Although this recipe makes a huge amount, it was enjoyed by mostly everyone who tried it. It just makes a ton and is best for large gatherings or cut it in half.

We absolutely loved the recipe. I chose to leave the ginger snaps off and I suggest if anyone wants the ginger snaps to have some in a bowl as a garnish for anyone interested. A small word of caution to those who will make this recipe. Use pumpkin FILLING not 100% pumpkin. There is a BIG difference in the outcome. We will see you hopefully this summer Paula when we visit in Savannah.

Simple to prepare, feeds a crowd, looks nice, but... I was not as impressed as I expected from other reviews. The pumpkin layer is very sweet - almost like butterscotch and the gingerbread got a little overwhelming (I even doubled the amount of whipped cream). Still good and enjoyed by most of my family, just not GREAT.

taste, texture, appearance -- this recipe has it all! Would recommend you cut it in half, though, unless you are feeding the entire neighborhood. I filled a trifle bowl and still had plenty to spare. This is a marvelous alternative to pumpkin pie and had everyone asking for more.

I made this for a Christmas party, without making it and trying it out first, and it was a huge hit. (Pretty much par-for-the-course with Paula's recipes.) The recipe fed 15 people, with leftovers. If you like gingerbread lattes and/or pumpkin spice lattes from Starbuck's, this dessert is for you!

Although no one said that this would feed an army?! It was so deliscious. I had 10 people having seconds (it was that good), but we hadn't even made a dent in it! I love this recipe, it was easy and so inexpensive to make, but I think that I will cut back next time and not make it so large. Thanks Paula~ keep them coming!

I cannot put into words how much of a hit this dessert was at the family Thanksgiving dinner! And when I showed up with something different for the Christmas Day feast, there were lots of disappointed people. They had all been hoping I'd bring the Pumpkin Gingerbread Trifle again. All I heard was "best dessert ever in my whole life" and "please bring it every time." I've promised to bring it to every family gathering, no matter what time of the year.

This is one of the bst deserts I have ever made for the holidays. My brother, who is a pumpkin pie piggie, as I call him, eating a whole pie every Christmas if given the chance, LOVED this! He loved it so much that he didn't even have a piece of pie, he ate too much trifle!!! This was a definate hit with the family and has become a must have for both Thanksgiving and Christmas. Thanks Paula for such a great tasting and easy recioe.

They aren't real cooks. Sorry! But this was very yummy and enjoyed by my family on Xmas eve. I adapted it somewhat after reading some reviews here. What I did was instead of pumpkin pie mix used a plain small can of canned pumpkin. To that I added cinnamon, brown sugar and fresh grated nutmeg. Instead of using cool whip, I whipped heavy cream and sweetened that. I made my vanilla pudding with some half in half instead of total milk to make it richer. I used only one gingerbread cake mix. I used Annie's ginger thins instead of gingersnaps for the topping. The result was a dessert that was distinctly seasonal, and not so sweet it was inedible. It was enjoyed by people of all ages at the table. Don't hesitate. Thanks PAULA!

I used home made whipped cream as the topping only. I also used the crumbs from the ginger bread cake for a garnish on the top. The crowed was delighted with the results. It will be a standard at the holdidays from now on.

Made this for Christmas and everyone loved it. I did make a few minor modifications based on reviews I read her. First, I used only one box of gingerbread. I then cut the amount of pumpkin filling in half and eliminated the brown sugar. Plenty sweet enough. I also used fresh whipped cream (sweetened with 1 T. of sugar and 1/2 t. vanilla per cup) instead of frozen whipped topping. And finally, I garnished with crumbled gingerbread which I had leftover intead of gingersnaps. And the presentation...it looks like I slaved over this dessert, when it couldn't have been easier. I can't say enough good things about this recipe or Paula!

What a great alternative to regular trifle for the holidays! Was a big hit with the family last year and will be on our table again this year. I make my own gingerbread cake and fold in fresh whipped cream to the pumpkin mixture to lighten the texture up more. Toasted chopped pecans decorate nicely!

I saw Paula make this before Thanksgiving and just had to try it; it was a HIT - everyone requested that I make it again for Christmas. The flavors were distinct, yet delicate. Such a wonderful substitution for traditional pumpkin pie. I had never used a box mix for the gingerbead and it came out perfectly. Paula, you are my favorite!

This recipe was fantastic! It makes for a very festive presentation. If you have to prepare a desert for a crowd this one is for you. It will serve about 12-15 people. The only change made was a added a layer of the crumbled cookies after each layer of cool whip. Next time I will also wait until right before I serve it to put the cookies on top so they stay crunchy. This is a winner!

This is a great recipe. I made some additions: I spooned some spiced rum onto each layer of gingerbread for a little kick! I used real whipped cream because I love it so much. Also, I sprinkled pecans on each pumpkin layer, and added crushed gingersnaps, crushed amaretto cookies, and pecans to the top layer. I outlined the trifle bowl with whole gingersnaps and it looked amazing. Oh, and yeah...cut this recipe in half unless you're feeding an army.

so i made this for thanksgiving and everyone, including me!, was so excited to try it because it looked so pretty and so good! but it wasn't! it was missing something important - a texture? a flavor? i'm not sure. no one could pinpoint it. someone did suggest adding chocolate chips. this is my 1st paula recipe that didn't turn out so it must've been an error on the side of this cook! (me!)

Wonderful addition to our Traditional Thanksgiving dinner, nobody wanted to eat the pie. I used only one box of gingerbread and instant pudding and skipped the ginger snaps and it was an awesome tasting trifle. It looked appealing and everybody loved the flavor. We sprinkled a little of the leftover gingerbread crumbs on the top (instead of the gingersnaps) and shaved some chocolate curls on the top and it was really pretty. Loved, loved, loved this recipe. Can't wait to make it for the next get-together!!!!

I took this to our family Thanksgiving dinner. I was VERY excited about taking it because it is ABSOLUTELY BEAUTIFUL. If it were judged on looks, it would take the prize. Unfortunately, it didn't go over well and was a big waste. Down the disposal. I think it may have been better without the Ginger Snaps over the top.

We had a Christmas crock-pot party and every dish had to be in a crock-pot. I layered this cold trifle in a crockpot and it won 1st prize. It was extremely festive and beautiful. I added whole gingersnaps cookies around the edge.

I made this recipe for my Christmas party and everyone loved it. Here are my modifications: I used only one package of gingerbread; I used two packages of pudding - one to mix with the pumpkin pie filling, and one to make a plain vanilla pudding layer in the trifle. I made the trifle one day in advance and it was great both on day two and on day three. Perfect dessert!

I am a man and don't cook very many desserts. I love to BBQ though. I made and served this dessert at a Sunday school Christmas party and no one could believe that I made it. They were asking my wife if I were telling the truth!!! At a Sunday School party??? Anyway, I felt guilty that it was so easy. If you have time let it set in the fridge for a couple days. It's MUCH better if you do!

My husband and I made this as dessert for our Thanksgiving meal and we weren't able to keep ourselves out of it the rest of the day! It satisfied all of our holiday cravings with creamy pumpkin and wonderful gingerbread that became moist and gooey (like a wonderful cake serve ala mode!) and it looked very pretty in a trifle dish before we tore into it. We didn't even miss not having a pumpkin pie!

I made this for our office potluck and it was THE hit of the lunch! I agree with other reviewers that this is a little too much for a "traditional" trifle bowl - I actually ended up with leftovers. BTW - just as further proff that you cannot mess up Paula's recipes: I left out the brown sugar and it still tasted fantastic. I'm following it to a "t" this time, so I'll report back if there are considerable differences with and without.

Coming from a family where pumpkin was considered to be "alright" and spice cake is a must, I just knew this would be a hit! My entire family enjoyed this dessert and came back for seconds. It was so easy to make, my three year old niece had fun helping. We did use cardomon and the crushed ginger snaps add a fantastic texture. This one is a keeper!!

I bought a trifle dish at Wal Mart for $7 and it's not very fancy, but it gets the job done! Paula's recipe is AWESOME!! I made this for Thanksgiving and that tastes go together very well. It's very easy to make and may I recommend the Extra Creamy Cool Whip for this recipe?? Seriously, if you make this dish, you will impress everyone!!

I enjoyed making this trifle. It was easy to make and put together and a good crowd pleaser. The only thing that was a negative was that your recipe called for a 5.1 oz box of pudding mix. That might be available in some states, but I'm from New England and I have never heard of that size pudding mix. I ended up using a 6oz pkg and used alittle less of it. Thanks Paula for the recipe. I have a family who enjoys pumpkin, but not gingerbread, so I substituted spice cake instead. I do not recommend this. The spice cake was not as dense as the gingerbread would have been and got soggy. I also tried actually whipping my own whipped cream, which is not as sweet as, for instance, Cool Whip. So, good flavor, but stick to the recipe!

The most time consuming part was waiting for the bread to cool, so I would recommend baking the day before. The trifle had a very fancy presentation and everyone raved about the great taste. This was easy and very good. It was very rich tasting to us, everyone tried it and liked it. I didn't check the recipe beforehand, so didn't realized it served 20, about double what I needed, so I took the rest to work and they all loved it too. I couldn't lay hands on my trifle dish, so put it in a punch bowl and it fit perfectly. Those who want to make the full recipe might try that, as it was very attractive. I think I would like to try it sprinkled with toffee/almond bits on top of the pumpkin layer for an extra kick.

This recipe is really easy to make and got rave reviews! If I were to use the pumpkin pie filling "mix" again, I would probably cut back on the sugar or omit it entirely. It was plenty sweet with the pudding mix in it. I used instant vanilla pudding because that's all I could find. Had numerous requests for this recipe!

This was great. It was easy to make and looked beautiful on the Thanksgiving table. It resembled a sand painting. Since I don't care for frozen whipped topping, I whipped two containers of heavy cream into whipped cream and used that instead of the frozen topping.

This recipie was AWESOME! Its a great substitute for pie or addition to any family meal. I brought it to my family's Thanksgiving this year and no one ate the pie, everyone ate my trifle instead!!! I do agree that it kinda needs a texture somewhere in the middle, but if you crumble the gingersnaps on it right before you serve it, they dont get soggy and add a perfect crunch to it. Absolutely loved this recipe although made a few changes. Instead of the gingerbread mix (they were out!) I used pumpkin bread mix and it was wonderful - totally upstaged the pumpkin pie! I could only find 100% pumpkin (not "pumpkin pie filling") so just added the spices listed in the recipe on the back of the can and a packet of Splenda. It does make alot but everyone loooooved it and there was a little bit left for the next morning - YUM! Will definitely make again!

So I decided to make it again...this time I made 6 mini trifles and gave it to neighbors as gifts not knowing if they liked gingerbread/pumpkin flavors. Well...everyone loved it and wanted the recipe. I could not find canned pumpkin pie filling...so i actually had to make my own with the canned pumpkin (pumpkin pie filling directions were on the back of the can...i just made it without the crust). Took a long time...but it was totally worth it! Don't think I'll be making plain ol' pumpkin pie ever again.

This was such a wonderful dessert, it was absolutely delicious! Nice and light, and not too sweet. I made it for Thanksgiving and froze a second cake to use for Christmas. Everyone loved it. The only thing I would change would be the cookies. Next time I will use Ivan's Spiced Wafers instead of ginger snaps. The ginger snaps didn't have any taste.

My local store did not have gingerbread mix, so I substituted pound cake mix and added spices to it (ground ginger, fresh cinnamon and nutmeg, allspice). I also added caramel in between layers, using the ready to squeeze sauce made for ice cream. A great touch!

There are a couple of ways that I think would make this recipe easier and taste a little better. First the ratio of pumpkin filling and whipped cream needed to be increased or the amount of gingerbread decreased to balance it out. I would also maybe substitute premade vanilla pudding to make it easier on the cook.

If you love pumpkin pie and whip cream but want to shake things up a bit, this is the recipe! The textures are great! I made (3) layers rather than (2). The recipe did not specify what kind of canned pumpkin to buy. I bought the regular pumpkin w/o all the spices etc. I was pleased, I think the other would have been too sweet. I added heath pieces on top of each whip cream layer. It added a nice small crunch. I topped with crushed snickerdoodles and gingersnap cookies! This dessert left the pies in the dust.
