Easy and delicious

I had to cook mine a little longer than the recipe suggested to get them baked all the way through and golden on the outside. But the recipe was a cinch, the finished product looks complicated and they smell amazing! It was a big hit and everyone was impressed!

I thought they were a little dry, but I tried to use another brand of mix then what was sugested. I guess from now on I will trust the experts.

My family thought it had a little too much rosemary and not enough ham. This was easy to adjust, though. Good either way. Very, very easy to make and quick baking.

Jiffy biscuit brand wasn't available - no way to know how much mix should be used!

Quick recipe but not really a scone

This recipe is very quick and the 'scone' is tasty, but it has more of the texture of a biscuit. You may not like the 'twig-like' texture of the rosemary. But it was very nice/simple for breakfast or brunch, though.

flat scones

Has anyone had trouble with their scones not keeping their original pre-baked shape? Mine turn out like big flat cookies, although with turkey and swiss ;) They still taste wonderfully, but they aren't so pretty. Please help!

ADJUSTMENTS

User: Anonymous    User Rating:
As Rachel Ray always says, these are methods, not recipes. If you have to put in more cream its a small adjustment, not a big deal. Also, it could be your fault that you have to add more. Maybe you added an unnoticaly larger amount of ham or rosemary and that made your batch dry.

Huge Flavors

We were impressed with the results and would make it again inspite of the fact that the 3 tablespoons of rosemary were too much in terms of volume ... ended up adding more cream also, to help hold it together. Not being a baker, I cannot trouble shoot textures. It was a bit hard to combine, maybe I had too much turkeyham also. The meat was thin sliced to start with and I made tiny bits out of it ... will cut back on that too next time. It was a good lesson for me, as with most her recipes. In the end the huge flavors came through and we loved it!

Delicious !

I also needed 3/4 c cream to make the dough moist and 14-15 minutes in the oven for 8 ! Other than those adjustments, the flavors of rosemary, ham and orange are WONDERFUL...pleases the folks who like the "sweets" AND those that prefer the "savory".

These scones were a big hit at a lunch I recently hosted. Our grocer does not carry the Jiffy brand biscuit mix, so I tried the Bisquick version (comes in a plastic bag -- not the baking mix). I used 3/4 cup of cream based on other reviews and mine were moist. They did need close to 15 min. in the oven. P.S. The kids liked them, too!

Rosemary and Ham Scones

These scones are the most fragrant and delicious mouthfuls I have ever tasted. They are even better with whipped cream and raspberry syrup as a dessert. The recipe was so easy to follow and make for my family brunch, and I also had enough to share at work. I even received e-mail thanking me for the most delicious scones. I think the rosemary was the trick.

Good but...

I made these using my leftover Easter ham from the Honey Baked Ham. Didn't have orange zest. Can't wait to try with fruits and other ingredients. I enjoyed this with some scallops and cheese grits with peppers and onions. Very good!

These scones are so yummy and simple to make. I did not have any ham or rosemary so I used chives and Hormel real bacon pieces that come in a bag. Other than salt I also added black pepper and some cayenne pepper. They were delicious! Everyone needs to try these; you won't find anything easier.

I love Rachael Ray, but just did not like this recipe

I made this recipe twice (a week apart) just to make sure, but both times my husband and I really did not like the texture or very chemical flavor. The scones looked beautiful, flecked with the zest, rosemary and ham, and were nice and golden. The texture was not bad, but definitely not scone like (which we both love) -- more biscuit like. But the flavor was just really meh, and just kind of chemical. :(

Great recipe but needed a few changes

These were a big hit at Christmas, however I did make a few changes. When I read the initial reviews for this recipe there was some confusion over it so I wanted to post this to help others out. 1. You do not have to use Jiffy mix. Not all groceries stores carry it (mine did not), but any mix will do. I would stay away from mixes that call for an egg if possible just to keep the recipe simpler. I used Fisher's btw. 2. Use the amount of liquid called for on the box of mix. 3. Bake at the temperature and for the time given on the box. The first three things are very important and will make the recipe a lot easier, especially for people without a lot of baking experience. I also made a few minor substitutions that weren't necessary but I'll share because they turned out so yummy. My grocery store had fresh rosemary on sale so I used that instead of dried. It also had a good price on Black Forrest Ham at the deli counter so I substituted that for Smoked Ham. I used a bit less rosemary and almost twice as much ham as the recipe called for. I used whole milk instead of cream (the directions on the mix box were for water but using dairy instead made the scones moister) simply because that is what I had on hand. I think any dairy liquid would work. This recipe as written on the website is slightly more difficult for novice bakers because it does require some tweeking. However, if you follow my directions they will be much easier and so delicious.

Easy and tastey

Great tip using the biscuit mix to make the scones. For a recipe that took only 3 minutes to make it was very good. Instead of a savory scone I added blueberries, orange zest and nutmeg. I recommend this highly if you want something quick and tastey for breakfast.
