Wonderful and Easy Recipe

This is the first time I've used this recipe. The recipe actually yielded about 12 latkes. I grew up with latkes that required a lot of flour and egg to hold the pancakes together, but the amount required in this recipe holds them together perfectly. And the sweet potatoes add in a little extra taste. This is the recipe I will be using from now on when making latkes.
