Delish. some changes: used just chicken breasts roasted at 350 for 1 hour added herbs de provence on top placed lemon slices underneath skin and underneath chicken breasts. made mashed potatoes 2nd time around. So good when gravy and onions (perfect) mixed in with mashed potatoes. Loved it. I have 3 of Ina's books, now I want to buy the Paris book that this is in. Flavors were not overwhelming and you can really serve this dish with any side dishes. A light meal for lunch, dinner or game time. The first time I struggled with the dead critter, but the results more than made up for it. The second time I made it I was feeling much more confident and the results were still fantastic. I would recommend this dish to anyone who likes chicken. I used Vidalia onions which permeated the chicken - such flavor (as Ina would say)! My only problem was how long to roast the chicken - I have a temperamental oven so I had to adjust temperature and length of time. The next time I make it I will make the carmelized shallots and French green beans that she suggested. Very simple to prepare and the chicken was moist and delicious. I used a 3.75 lb chicken for 2 people (with leftovers) and cooked it for only 1 hr. Make sure to adjust cooking time per your oven temperature and chicken size. I no longer buy precooked rotissarie chicken at the grocery store. Roasting a chicken is very easy, delicious and you get the extra benefit of the aroma throughout your home while roasting. I also make stock from the remaining chicken and freeze for future recipes. Awesome! The croutons Also made, but included them as a topping to a salad I served with this as the onions were just too cooked for our tastes. This is a very easy recipe for a beginner cook, no way to mess it up. I passed this one along to my to be daughter in law who is really just learning to cook. Next time, I would line the roasting pan with foil for easier cleanup. What a winner!!!! |
