This is a good recipe. I would use less stock, it made the casserole a bit soupy and I would put it under the broiler to crips up the bananas. Everyone that had some loved it - Even ones who don't like sweet potatoes! VERY Good it just needs some tweeking!

Fantastic!

I've never made a sweet potatoe cassertole before but this recipe was SOOOOO easy. I followed the recipe on the website and found the presentation to be a lot better than on the show. Everyone love it

a little tweaking, but good

-substituted vegetable broth for chicken broth for all the vegetarians in the family -sweet potatoes weren't cooked enough after an hour other than those minor adjustments, this recipe was great. It went over really well with everyone at my Thanksgiving table, I think the bananas on top were a welcome alternative to mom's usual pineapples.

Delicious, but sweet!

I liked it but some people may find this recipe to be a bit sweet. As the bananas cook they become sweeter and then there's the potatoes and sugar on top (or below). But good - at least there's a recipe without orange!

Good but not great!

I enjoyed this dish, but unlike two other Chef Cruz' recipes I have tried, this one didn't blow me out of the water. It was just good. And after trying his stuffed French toast and Caramelized Broccoli and Onion Stuffed Shells, good seems utterly boring. It's sort of like going to a basketball game where Michael Jordon only scores 20 points. That's a good performance for nearly anyone, but when MJ scores just 20, that's a disappointment. Perhaps the good chef has simply raised the bar too high!

pretty good

I liked the taste of this, but the presentation was horrible. The bananas did not carmelize and look nice, like I expected, rather they turned brown and looked rotten. But, it did taste wonderful!! I may try using more brown sugar and broiling if I make this again.

Too Much Cinnamon

User: holly from chino valley, AZ    User Rating:
Way too much cinnamon. I used a high quality cinnamon, though so if your cinnamon has been in the cupboard for awhile and has lost some flavor, maybe it'll be the right amount. I'd cut mine in half. Also, the bananas on top were not very good, and I would leave them out in the future. I normally HATE sweet potatoes, and I actually liked this dish after scraping off the bananas, and in spite of the overpowering cinnamon flavor. It was the first time I'd had a savory sweet potato dish. The texture was very smooth, and I know I'll try it again for a holiday dinner (with a couple of adjustments)

They LOVED it!

From the youngest to the oldest they all loved this recipe on Thanksgiving. At first it received strange looks and remarks over the bananas on top, but within minutes everyone was raving over how good it was. I didn't tell them it was low fat and low cal, somethings should be kept a secret! Thanks for a great recipe!

this was a treat!!

This deserves 6 stars. This did not taste low cal/fat at all. The bananas on top put it over the top!!! It was almost dessert like.

not very good

to sacrifice so much taste to cut the calories isn't worth it in this instance. the one thing that is good is the bananas on top! I'll add that to my sweet potato casserole recipe

This will be a staple for me! Quick and Easy

I made it twice, the week before Tgiving and tgiving. It was great. I agree with the other poster my potatoes took longer in the oven than one hour. The first time I baked the potatoes the second time I put them in the broiler. I like the top heat on this dish better :). This recipe is perfect and healthy!

Presentation needs improvement

The flavor was good but the presentation was pretty bad. The bananas on top looked like old sliced bananas and didn't caramelized at all. The sugar melted and disappeared. I think putting them under the broiler would work for a better presentation.

For someone you can't have sugar

This is absolutely wonderful!! I substituted Splenda Brown Sugar for the regular brown sugar. This was great. I made it for Thanksgiving. My neice and nephew first said, Yuck, but after tasting it wanted seconds. Every year I had to skip the sweet potatoes, but this is all natural sugar so it is great.

Delicious!

Incredible flavor. No need for sugar in the sweet potatoes. The bananas were a brilliant topping. I would definitely make this dish again.

I served this on thanksgiving and my entire family loved it. No one missed the butter and no one missed the marshmallows. They thought it was gourmet with the bananas!

So-so

This hadn't turned out as well as I'd expected- the sweet potato mixture was bland and banana and brown sugar topping wasn't very tasty. When I cooked one of my large sweet potatoes they didn't cook all the way, I think this recipe is better suited to medium-sized sweet potatoes. Even though my family ate almost half of this dish I was disappointed with it, not something I'd serve for Thanksgiving again.

yummy

This is a great recipe. I had never heard of using chicken stock as liquid with sweet potatoes, but it was very tastey. The carmelized bananas on top were a wonderful complementig taste as well. I liked this better than with marshmellows. Took mine a little longer to brown than directions stated, and I think they still could have cooked a little longer. Mine never did brown very good. Overall, I LIKED THIS RECIPE, as did my guests!!!

Fabulous!!

This dish came out quite well. My wife and I are both lacto-vegetarian, so I switched 1 cup chicken broth for 1 cup vegetable broth. I discovered that I had to cook my potatoes for an hour an a half actually. They were still uncooked inside after only 1hr. Maybe the oven just needs to be warmer?

Surprising and Amazing!

I just saw this recipe on the show today. It sounded interesting, so I made it for dinner tonight. It was extremely good! It isn't overly banana-tasting. After broiling, the sugar gets syrupy and crystalline, and the bananas get gooey. The flavor was great! It doesn't taste "light," and it would make a great side dish at any Thanksgiving celebration.

used as a dessert!!

Instead of using this as a side dish in a casserole I split the recipe into individual ramekins and topped each with the bananas- would probably bake without bananas first to heat and then add bananas ans sugar and broil last minute for better presenation. But taste was sweet enough to use as a dessert...my 1 1/2 and 4 year old loved it! Good way to get the kids to eat their veggies!!

This was a very flavorful side dish. Both my jhusband and I have been trying to lose weight and with the holidays comming we've been looking for lighter alternatives to the tradional fare. I always love trying new dishes... The only problem I had with the recipe was the bananas on top was they came out a bit Mushy
