Instead of just Idaho potatoes, I used half Yukon Golds & half Red Bliss potatoes. For the cheese, I used half smoked Gouda & half Muenster (because I love it). I also used a 1/2 pinch of black pepper along with white. Instead of 3/4 cup of heavy cream, I used 1/2 heavy cream & 1/4 whole milk (give or take a measure or so. I went with consistency).
