I did a combination of the Alton Turkey without stuffing and the Alton Turkey with stuffing as well as my Mom: Alice's Turkey with stuffing. The brine was all Alton's, it smelled so pertty. Okay, so I really should have put the bird on the last rung especially for the broil portion but, managed to save zee bird before it became to charred. Otherwise it was pretty easy peasy. I rubbed the bird with oil, S&P and paprika as well as some secret poultry seasoning from Mancho's Rotisserie which is delightful. Like many of the other reveiwers, I too altered the stuffing, pretty much doing a major overhaul for my palette. In place of cherries, I used cranberries and raisins. Light Rye Bread, Celery, Half a Spanish Onion, Green/Spring Onions, parsley and an apple. I also placed an apple in the neck cavity to ensure all the flavourful goodness would stay in. Finally I basted the bird every hour. Waited for that magical 170F Temp and it was ready freddy. Thanks Again Alton!!!!! His roasting the vegetables in the oven shrunk them way down to less than what I expected. Overall the taste was good, but not great. My husband said it was the best stuffing he'd ever tasted. We used cherry flavored crasins, and did dot the top with butter. We will definately use this again! I added some mild pork sausage which added just a little heat which made a nice combination to the sweetness of the cherries. The stuffing got better with age. Next time I think I would soak the dried cherries so they would swell up with flavor faster rather than a day later. Would definitely make again! Everyone loved it. I used cranberries instead of cherries and apples instead of green pepper but the end result was delicious. We've done it this way 2 years in a row and it's a hit with my family. We did make modifications to the stuffing, since nobody was crazy about it the first time. We thought the cherries were too strong, so we used cranberries instead and liked it much better. We also tried using chestnuts instead of pecans, however, I didn't really care for either. I'll leave the nuts out completely next time. Bottom line - you can modify the recipe to suit your taste, but use the challah bread and heat it up before stuffing the bird. I would use about 1/2 the dried mushrooms next time and a little more sage. We didn't stuff the bird but cooked it in a dish on the side and it worked fine. Roasting the veggies is a delightful flavor addition as is the green pepper. Was not impressed with the stuffing. Too bland. Some dinner guests did not like the dried cherries. Perhaps some tastier herbs would kickup the stuffing. I added fresh sage,thyme,rosmary,parsley and fresh mushrooms to the stuffing mixture,added 2 cups of chicken stock and baked in a buttered/oiled casserole dish for 30-45 minutes. This is a wonderful recipe that is now a family tradition. Thanks Alton Brown! I doubled the recipe, and actually forgot to double the herbs---but it was just fine. In fact, I think if you double the sage, it would be overpowering. This is a "keeper!" After mixing everything up with my hands I spred mixture the into a small baking dish and baked uncovered in a 350 deg oven for 35 minutes. Except for my mom's recipe, which I lost, this is the best suffing I have had. You may want to double recipe if feeding more than 4 or 5 people or want left overs. It is my fault for not reading the recipe before starting to make it. This one calls for making stuffing in a microwave!!!! YUCK! Come on Alton. Who makes stuffing in the wave? When I tried to change the recipe on my own so that I could bake it, I ended up with WAY TOO MUCH liquid and now I have mush. And I have to start all over again. Inject the bird with broth. It cooks fast. The bird is always moist. Stuffin's sometimes too moist, so I'll put it in an uncovered casserole, dot the top with butter and let it dry out a bit. I am mainly concerned with the stuffing, as I have followed Alton's recipes on everything else I have prepared from his show. However, I have one suggestion. As he was preparing the stuffing, he had several turn tables with possible ingredients, sometimes looking to be as high a a dozen. He just swooped in on one or two ingredients from each one, and the viewer could not make out what the other ingredients were. My wife will NOT eat mushrooms, she says she doesn't do fungus. When there are multiple possible ingredients as there were in this case, why not have a graphic on the left side of the screen with other possibilities? This would also be helpful for recipes that contain ingredients which may cause allergic reactions. My wife is highly allergic to shellfish, but no substitute is ever given for shrimp or such.
