This was my first time making biscotti and cant believe how simple it was. I did change it up a bit by adding orange extract for more flavor. Today I am going to make the same basic dough and change up the flavors a bit. I cant believe I used to spend $1.50 for one of these at the coffee shop. Never agian, too simple to make myself.

The recipe calls for a 25 minute second bake. This is way too long. Start checking after 10 minutes, 15 minutes is more than enough. More than than an you have great biscotti for you puppy!

I am always extremely satisfied with Giada's directions/recipes - this is no exception. It was my first time making biscotti, with this recipe I will be making them again and again. I only dipped half into the chocolate to have a variety. Also, I will be adding a few things to the recipe such as chocolate chips to change it up a bit. I too agree with another review that the cornmeal flavor dominated (I even used extra zest). Additional citrus flavoring might be worth trying or substituting some of the cornmeal with flour.

I made this recipes when I had plenty of time to cook so I did not mind the time spent, I did however think that the cornmeal gives it a weird taste, as long as I got a bite pf chocolate it was good but when it was just the cookie it taste a little like fish.

This biscotti is truly delicious. It was great to read other reviews before trying this recipe to get an idea of what pitfalls there might be. I too only had medium grind cornmeal, but after the comments of others, I pulled out the coffee grinder that I use as my spice mill and put the meal in there. It worked great and the meal was much more finely ground. I also got a very high quality organic chocolate that was in the baking section, specifically formulated for easy melting, and it worked great in the microwave. These cookies are definitely crunchier than Giada's holiday biscotti recipe, but they are wonderful and perfect for dipping in coffee.

What a wonderful recipe. So easy and the results made a lasting impression with everyone. For a variation in presentation, I drizzed the chocolate and left off the chocolate powder. The cornmeal is what sets the texture apart from all others. I am so happy to have found this recipe again. As Christmas gifts for family, co-workers and neighbors, it is a huge success that deserves repeating.

This was a great recipe! I, of course, embellished a bit using all orange rind instead of both lemon and orange. As well, instead of using chocolate chips and melting them, I used a Hershey Dark Chocolate bar and melted it over a double boiler...I found that the chocolate started to harden inbetween dippings. This was a winner and I will make it again and again!

I've been eating biscotti for years, made by Italians and usually the anise flavored biscotti. I have never had one that topped this recipe. It is without a doubt the best biscotti I've ever had, and my family agrees. By the way, biscotti are SUPPOSED to be hard. This is not a soft cookie. The name biscotti in Italian means bisquit. That's the reason you bake them twice, to make them hard. If you underbake them you'll end up with a soft, underdone cookie. I hope the administrators of this review erase the "one star" ratings of those that couldn't find the recipe. This one deserves all 5 stars.

i made this, but couldn't find "fine cornmeal" in my local supermarket so went for the regular kind. a little grittier, as expected; wouldn't recommend using the Quaker brand. But the problem I had was the chocolate--it was too thick for dipping the biscotti. What's the best way for thinning it out?

I'm not an experienced cook, so what am I doing wrong? The dough in this recipe is soooooo sticky I can barely get it out onto the parchment, divided and shaped--even with wet hands. Luckily the odd looking "logs" bake nicely and the flavor and results are worth trying again and again.

This recipe is also found in Giada's cookbook excluding the chocolate dipping and adds pistachios to the dough. I found it easy to follow and it has a wonderful taste either eating it plain or dipping it in a nice lemon tea. I have never made biscotti before, now I will be excited to make different versions. I have also found other recipes in her cookbook to be as equally easy and with great results.

I needed to make sure and make the logs long enough so the tops won't split. Since my tops split, the cookies weren't as pretty. But the taste was ohhhh so good. I loved the citrus flavor.

I made this biscotti for the first time last year as one of the many christmas cookies. We loved it so much that I had to make another batch. The cornmeal makes this biscotti so crunchy and there is just enough citrus flavor. I think that they are delicious enough without the chocolate, so I make them both ways. These cookies will continue to be a christmas tradition.

It was wonderful, it turned out exactly like a true biscotti. And for the one that said that the biscotti was hard, biscotti is supposed to be hard, you don't eat it alone, you dip it in your coffee. Biscotti means "twice baked", and all biscottis are hard. Haven't you ever had one? Obviously not.

This recipe was great! My first attempt was just okay, but the second try was awesome. I couldn't find "fine-ground" cornmeal, so I just used my cheap little coffee grinder and it came out great. Using a food processor or blender works too. And for the second baking I needed to decrease the baking time--but that's mostly I have this ancient old oven that's way too hot...

Interesting flavor...I used corn flour instead of cornmeal for a less gritty texture, but it still had a pronounced corn taste. I might decrease the corn flour and increase the all-purpose flour next time. Maybe some orange extract would be nice in this too.

I made the recipie with regular cornmeal (I couldn't find fine) and I noticed the difference in the consistency of the cookie. You would end up with little grains in your mouth after eating them. Next time I will grind the cornmeal as previous reviews mentioned. One other thing is that I put chocolate chips directly into the mix --came out very good. For those who love biscotti, I think Giada's Holiday Biscotti are much better (if you like pistachios and cranberries)

I love this recipe though my first attempt, after following the baking times exactly, could have been renamed "break teeth cookies". The second baking for me is WAY too long and results in rock hard cookies. Having said that, the texture after a dip in coffee or tea is wonderful so I guess it is up to personal taste. I also found that the lovely citrus flavour was lost after the second baking, whereas it was strong when I cut the logs up after the first baking. I have made this recipe a few times since - the second time I only baked them once, and the third time I baked them twice but only for 10 minutes on the second baking. I have yet to hit upon my perfect formula for baking time. I also found the chocolate too thick to dip and had to spread with a knife. But I love the recipe on the whole and the biscotti look just as they should - as with all of Giada's recipes, the process is de-mystified. So despite the weapons AKA biscotti that resulted from my first attempt, I will still give this a 5-star.

I love to make my own biscotti, but this recipe didn't do it for me. I liked the fact that the recipe didn't have oil or butter, but the corn meal left a gritty feeling in my mouth afterwards. I much prefer Giada's Holiday Biscotti recipe over this one.

Someone should check the recipe, as after following it instruction by instruction, I would have to say the biscotti were sooooooooooo hard one could not bite into them for fear of breaking a tooth. Either the cooking time is too long, although they were a nice light color, or an ingrediant such as butter was left out. Very disappointing.

I didn't have the fine cornmeal - but I did have Jiffy's corn muffin mix and you know what? It was perfect! not too overpowering. I'd add more zest and possibly citrus oil. A good basic recipe.

I used only oranges because we love that chocolate/orange flavor. Packaged up and gave as gifts for Christmas. Don't use the convection oven though - comes out way too hard, it could break your teeth.

Experienced cook--first time making biscotti. My aunt makes them professionally. Hers are very good--these came out better. I made the first batch w/ the lemon and orange zest. The second with orange zest only (I put in more than was called for). I also added some coarsely chopped walnuts and dried cranberries. They were good! They did not last long at all. Very easy-very delicious!

I made these for Christmas and they will now become an annual tradition. I also discovered that they make excellent "biter bisquits" for teething grandchildren, minus the chocolate. They are not too sweet, you know what is in the cookie because you made them and they contain no preservitives!! Works for me.

I liked this recipe, but I felt like it had too much salt in it. I didn't coat the biscotti in chocolate, and perhaps the salt serves to balance out the sweetness of the chocolate coating. I have other recipes that call for 1/4 tsp. of salt. I think I'd go with 1/2 tsp. next time. Otherwise, great! Added dried cranberries, too. Yum!

I followed the recipe exactly, and after the second baking, they came out hard as a rock. From reading, other reviews, it sounds like this only happened to a few others. Strange.

Although biscotti is not a cookie and should be more dense the second bake them made them overly hard. I would definitely cut the baking time down on the second bake.The flavor was excellent.

These tasted oh' so yummy. for the holiday season I make tons of cookies, one per day, and freeze them then pack then on a special day to deliver. These didn't freeze so well already dipped in chocolate. I would freeze first then dip just before delivery or not freeze at all.

I used this recipe to make Christmas gifts for my sister and mother-in-law, who are both VERY good bakers, and they were so impressed (I'm a beginner baker). I will definitely make these over and over. Next time I'm going to add dried cranberries and use white chocolate as a coating! Exciting!

a new twist on biscotti, although VERY time consuming compared to other biscotti I have made. Also, the chocolate was way too thick to dip them in, so I had to spread it on with a small spatula.
