totally hated this sauce! Mom's Night Off 02/19/2006 at 10:37pm User: Angela from Arcadia, CA User Rating: My husband and 11year old daughter decided to surprise the family and prepare this delicious chicken. YUMMY YUMMY! 10/14/2005 at 07:46am User: Tina from Winston-salem, NC User Rating: This was really yummy. You have to make it with the risi side dish as recommended as the flavors go great together. I made one HUGE mistake and forgot to buy basil for the sauce, so I tried to just to parsley with the lemon juice, but that was just so so. I am sure it will be awesome next time I make it with the basil!!! ENJOY! Crispy Chicken Cutlets - Delish 10/10/2005 at 06:35pm User: DIANE from Garfield Heights, OH User Rating: This recipe was very easy to make and was very, very good!!! My toddler liked the sauce on the chicken, but my six-year old preferred the chicken plain. But, even the breading on the chicken was "spiced-up", so I didn't give him a hard time. I will DEFINITELY make this again. love them! 09/21/2005 at 10:48am User: Shannon from Arlington, TX User Rating: These Chicken cutlets are real good, maybe a little spicy for the little ones but a perfect flavor for me. The pine nuts help keep it nice and moist. One of my favorites! yuck 09/20/2005 at 08:05pm User: jennifer from lynbrook, NY User Rating: I love Rachel, but I hated the this recipe. The seasoning of the chicken could have just been italian bread crumbs....its would have tasted the same with a lot less work. The basil sauce was too tangy. It was good and the presentation was beautiful with the bright green sauce and chopped tomatoes. quick and delicious 09/01/2005 at 05:57pm User: Anonymous User Rating: Quick, easy, and delicious sums it up Everyone's Favorite 09/01/2005 at 03:29pm User: Anonymous User Rating: This is one of the tastiest chicken recipes ever! The flavors are fantastic! You've got to fix this one - everyone will ask for the recipe! Outstanding! 09/01/2005 at 02:25pm User: Anne from Friendswood, TX User Rating: I have fixed this several times. My husband loves it. Need to double the amount of sauce though. The rice is good with it but it does take a bit of watching. Must Try!!! 08/31/2005 at 10:59pm User: Angela from Sterling Heights, MI User Rating: This recipe was very tasty. I have never had pesto sauce or risotto before. I really enjoyed both flavors. My husband was skeptical...he is a very picky eater, but he also liked it. The only thing I did differently was finish the chicken in the oven. I have a tendency to burn breaded chicken and under cook it too fast. So I wanted to make sure it was cooked through! Thanks Rachel for all your practical recipes! delicious 08/08/2005 at 02:56pm User: EMILY from Ithaca, NY User Rating: Loved the crispy flavorful coating, and the chicken stayed so moist inside! Even in my cramped little kitchen I really made this in under 30 minutes. The sauce was a wonderful compliment. Thanks Rachel! yummy! 04/04/2005 at 05:11pm User: MOLLY from Sussex, WI User Rating: This was really good. I only made the chicken, not the potatoes too but the chicken was fanstastic! I made it for my family and they loved it! The Basil-Prasley Sauce was too strong for us so we didnt eat it. Otherwise it was really good! I definitely reccommend trying it! This recipe made me proud! 04/04/2005 at 03:48pm User: Tasha from Olympia, WA User Rating: I planned to make this dish for the first time one night, and my dad just happened to stop by for a visit with the grandkids. I almost changed my dinner menu to something I knew how to make because my dad used to be a professional chef, and I was nervous to try something new with him. I made the dish anyway, and thought it would be a bomb. Fortunately, both my dad and my husband just loved it! Unfortunately, I hadn't planned on the extra mouth when I went shopping, and there wasn't NEAR enough for everyone to eat as much as they would have liked! Later on in the week, my mom told me that my dad had just raved about my great meal! It meant so much to me to hear that he was so impressed, and needless to say, I will be making this dish again in the near future! great cutlets 04/02/2005 at 09:10am User: KATHRYN from nantucket, MA User Rating: I loved the cutlets- the breading was great- excellent taste and spice level. I'm not crazy about basil so I just served the cutlets with a lemon sauce- everyone loved them. Heaven 03/26/2005 at 07:11pm User: James from Clearwater, FL User Rating: The flavor is divine. I've used the breading mix as my basic mix. Yumm 03/23/2005 at 08:02pm User: AMANDA from boston, MA User Rating: So Good!!! We made extra and put it on a salad for the next day, it was delicious. Also, if you make allot of extra bread crumb coating, you can store in the fridge for the next time you make it which will cut down on time (you can almost make it in the 30 minutes that way). Excellent! 03/15/2005 at 04:55pm User: LISA from Port Neches, TX User Rating: Takes a little longer than it does Rachel but it's worth it. The basil-Parsley sauce really sets it off. Very good! 03/11/2005 at 07:32pm User: Anonymous User Rating: I also found, as many others, that this took me about 45 minutes for the chicken....but then, Rachel has a prep team doing a lot for her before the show (organizing spices and cans on her shelf and having correct pans and dishes out, etc.), so 45 minutes on my own wasn't bad. The dish was delicious, but I am not a fan of basil so I did what a few others did and used a top grade pasta sauce. I would definetly make this dish again, but plan a few more minutes. As one person said....prepping ahead is what it's all about. Quick Dinner 03/10/2005 at 06:15pm User: MICHELE from Rowlett, TX User Rating: My husband and I thoroughly enjoyed this meal. I have been home recuperating from an illness and saw the show featuring this recipe, it looked quick and easy and just enough for me to handle. It turned out great and did not require a lot of effort at all. excellent 03/08/2005 at 08:34pm User: Anonymous User Rating: easy to make, my kids ate every bite, don't skip the basil sauce, it is fabulous Makes a great sandwich! 03/08/2005 at 09:24am User: MARCIA from Fort Belvoir, VA User Rating: I made the chicken without the sauce. I served it over penne tossed with store-bought pesto. Lots of flavors going on! The next night I heated the left-over chicken in the oven and then added some sliced mozzarella just until melted. I served it topped with a spoon of the pesto on toasted sliced garlic/black pepper bread from the bakery and added sliced tomato and a little mayo. Delicious! Hubby says that it is a keeper! Thanks Rachel! Chicken cutlets 03/07/2005 at 08:28pm User: JESSICA from San Diego, CA User Rating: This was a great dish and so easy to make. CRISPY CHICKEN CUTLETS 03/07/2005 at 03:05pm User: CAROLYN from NORTH BABYLON, NY User Rating: I think I just have to play with it a little bit. I expected this powerful taste and I followed the recipe to the T.and it didn't pop. The basil sauce was absolutely delicious. The next time I make it I think I'll put a little more cheese( I was afraid to make it to salty) and more pinenuts. Carolyn Long Island,New York crispy good 03/06/2005 at 10:15pm User: ROSEMARY from Henderson, NV User Rating: I put these in the oven to crisp up while I made a salad. Used store bought Classico pesto sause. Worked well was a big hit. Flavors and more flavors... 03/06/2005 at 07:29pm User: DORIS from Raleigh, NC User Rating: This dish almost has too many flavor going on but it was wonderful - I will make it again. Rebuttal to 30-minutes NOT 03/05/2005 at 02:34pm User: DEBBY from Salinas, CA User Rating: Dear "Not". I can prepare a fabulous Thanksgiving dinner, from scratch, in three hours (not including turkey roasting time)! Some of Rachael's meals take me a MAX of 60 minutes to prepare, but she's usually right on the mark. The key is ORGANIZATION- Prep work is key, and like the chefs on TV, I get all of my ingredients measured and chopped before starting the recipe. You'll find yourself cooking faster with less confusion. No way would this recipe take that long to make-- did you included runs to the market for things you forgot to buy? Crunch Yummy Basil Goodness 03/05/2005 at 01:17pm User: Anonymous User Rating: This meal turned out great and is being added to the recipe box. Yum. Awesome 03/04/2005 at 09:17am User: Anonymous User Rating: Excellent. My kids loved it. Did not make the sauce. I just deglazed the pane with some extra broth, added some lemon juice and a little butter. YUMM Nothing special 03/03/2005 at 08:12am User: PAT from Lexington, SC User Rating: The recipe was just okay. Great! 03/01/2005 at 03:14pm User: JENNIFER from S Yarmouth, MA User Rating: Made this recipe last night and it was terrific! Will definitely make again. YUMMY! 03/01/2005 at 12:13pm User: EILEEN from Las Cruces, NM User Rating: Saw this recipe on tv over the weekend and had to try it. It was very easy and more importantly, very tasty. My family enjoyed the meal and I would definetly make it again. Only one downside, Rachel can certainly do this in 30 minutes, but for the first time out of the box, it took closer to 60 minutes to do the meal. Still, it was worth it! 30 minutes - NOT 02/27/2005 at 11:34pm User: Anonymous User Rating: Great tasting recipe, nice balance o flavor - not NOT 30 minutes. Took me almost 3 hours from start to finish. I will make it again, and I will shar this receipt, which is always a sign that I thoroughly enjoyed it. Excellent 12/28/2004 at 02:54pm User: HEATHER from Moorhead, MN User Rating: I absolutely love this. The breading goes perfectly with the basil-parsley sauce. It's a beautifully colored dish as well. I will make this again and again. I had to give it 4 stars though because it took me longer than half an hour to prepare. How does Rachel do that? She's the best. Excellent 11/30/2004 at 08:45pm User: Anonymous User Rating: This is one of the best I have tried. Will use it often Thank you, Rachel Ray for this easy and fast and delicious recipe. My family loved it a lot!! But instead of making it with the Cheesy Risi e Bisi, I found Rachael Ray's recipe for Cheesy Orzo. With the leftover chicken & parsley/basil sauce, the next day my sister put it on a soft roll & popped it in the microwave for a few seconds & said it was fantastic! Her coworkers asked her where she bought the sandwich from because it looked & smelled store bought! This is an excellent recipe!! Crispy chicken cutlets with basis-parlesley sauce 11/24/2004 at 02:55pm User: CONCHITA from plano, TX User Rating: Excellent in the last month we had it twice. Be sure to make the Basil and Parseley sauce, while the cutlets are good on their own the sauce really sets it off. Loved the arborio as well. Best Ever Chicken Cutlets 11/15/2004 at 06:25am User: GRACE from Tampa, FL User Rating: After years of the same tasting chicken cutlets, finally a different-exciting-delicious taste. Thanks Grace/Tampa Yum 11/11/2004 at 08:36pm User: KASEY from Everett, WA User Rating: I thought this whole meal was delicious. I will make this again. Tasty 11/11/2004 at 01:54pm User: SANDRA from Los Angeles, CA User Rating: The cutlets were tasty without the sauce but the sauce made the meal. Super easy to make. One of the Best 11/11/2004 at 12:40pm User: Anonymous User Rating: I have made a ton of Rachael's recipes, and I'd have to say that this is one of the very best. The coating on the chicken was absolutely delicious, and I expect that it would be good leftover, except that we ate every bit I made! The basil-parsley sauce was very good, but the chicken is flavorful enough on its own that it doesn't need a sauce. If you felt like you wanted a sauce, but didn't feel like doing the basil-parsley, a little leftover marinara would work quite well also. The only tip I would add is that, depending on the parmesan you are using and how salty it is, you might want to add a little salt to the breading. Easy and Tasty 11/10/2004 at 11:42pm User: JOSEPH from Saint Paul, MN User Rating: I thought this was great. The basil sauce is nice, but even without it this is a great coating for chicken. My sister is allergic to pine nuts and walnuts, so I used almonds and it was wonderful. I will definitely make it again. Delicious! 11/09/2004 at 07:04pm User: HOLLEY from Atlanta, GA User Rating: This is a wonderful recipe! It definitely took longer than 30 minutes (more like 45 with all the prep work- how does she do it so fast on the show?!?!), but was well worth it. It was easy and had a very unique taste. I will definitely make this again! Delicious, my favorite so far! 11/08/2004 at 09:17am User: MARCIE from severna park, MD User Rating: It took me way more than 30 mins but it was well worth it! I guess Rachel is more familiar with the recipes and thats why she can make them so quickly? Anyway, this was by far the easiest and MOST flavorful dish Ive made from her shows. My little kids loved it tooo! Crispy, Light and Delicious!! 11/07/2004 at 10:48pm User: Anonymous User Rating: The lemon added a unique twist to the sauce and the bit of lemon zest in the breading tied it all together beautifully! I would next time, add a little more grated cheese to the crumb breading and a bit more sea salt and pepper for more intense flavor of the nuts, seasonings etc. Reminded me alot of the Cuban version of Chimichurri sauce over steak!!
