Delicious! My only minor complaint was the wrinkly skin was tough & chewy, so when I make these again, I will try peeling the apples. Otherwise these couldn't have been easier to make - used vanilla soy ice cream & a drizzle of caramel sauce on top. (Oops - I forgot the butter and the apples & filling still tasted just fine!)

this recipe was outstanding and didnt require a lot of time. i used granny smith apples instead of mcintosh because they looked better at the grocery. my whole house smelled wonderful after these guys came out the oven! will definitely bake these again!

Saw this in the morning on tv and took it to supper club that night. My 4 y.o. twin girls helped out. Very easy. I made 14 (not 4) and they were a big hit...I cooked them longer (b/c I had so many) and they were still pretty firm, which is what I wanted. Not mushy at all...had them the next day cold, and they were great that way too. My girls loved the leftovers!!!

I made this but with a few minor changes. I used large Fuji apple (perfect texture, didn't get too soft), I roasted my walnuts over medium heat with a bit of butter and sugar, the glaze was delicious, and I did not add the raisins or whipped cream although I did have vanilla bean ice cream with it. I think the carmel ice cream and the very sweet brown sugar/cinnamon filling would have been overwhelming

I think I agree that the oven temp was a bit off, as the apples were still hard in the center (I wanted them softer, more like in apple pie), but the tops were beginning to be burnt. Delicious though. Next time I may try a little whipped cream, but I definitely think the ice cream would've just been too over the top sweet.

My whole house smelled like apple pie. This dish was sooooo good! One of my apples actually burst open but that's because I accidentally chopped through the side when I was trying to core it. I still ate it and it was great! I topped mine with cinnamon/sugar, caramel, and caramel ice cream. WOW!

This was as delicious as apple pie but without the crust!! I substituted Splenda brown sugar and cherry flavored cranberries for the raisins. This was quick and so tasty you could easily serve this at a dinner party. We only had sugar free vanilla ice cream and it was just delightful. Thank you, Rachel!!

I gotta hand it to Rachel this time, these apples were FANTASTIC! Though, I left out the raisins and nuts and didn't serve it with ice cream, they were still excellent! I remember tasting baked apples a while back and not caring for them too much. I guess I just didn't have the right recipe because I LOVED these! I usually peel my fruit, but I decided to leave it on this time. I'm glad I did because it was cooked down to a perfect tenderness and the tartness of it complemented the sweetness perfectly. Well done, Rach, this one's a keeper for sure!

I prepared everything an hour in advance and while friends were eating dinner I quickly stuffed the apples and popped it in the oven-I was away for less then 3 minutes to prepare a wonderful and tasty DESSERT. It was quick and easy. I omitted the raisins and decreased the amount of brown sugar but increased the amount of walnuts - I used Fuji and Granny apples. I topped the apples with Vanilla ice-cream because I did not want the caramel ice-cream to overpower the baked apples. I will definitely make this for another dinner.

I made this for a group of men from my church who meet at our home once a month for fellowhip. They loved it. But after having a meal before the apples, many of them chose to only eat 1/2. I did melt the butter to make mixing easier.

Delicious!! However, depending on the size of your apples you might have a lot more filling but it's so darn good we just piled it high and then let it overflow into the pan. We also upped the butter a bit to keep it moister. Hardly low fat, but it's worth it!!! :)

The dessert in it's entire smelled amazing & tasted just as well. But this recipe is not very flexible. I did not have Macintosh, Empire , or even Granny smith. But I had Gala apples and I used them. They became very bitter during the cooking process. But You can make this in a toaster oven. I put the cooling rack on the pan and lined the pan with aluminum foil. I set it on bake and started at 450. As soon as I put the apples in, I reduced the heat by 100 degress. They are cooking in a small space so the heat will be more condensed around the apples, leaving it at 450 may have caused them to burn. Now you can enjoy this spirit lifting treat anytime! No need to worry about so much heat and gas with a conventional oven!

So easy and so delicious. I freeze any leftover "filling" (or make it in advance) so it is always handy for a quick dessert. I've also served this with brunch by cutting the apples in half, core out the center, set some of the filling in the center of each apple half, bake and serve as a side to an egg dish. Yum!

i'm 13 and i made these!(by my self! my mom's pregnet) there sooooo good! my 1st try was good but i used regulare apples- they truned out soggy- and i used to much nutmeg. my 2nd try (2 days later) i was in HEAVEN!!! i used the big apples and added more cinnomen. When I used this recipe, I did 6 apples (big ones) instead of 4. I also used Jonagold apples and used Reddiwhip whipped cream and caramel. Next time, I would use more oatmeal and walnuts and less brown sugar. I would also go ahead and slice and core the apples with an apple corer and make a casserole out of it instead of stuffing the apples. Don't make the mistake I did - I left a hole on both ends of the apple - what happened is that all the "filling" went to the bottom of the dish. It was still good regardless! It's not absolutely necessary to use golden raisins - regular ones would work just fine.

I made this recipe for the first time. I have to say that I was very disappointed. I had to bake it for an additional 30 minutes. Even with the extra baking time, the apples still came out hard and under baked. The recipe calls for large apples, but I would highly suggest smaller apples. Even though I was completely disgusted with the end result, my guests encouraged me to give the recipe another go because they liked the flavor. Well, we'll see.

This is super simple and very tasty. I used Granny Smiths because I prefer a more tart apple. It was the perfect compliment to the oatmeal, sugar and spices. The oatmeal mix has a nice crunch to it. I will definitely be snacking (and desserting) on this all season long!

This is a keeper! I used Quaker instant apple & cinnamon oatmeal...1 pkg per apple, left out the raisins, and added pecan pieces. Served without the ice cream. Next time I'm going to make with maple and brown sugar oatmeal and just cut back on the regular brown sugar. It's fun to tweak the recipes a bit.

This is a delicious recipe but you have to cut the sugar.3/4 c to 1/4 of oatmeal? Anyway, I am staying away from refined sugar and I substituted enough honey to get the oats moist and it was absolutely delightful. I made it for breakfast and I omitted the ice cream.

I've make these three times now and they are a huge hit. I made a dozen or so as one of the desserts for Christmas day and everyone loved them. It's like eating an oatmeal cooking in the middle of a warm apple. I omitted the ice cream and used a little caramel ice cream topping and whipped cream. Fantastic.

I made this as an add on to a Sunday afternoon roast, and my husband, who does not like fruit much at all, LOVED these. I didn't have any brown sugar, so I compensated with regular, no carmel ice cream on hand either, but a swirl of honey on top of the plain vanilla ice cream really did an awesome trick. Can't wait to try it again!

I got rave reviews on this recipe! I used 1/4 brown sugar and 1/2 cup Splenda, and substituted dried cranberries for the raisins (I've got a raisin-hater in the house!). It was soooo easy to make and tasted so very good. I can't wait to make this for my parents when I visit them over the holidays! Definitely a keeper.

I love apples and couldn't wait to try the recipe. I am on a diet, so I cut down on the brown sugar being used and I also did not use any butter. These changes altered the final product a bit. The top of the apple where the sugar and oatmeal mixture is was a bit burnt, but the inside was very flavorful. I ate it plain without ice cream and loved it. All in all, I thought it was a wonderful recipe and tasted great! I have made it for company and was complimented on it. But of course, when company came, I served it with ice cream!

I loved this recipe and made it while my dinner was cooking. But, as I do with most of Rachel's recipes, I cut back on the calories. I used just a little of brown sugar, for taste, but used mostly splenda. Instead of butter, I used I can't believe it's not butter, which worked surprisingly well. I used a few pecans for crunch because I didn't have walnuts. Also- I used raisins, but next time will use cranberries, because I think it compliments the taste better. Perfect for a dinner party of 4. No muss, no fuss.

Oh my gosh, this is one of the most delectable and delicious things I have ever tasted. I made five the other night and I got half an apple, everyone else ate the rest! Even if someone doesn't like apples, this is a surefire way to trick them into eating apples! This is a great alternitive to apple pie or apple cobbler-and much faster! These baked apples are great without the caramel ice cream too! This recipe is very quick and easy and it's absolutely beyond belief wonderful! Make a lot of these cause they won't be around long! Awesome!

I love these! They were so easy that even my six year old helped out. It was hard enough just waiting for them to finish baking, they smelled so good. We all ate faster than normal just to get to dessert!!! They were wonderful!!!!

I personally like more of a crisp kind of taste and I think that is why I don't like this so much. It just seemed like it was a sugary syrup with a little oatmeal in it.

good- but I might use a little less brown sugar if I make it again. I chose not to serve with ice cream in order to cut down on tha calories but I think it's needed in order to cut the sweetness.

I used dried figs & apricots insteade of raisins. It was still delicious.
