I tried this recipe on Christmas. This was absolutely delicous. I read the reviews before making the dish so I cut back on the chestnuts as some recommended. I don't think that the chestnuts were all that obtrusive. I wished I had added the full amount. The Ciabatta Bread at Pannera's didn't look that interesting...kind of pale. I found a much better looking loaf at Kroger's. Also, the pancetta had spoiled (from Friday 'til Sunday...go figure)so I used bacon and it worked out fine. The only thing that I thought was off was the preparation time. It took me a good while to do all of the chopping. I am also on the slow side. That won't stop me from fixing again. But, I'll be sure to allow myself more prep time.

I made this for Thanksgiving and OMG was it fabulous. I thought that I would need to double the recipe for more people. DONT DO IT! It such a rich stuffing, a little goes a long way and it yields more than it says. This is a must make again next year.

This was fun to make and sooooo good! Everything went together exactly as the recipe directed. The only thing I think I would change is to use half the amount of chestnuts...unless you really love chestnuts! This was the BEST stuffing I've ever tasted and it is going to become my "traditional" stuffing from now on!

I religiously watch Giada, and when I saw this recipe, I knew I had to do it for our family's Thanksgiving. My mother was skeptic, not being a huge fan of garlic. I must say, it ended up being a huge success! Not to mention, the recipe is incredibly easy, and so much fun to do.

I made this for Thankgiving and it was a HUGE success. It was the only dish I made that we did not eat for leftovers because there was not any left. It was not hard to prepare, I actually made it early in the morning and refrigerated it until I was ready to bake it.

My friend brought this surprise stuffing to our Thanksgiving Dinner this year. It was a delicious accompanyment to the turkey (and the ham). But this dish can stand on its own, too. All by itself it is wonderful. I have just made it for a buffet supper with pork roast. I seasoned the pork with rosemary and garlic, too, so they complimented each other. Heavenly.

I have a nut allergic child in the house so I decided to omit the chestnuts and substitute dried figs, dried dates and cranberries in its place. The stuffing came out delicious! I also doubled the recipe and used a rosemary sour dough bread in addition to the ciabatta bread suggested in the recipe. We served 16 adults and had leftovers. We all enjoyed it and will definitely make it again next year.

I couldn't find ciabatta bread or pancetta at my grocery (and I dislike having any kind of nuts in my food) so I also removed the chestnuts. I used a 50-50 mixture of whole wheat bread and sourdough and it gave it a nice color and flavor. I also used about 6-8 slices of bacon (cut off large parts of fat) instead of the pancetta. I also only used 1 1/2 onions and added a couple of chopped green onions for look and taste. My family is extremely picky and my husband doesn't care much for stuffing but everyone loved this dish. I had to give out the recipe as well. This is one for the books, everyone should give this stuffing a try, it's worth it!

I bought the Chestnut from Chinatown which only cost $3. The quailty is not bad either. I cooked it for Thanksgiving and I thought it was a bit dry. I should have put more broth than the recipe required.

I used this stuffing dish for Thanksgiving. It was a big hit; even our teenage granddaughter who doesn't normally like stuffing went back for seconds! I really wouldn't change anything except maybe use a little more chicken broth(I used the minimum 1 cup) but I made it the day before, so it probably absorbed more of the liquid. Bought my ciabatta bread from Panera 2 days before. Used 3 loaves(one of their loaves is about 6 oz). The day before, I cut it into cubes and let it sit out overnight to dry a bit. Alas, there were no roasted chestnuts in a jar to be found in my area, so I did score, roast and peel my own. Definitely use the jarred if you can find them. They were good, but very labor-intensive. Also, I couldn't get any pancetta, so used regular bacon instead. I would absolutely make this stuffing recipe again - great combination of textures and flavors. Also used Giada's recipe for baked mashed potatoes which was excellent.

My kids and family loved this Stuffing. Although I did not use Giabatta bread. the Store was out of Giabatta bread, so I picked a rustic Italian instead and it turned out wonderful. The combination of flavors was great. I will make this again throughout the year, not only for Thanksgiving

Of the three stuffings at our Thanksgiving dinner this year, this one was definitely the favorite! I was unable to find jarred chestnuts, so I roasted my own and I used turkey broth instead of chicken, but other than that the recipe was followed as-written. Fantastic!

I served this stuffing with my Thanksgiving turkey this year and it was fantastic. The creamy texture of the ciabbata bread and the flavors of the chestnuts and rosemary were so satisfying. My 86 year old mother said it was the best stuffing she ever tasted. And she has celebrated many Thanksgiving holidays!

I usually don't like stuffing but this was wonderful! I agree with a previous review that you can easily cut the amount of chestnuts in half as they are quite expensive! I also added a bit more garlic and panchetta. What a wonderful side for a lot more than just turkey! This would go very well with pork or beef! A new tradition in my home!

Every Thanksgiving I like to try at least one new recipe to add to the repetoire. I made my old standby cornbread with sausage stuffing (always a hit) AND this new Ciabatta stuffing. Absolutely fabulous! We all loved it. Very tasty... love the chestnuts & pancetta combination... It'll now enter the hallowed halls of my "old standby" favorite holiday recipes.

This recipe was a big hit at our Thanksgiving table and tasted even better with leftovers. This is probably the best stuffing I've had. My favorite were the chestnuts which were soft, sweet and nutty. The only reason I could not give this 5 stars was the cost and difficulty finding the ingredients (chestnuts and pancetta). This stuffing cost more than my $25 turkey and I had to go to 3 separate stores to find the ingredients.

While this stuffing doesnt have ANY of what I consider traditional Thanksgiving tastes (sage, thyme, etc.), it is WONDERFUL. My entire family and I enjoyed it thoroughly. Some of the ingredients are a little pricey ($10 per jar of chestnuts and $12 for pancetta), but it was worth it. I was slightly concerned about what looked like an awful lot of chestnuts being added to the mixture, but I made the recipe exactly as it was written, and I'm glad I did! No tweeking, no additions or subtractions were necessary. I will make this stuffing again and again (but not for Thanksgiving). I kind of missed those traditional tastes on the holiday. Great work Giada!

I made this for a Thanksgiving potluck, and it was the first stuffing to go, out of about four. The ingredients are definitely costly and hard to find, but worth it--just don't wait till the last minute to get them! I followed the recipe exactly except that I added a few more chopped fresh herbs (thyme and sage) and quite a bit more chicken stock (maybe another full cup). I don't understand the people who didn't use the chestnuts--that's what makes this recipe! Get them at Whole Foods, World Market, or order them online.

I just prepared this for my family Thanksgiving. It was a new idea to do an italian inspired stuffing, since my family usually does it differently, but everyone at the table was very excited about the innovation. My husband said it was the best stuffing he ever tasted. That says a lot! The pancetta was so nice but if you want to do it vegetarian it's still fantastic. The chesnuts also made it such a tasty, comforting food. Loved it!

I had planned on another stuffing recipe for thanksgiving this year, but when I watched Giada make this I new I had to try it! This was recipe was fantastic!! Made this tonight and it was a hit. I also made Paula's Southern Cornbread stuffing and no one liked the cornbread stuffing but devoured the Ciabatta/Chestnuts stuffing! They all loved it. Thank God I made this stuffing as well! I only put in one carrot and a little more stock and less Chestnuts. Great!

I am rarely disappointed in Giada's recipes and this one is no exception. I varied from her recipe in 2 ways. I used bacon instead of pancetta and I used more chicken broth than what she called for. The outcome was a GREAT tasting stuffing which my whole family raved about. Definitely a winner! TY Giada

I made this stuffing for thanksgiving and everyone loved it. I left out the chestnuts because they weren't available at my local grocery store. I read reviews about the stuffing being a bit dry so instead of cooking it a dish I stuffed my turkey with it. The stuffing came out awsome, nice and moist!

I loved the idea of adding pancetta to dressing. We fry our turkeys, leaving us sans drippings for flavoring the dressing. The pancetta worked great. The one major change that I made was that I used cornbread instead of ciabatta because there are some things a Southern girl just can't do & non-cornbread dressing is on that list. I also couldn't find jarred chestnuts & had to used canned ones packed in water. The end result was a colorful & flavorful dressing which may become a family tradition.

Tired of the same old sage dressing, I ventured to try this one. Oh, my it is so good! I didn't want to spend the money on the chestnuts, so I skipped them and I was unable to locate ciabatta bread, so I substituted a round loaf of sourdough. Other than those changes, I made the recipe as listed. This is definately a keeper recipe!

Not a review to this recipe but to answer a viewer question -- To Anonymous: please type in "chestnut" in the "Topic" finder. This will explain to you the difference between chestnuts (grown on trees) and water chestnuts (grown in water). They are totally different and not interchangeable. Canned/jar chestnuts are available at specialty cooking stores, and during the holidays. Water chestnuts are usually found in the Asian cooking section of most markets.

I saw Giada make this on TV and decided to make it for Thanksgiving instead of our usual family recipe. I of course, gave it a trial run making it before the holiday. My husband and I loved it. The only reason I will not give it 5 stars is because of the $$$$ you have to shell out for ingredients (and these are just the "main" ingredients): Ciabatta bread $3.50 Whole chestnuts $10.00 Pancetta $10.99/lb Holy mackeral! It is, however, a delicious stuffing and one that I will use every thanksgiving but be warned about the sticker shock you will get at the grocery store!

The suttle nutty flavor of the chestnuts compliments the saltiness of the pancetta(yummm!!) Although Ciabatta keeps its shape well I used other types and it turned out just as good! Great and Easy!!

I was looking for a good recipe for stuffing this Thanksgiving, and I found it. Besides being really fun, it was easy too. I even used bacon instead of pancetta and sourdough and wheat instead of ciabatta bread, and omitted the rosemary, and it turned out great! You really have to do a lot to ruin this recipe. I don't have to do TD cooking at my home, thank God, but I am doing Christmas dinner. I don't want all the traditional items my family usually eats at Christmas, so I thought (since I love Italian food along with 3 of my children) I would do an Italina Christmas dinner to mix it up. Every recipe on this episode is EXCELLENT!!! The flavors are so Italian and wonderful, I expect to use these recipes throughout the year with variations. DEFINATELY worth the effort/try people.

I made this to add an Italian flavor to my Thanksgiving meal. My best friend is from Rome and she always feel a bit displaced with this holiday. I like adding Italian touches to our holiday meals to include her cuisine in our celebration. She loved the stuffing. I also added a bit of prosciutto to the stuffing and it added a great flavor. If you live in Southern California you can purchase fresh baked ciabatta at Trader Joe's.

This recipe was wonderful, I wanted to try it before the holidays' and it would be terrific with anything, turkey, pork, prime rib, chicken, it's really great! To answer the posted question, yes chesnuts are typically found in a jar, and they are already peeled and ready to eat, you can also buy fresh but that's so time consuming. Ask at the store if you can't locate them. They will usually put them where the holiday stuff is displayed, or in the specialty food isle!

I'm Sicilian and remember the holidays with my grandparents very well, those memories are always with me. I have tried this recipe last night after seeing it on your yesterday 17/Nov/2007. My son thought I was crazy when I wanted to go to the store to purchase items I didn't have in my pantry. We all loved the stuffing and I will be making it to bring to my sisters on Thanksgiving Day. I'm also going to make the turkey and squash lasagna to see if they like it. I know I will because, I love to cook and try new things. I have been an avid TV fan of "Everyday Italian." I send my thanks and holiday wishes to all of you on the Food Network. PS My other all time show is Malto Mario, to which I love his recipes and his is a sweet nice crazy cook. I decided to try this recipe last Thanksgiving and we loved it! It has replaced Grandma's stuffing recipe and is now a tradition in our house. I had cravings for it all year but finding roasted chestnuts in July turned out to be nearly impossible. World Market carries them during the holiday season only. We froze small portions of the stuffing with a little gravy on top and enjoyed it for months. It tasted exactly the same as it did before it was frozen and it only took 5 minutes to thaw & heat up in the microwave.

This is a great variation of a Thanksgiving staple. Still adheres to a traditional stuffing but different enough to please those looking for a new way to prepare it Myhusband and I are self-proclaimed purists when it comes to Thanksgiving dishes and this satisfies both our desire for traditional Thanksgiving flavors and our inclination for gourmet tastes. This is our new go-to stuffing recipe!

Last Thanksgiving I caught and episode of Every Day Italian and boy was I in the right place at the right time! When I saw the Cibatta stuffing I thought it look like a great spin on a holiday classic. I made it for my family and now we are all hooked!! Even my father who is a huge fan of stuffing baked in the turkey is asking for it again this year. It was so easy to make. Not only was it incredibly yummy, it was moist. Thank you for such a wonderful recipe that will definitly be handed down thru the family for years to come!!!

I made it last thanksgiving (2006) along with Giada's turkey recipe, and butternut squash lasagna. It was all a big hit with my 11 guests, they all said it was the BEST thanksgiving dinner they ever had and voted on me having thanksgiving dinner at my place from now on. well, i'm repeating everything again this year for 16 people! it was all very easy to prepare and tasted delicious!

I love to make Giada's aunt Raffy's stuffing every year, but my son finds is a little too sweet, so I decided to try this one since I always have plenty of chestnuts left over. He loved it! He wants me to make it every year for him now. And don't worry if you can't find (or afford) pancetta. Bacon works just fine, but try to get the center cut. It has less fat and more flavor.

I made this recipe for Christmas and what a mistake that was. The ingredients were expensive ($20 for a jar of cooked chestnuts!) and some difficult to find. The preparation was much longer than indicated in the recipe, and the multitude of ingredients provided overkill in the flavor department. It was way too salty and the majority of this $75+ dish went to waste. I have since tried another Giada recipe and was, yet again disappointed. Tip: Don't try the Rigatoni with Almonds, Breadcrumbs, and Peppers- you will have stomach pains from all of the oil-soaked breadcrumbs.

I've made this dish 2 times and everyone loves it. Some ingredients are a little hard to find where I am, but believe it or not, the same store had the Ciabatta and Pancetta. I found those items at a high end "Publix" and the chestnuts at a "World Market". Otherwise the directions were easy and the results were awesome.

I cut this recipe in half because I was just cooking for myself and one other person, and it was the perfect amount, with tons of leftovers! I was ill during the holidays and unable to try this recipe. I finally tried it last night and it is great. I wasn't able to find chestnuts so I added pine nuts and they worked fine. My prep time was much longer than 20 minutes. I will do this again.

(Note: At Christmas - in Salem, OR - I couldn't find pancetta at ANY store so I tried substituting slab bacon instead. It didn't go terribly well. My advice would be to use pancetta or not make the recipe at all!)

This wasn't one of my favorite dishes that Giada made, but it was still one of my family's favorite. It was a little drier than I would have liked, and instead of pancetta (the store ran out) I used spicy turkey sausage, and my family LOVED it.

The pancetta gives this entire dish a wonderful, rich, flavor. This is my favorite stuffing recipe! I omitted the chestnuts and it was still delicious. I found the inside a little too wet for my liking, so I popped it back into the oven for another five minutes at 300 degrees, and it was great!

This year was the first that my husband, son, and me were out of town and unable to be home for Christmas Eve. So knowing that my husband loves stuffing and I hate it, I wanted to find something different to fix. I saw this episode and thought it looked wonderful, but wasn't sure my husband would go for something that different and plus it had veggies in it and he will not eat veggies. So I made it and he loved it!! I cut the recipe in half since it was just us three...and it still made quite a bit. My husband not only went back for seconds, he woke up at 2 am and had more!! This is by far the best stuffing I have ever tasted! It's also very easy to make. I made some modifications the second time around due to the fact that some ingredients either don't exist or are extremely expensive in this part of the country (fresh OR canned chestnuts, bulk pancetta). And I found exactly ONE loaf of ciabatta bread in town at Thanksgiving! I used high quality peppered bacon and omitted the nuts and it turned out great. I also use an entire can of chicken stock per loaf of bread. Just make sure to bake until the top is really brown and crispy. My family can't get enough of this stuffing.

I'm not a 'make everything from scratch' Thanksgiving cook, but found myself with some old loaves of bread on Thanksgiving and decidied to try it. Probably the best stuffing i've ever made. We didn't have chestnuts so I added a few pecans. I also needed the pancetta for my string bean recipe so i used sausage similiar to her other stuffing recipe. Can't wait to use chestnuts next year.
