However, I would change a couple of things about this chicken pot pie. I had never heard of chicken base, but was able to find it at the grocery store. The next time I cook this, instead of the chicken base, I am going to use chicken broth. The recipe calls for butter and flour, which gives the dish its thickness. Adding the chicken base is too much. Another thing I would do is instead of the puff pastry, I would get the chilled pie crust. If I were to make this again, I would use a TEASPOON of chicken base, not the quarter cup that it calls for. I also think a quart of heavy cream is a bit excessive - maybe 2 cups of half and half and 2 cups of milk. The recipe has potential, but prepared as written, it was inedible. The only modification I made was the 1/4 cup chicken base. Obviously from reading the recipe its way too much salt! Talk about sodium overdose! I used chicken bouillon instead. It's pretty expensive, and I don't have the right size bowls to do individual servings. Also, after sitting a bit, the lattices sort of fell, and got really greasy. I decided it would work better for me to just use a regular pie crust and put it all in a pie pan. Yes, the filling is rich, and salty, but I think the chicken base is an important element; I'd probably try reducing the salt by using unsalted butter. The only real objection I have to the flavor of the filling is the raw garlic taste. Next time I make this, I'm going to put the garlic in at the same time as the butter so it can saute a little. I couldnt find base and just figured it was stock so I used 1/4 cup stock instead. I used half the cream that was suggested and added more veggies, just like everyone else did. I did get my boyfriend to eat lima beans (they blended well with the peas). Next time I will use more veggies, including broccoli and maybe some celery. I dont know if it was my oven or what, but I had to put it all in the oven for a LOT of extra time because the pastrie didn't cook through the first time. Maybe because it was frozen? Anyway you can tell I am not a really great chef but this turned out OK. I made minor alterations by adding a bottom crust, and I just used a box of frozen mixed vegetables for my veggies. After reading the reviews I deviated a little by using half and half rather than cream and it was super rich (I'm not saying this is a bad thing..) but I can't imagine what it would be like with heavy cream. It would have been too much. I bought a rotisserie chicken at the deli and picked that for my meat - I roasted the veggies (added in some diced potatoes as it's just supposed to be that way I think.) It is rather salty, but I found that throwing in a spoonful of sugar or so helped even that out. We thought it was great. Only a once and a while thing though as it's so unhealthy! The flavor of the filling is so good the excess usually gets eaten with a spoon before I even get to freeze it. I've used turkey more than chicken, and it is equally as delectible! If you don't like the crust idea you could use a straight pie crust, that would be lovely. However you'd really be surprised how far the puff pastry goes. You think you will not have enough to enjoy it with the whole pie, but it really does stand up to it. Suggestions, #1 Don't use a deep dish pie plate, if you go with the puff pastry (the filling will overwhelm the pastry) #2 By all means substitute some of the heavy cream with 2% milk, you truly will not miss it (or the calories). The flavor of the chicken base & veggies makes up for the loss of the cream. Did not use chicken base, but broke up two bouillon cubes into the cream mixture when heating. When it thickened, it was TOO thick, so I had to use a little more milk to get a good consistency. I love Paula, but hey, let's face it, everything she makes is sooo rich, I'd weigh 400 lbs if I ate like that! Here's what I suggest to make this a little less likely to clog your arteries, and a little less rich. I used a little less than 1/2 a cup of flour, about half of the 1/4 cup of chicken base (if it's not enough, it's really easy to add a little more until it's to your liking). Instead of 1 quart of heavy cream, I did a 1 quart combo of half a can of cream of mushroom soup, one half cup of half and half, and the rest full of milk. Also, I seasoned 3 breasts of chicken with a little italian seasoning and garlic powder, and when the chicken was almost done, I added the onions (as some reviews said the onions weren't thoroughly cooked otherwise). Finally, instead of 1 cup peas and 1 cup carrots, I used 2 cups of peas, a cup and a half of carrots and a cup of canned corn. Mine turned out wonderfully, hope you enjoyed it as much as we did! I used half cream and half milk and still it was overwhelmingly creamy. When onions and garlic are added right to the cream as stated in the recipe they don't get a chance to cook thoroughly, so when you bite into the pot pie you bite a piece of raw onion, yuck. It seems like maybe using 2/3 of the liquid would be best. In my opinion the chicken and vegetables should be the star of the dish, not the cream.
