I had been saving this recipe for an occasion when I would have to make turkey. It not only was fun to prepare, it was very good. I am not a turkey fan, mainly because when I've had it in the past it has been bland and dry. Not true for this recipe. It had great flavor and was very moist. Thanks Rachel!

My family and I are not big turkey eaters, but when I made this recipe it was easy, moist, and very,very,very, delicious.I didn't use the Brandy I just used chicken stock and it came out just as good. Made this on Christms Day. It turned out delicious, although I could not find the turkey cut into individual breasts, so I modified and used a whole breast. Wasn't crazy about the gravy ... and didn't miss it on my plate because the turkey itself was so amazing! I'll be making this again.

I just made this dish for our Christmas dinner, as I have been having my eye on it since last year's Rachael Ray's Thanksgiving in 60. The turkey was absolutely moist, and the herbs and spices really hit the spot. I didn't make the apple brandy gravy, but the pan drippings by themselves made an excellent sauce. Make sure to not skimp on oiling your pan, oiling your turkey breasts, and basting with your bay butter--i overcompensated a little, yet it all worked out amazingly. In the bay butter, I also threw in some italian seasoning and minced garlic. HIGHLY RECOMMEND, will make again!!!!!

This looks beautiful on a holiday table. You won't miss the appearance of a whole turkey. My family thought the pesto was just "okay" but did enjoy the turkey's overall lemony zip. Boneless, skin-on turkey breast halves are apparently not a common request-had to actually bring my recipe to the butcher shop.

I had an instinct that the bay leaves & sage would be too much for turkey breast, and I was right. The flavor was so strong that we could not eat them. Thankfully I had also prepared a ham and a whole turkey. I did the breasts because we wanted extra white meat. Well, it was a big waste. I've no idea how everyone else is raving about this recipe. All I could taste was the sage. Next time, rub with butter, sprinkle on salt, pepper, and a smidge of poultry seasoning. It's how I prepared the whole turkey, and everyone raved.

Made this recipe for Thanksgiving and was delighted. It took me more than an hour but it was well worth it. I'm not too fond of turkey breast since I find it boring, but this herb mixture was magical. The meat was full of flavor and the gravy was a great complement. I have recommended it to friends.

These made thanksgiving so easy that I'm recommending them to everybody. There wasn't much liquid in the pan to make gravy but it didn't really matter. Boiling the cider down did the trick along with the calvados. Don't skimp on the calvados; it adds an extra zip to the entire meal.

Excellent taste! My first time cooking just the breasts and it turned out great. I did use the whole breast because I couldn't find 2 separate breasts but it turned out fine. The only thing I did different was that I used the turkey bag because I didn't want to baste it and it turned out fine. Oh.. didn't try the gravy though, maybe next time!

This was the first turkey I've ever made for Thanksgiving, and it turned out wonderfully. Very moist and flavorful. Makes fantastic leftovers. I substituted my own pan gravy using just the drippings, some heavy cream, and seasonings, and everything turned out mmmm, mmmm good.

I tried the herb mixture and bay butter on an oven stuffer/roaster chicken breast. I used my usual cooking method of roasting at 325 until it reached an internal temperature of 165. It turned out beautifully flavored and moist.

I made 4 of these individual turkey breasts for 16 people. (I had leftovers). I made a different gravy to accompany the turkey. They came out PERFECT and I sliced them, and served them on Thanksgiving on a long narrow platter, with my onion cream gravy around the slices. It was elegant and delicious, and took up half the space in my oven, so I had room for everything else. I will only make this turkey for the holidays from now on! The stuffing muffins to go with them were excellent and got rave reviews also. Rachel is a wonderful cook!

This turkey recipe was great as my family is small and a full bird would be too much. I did brine the breast the day before. I'm not a big fan of herbs but wanted to give it a try. It gave the turket a nice presentation and my turkey was moist even over the next couple of days.

Excellent recipe; got rave reviews and my very first thanksgiving table. The problem though is the actual placing of the herbs under the skin; i found this incredibly difficult even though i have great knives! I had to cut into the meat to have a layer of the sage oil. It worked out nonetheless! The pan gravy was excellent too! Very yummy, though the recipe doesn't make much (most likely b/c the relative lack of pan drippings.

I just made this turkey breast last week for Thanksgiving. It was good, but certainly not good enough to warrant the extra time I devoted to it. It would have been easy (and less kitchen clean-up) to make a simple turkey chub or turkey roast and just sprinkled some seasonings on it.

I could not undestand why parsley and not thyme was used in this recipe. I went ahead and followed it against my best judgement and I ended up with the most tasteless turkey of my life! I also had a lot of smoke in my kitchen due to the lack of information on how hot was a "screaming hot oven" olive oil heats pretty quickly, I found out. I was able to fix the gravy by adding thyme to it, at least there was some flavor there...




I will never cook a whole turkey again!

As many people know grocery stores are usually open until 3pm on Thanksgiving for the emergency needs. Well, imagine my surprise when at 3:15pm (too late for a trip to the grocery store)I took my turkey out of the refigerator and discovered I bought skinless turkey for a recipe that calls for stuffing a paste under the SKIN!!! I took my chances and created a thin pocket, stuffed it and crossed my fingers. I have to tell you that it came out great. I really thought I would miss the traditional "carving" of the turkey, but with the flavor of this turkey, I did not! Thanks for a great recipe.

This turkey was simple and perfect. Mine required a bit more cooking time, but was perfect and juicy. I didn't care for the cider gravy (too sweet for me), but my guests raved and thought it was the perfect combo of sweet and savory. This will become an entertaining staple. Thanks!

I couldn't find fresh bay leaves in our local store, :-( so I opted for fresh sage inside the bird. I didn't make the gravy, opted for store bought. Next time I will try and gravy. I enjoyed the herbed paste inside the bird which kept the meat moist and gave a nice flavor.

Theis was the easiest and tastiest turkey breast I have ever prepared and presented to be eaten and the gravy just like Mum's. The flavours were wonderful all together and I also made the beans and the stuffin muffins. Everthing was prepared and clean up was done. One hour before my guests arrived I started the cook off. A friend of mine made dinner using the ingredients Rachel recommended. He tweaked the recipe a little bit by using chicken breast instead. He found the turkey breast to be too expensive. The chicken turned out fantastic. I'm definitely going to try this recipe on my own!

It was interesting using the fresh herbs, vegetables and lemon zest. It did add some flavor to the turkey breast. I salted and peppered the poultry well, just as she suggested. Still, it didn't offer much in the way of flavor. At least most of my family ate it and said it was good but they didn't rave about it or ask for more. I'd like to tweek the recipe a bit and try again. If any of you have used other herbs or have a suggestion I am open to what you have to share.

This turkey recipe is easy and delicious. My family did not care for the sweetness of the gravy with the turkey and preferred just plain gravy from the drippings next time. I would definitely serve this kind of gracy with pork, though. The herb paste with the lemon was so tasty! It's a winner in my book!

We didn't have a food processor to do exactly what was on the show, but we got close... with or own twist. We used some Emeril chicken rub, sugar, olive oil, and some garlic with garlic oil and made a paste that way. Then we used the same mixture without the oils to rub on the outside. It browned a little fast and we had to tent the turkey breasts. But it was a nice change from the whole turkey issue.

Served this today and it was a big hit. Easy to prepare, tasty and the gravy was wonderful. Only one problem - make sure your butcher knows what you're talking about when you order a boneless turkey breast. I went to my local grocery store to pick up the breast I had ordered over the phone and they had a turkey roast! It took some frantic calling to grocery stores in two states before I actually found someone who knew what I was talking about and had some on hand the day before Thanksgiving.

I used a whole bone-in 8 lb. turkey breast, which had to cook 3 1/2 hours. It turned out absolutely amazing! The turkey was oh-so-tender, and the skin wonderfully crisp and flavorful. This was SO easy to put together too. Next time I'll look for the boneless turkey breasts called for, but I couldn't find them this year. This is by far the best Thanksgiving turkey I've ever made. Thanks, Rachael! I didn't use the rest of her Thanskgiving in 60 menu, so I didn't try the gravy since I didn't have an apple-theme going on.

I soaked my turkey breasts in turkey brine from Williams and Sonoma. After adding all of Rachel's wonderful herbs, the turkey had a little too much flavor. I guess I am used to dry no flavor turkey. Next time, I will just do exactly what the recipe says, and not brine. But, for my family, the boneless turkey breast are the way to go. I am never fussing with a whole bird again. I did all of Rachel's 60 minute thanksgivingm and for a first timer, it only took me an hour and 30 minutes. not bad. I dont even feel tired. :)

I'm not a turkey lover...mainly because no matter how the turkey is cooked, the flavor is always on the skin (which most do not eat) and the inside is always dried. I decided to try this receipe this Thanksgiving...This is by FAR the best turkey recipe I have ever encountered. The turkey was so moist and juicy, no one used the gravy or cranberry sauce for it. I fixed this recipe yesterday for our Thanksgiving meal. It was OK, but it will not be repeat. The herb mixture didn't lend any flavor to the turkey and wasn't really all that tasty onit's own. I expected this to taste much better than it did. The gravy really never came out right. I had to add more flour to it than the recipe called for and it was still too runny. Overall a fair recipe, but you're not really looking for that for a Thanksgiving meal. I want something "fantastic" and this was not it.

This was great--the green herb mixture tastes amazing. Two minor changes--I'm from a big city and couldn't find fresh bay leaves in any stores, so I don't know how easy it will be for others, but dry leaves worked fine. I also couldn't find two separate boneless breast halves, but I used a whole breast, bone-in, and it was great--plus, you still get to have the fun of carving off a bone without the pounds of leftovers. the gravy was fantastic--i added a few more sprinklings of salt while simmering to thicken it up and this yielded good results.

This recipe is wonderful. The turkey turns out moist and tasty. I omitted some of the bay leaf but the lemon-parsely rub was wonderful! Be careful to get a boneless breast, my breast still had some of the bones in it and it took a little longer. Make sure you use a thermometer to test.

For empty-nesters the perfect solution. Turkey was moist, tender and the flavors from the herbs under the skin were awesome. Great idea with the infused bay butter, gives me ideas for other dishes. Just tried it and it was great. I did not use the bay leaves because I just don't use those and don't have any in the pantry. Also, I could only find skinless turkey breast today, so i just sliced them in the middle like a pocket and stuffed them. It came out wonderful. Also, I don't have a food proc
