Beyond belief recipe. Better than expected. Delish. some changes: used just chicken breasts roasted at 350 for 1 hour added herbs de provence on top placed lemon slices underneath skin and underneath chicken breasts. made mashed potatoes 2nd time around. So good when gravy and onions (perfect) mixed in with mashed potatoes. Loved it. I have 3 of Ina's books, now I want to buy the Paris book that this is in. Linda

I loved this recipe and so did my whole family!! The lemons really did make the chicken nice and tender and the croutons were a wonderfully delicious surprise. Definitely added to my Family Recipe Book. Yum!!

This recipe is not only delicious, but it is extemely easy to make! I normally just cook legs and thighs because we are not big white meat eaters. This chicke was so moist, that my husband devoured it all...white meat included! On top of that, he asked me to make it again in the future!

Try it tonight!

I made this after watching Ina's show. I made the lemon chicken and the carmelized shallots. All I can say is it is easy and GREAT! This will become a regular in our families dinners. Thanks, Ina!! Not only is this dish economical and easy...my house smelled great while the chicken was roasting!

What an easy way to guarantee a succulent roast chicken! I would have never thought to stuff the bird with lemon qtrs. Flavors were not overwhelming and you can really serve this dish with any side dishes. A light meal for lunch, dinner or game time.

Just wonderful

I had never made a whole roast chicken before, but Ina inspired me to try. The first time I struggled with the dead critter, but the results more than made up for it. The second time I made it I was feeling much more confident and the results were still fantastic. I would recommend this dish to anyone who likes chicken.

Yum!

I'd give it 5 stars, but I found the croutons to be a little weird to eat with the chicken. It tasted great, though.

THIS...IS...AMAZING!

This was so delicious! I couldn't believe how easy it was to prepare. I used Vidalia onions which permeated the chicken - such flavor (as Ina would say)! My only problem was how long to roast the chicken - I have a temperamental oven so I had to adjust temperature and length of time. The next time I make it I will make the carmelized shallots and French green beans that she suggested.

Thank you Ina !

Fantastic meal for any occasion. Very simple to prepare and the chicken was moist and delicious. I used a 3.75 lb chicken for 2 people (with leftovers) and cooked it for only 1 hr. Make sure to adjust cooking time per your oven temperature and chicken size. Would definitely make again for company.

I love all of Ina's recipes, but this was one of the easiest to prepare. The chicken was perfect, moist with a subtle hint of lemon flavor. The croutons and onions were absolutely divine. I'm glad I cooked two chickens, The four of us ate one tonight, and there will be another for later this week.

I have prepared this roasted chicken recipe several times and I just love it! It has become a favorite family dinner! I no longer buy precooked rotissarie chicken at the grocery store. Roasting a chicken is very easy, delicious and you get the extra benefit of the aroma throughout your home while roasting. I also make stock from the remaining chicken and freeze for future recipes. Awesome!

This was the easiest whole chicken to bake that I have ever made. Talk about moist and tasty, wow. The croutons Also made, but included them as a topping to a salad I served with this as the onions were just too cooked for our tastes. This is a very easy recipe for a beginner cook, no way to mess it up. I passed this one along to my to be daughter in law who is really just learning to cook. Way to go Ina.

This is just an excellent recipe. Not hard to prepare and your guest will be so impressed. It turns out tasty and moist and is the best baked chicken I have ever eaten. My family of picky eaters loved it.I tried it last week and they requested it again tonight. It is sure to become a regular at our house! I love sourdough bread so I used that the second time I fixed it for my croutons and it turned out wonderfully! Thanks for a wonderful dish!

This is a very good chicken recipe. I almost left out the croutons thinking that my husband would not like them. But they were the best part and really add to the recipe. I served them with the carmelized shallots which are also delicious.

I love this chicken recipe. I think what I love most is the cruchy crutons that soak up all that juice. The only thing I do differently is that I squeeze the lemon quarters into the chicken cavity to give it a little more lemon flavor.

Absolutely exquisite!!!! My husband went wild over it. The chicken was moist, and the juices poured over the chicken sitting on the croutons were rich and delicious. The onions do burn but the aroma during the roasting was fabulous. Next time, I would line the roasting pan with foil for easier cleanup. What a winner!!!!
