First of all, I thought the recipe was great. The chicken rolling did take a bit of time, but it was worth it. Second-Vicki-your post made me sad. You mentioned nothing about your own reactions to the dish because you seem so concerned about pleasing your husband. Tell him to cook his own dinner if he didn't like it.

We saw this dish on the show the week before New Years and decided to make it for our New Years celebration. It is awesome. Great blend of stuffing and chicken without the carbs and the sauce is yummy! Great one!

It was tasty, but the lemon was too overpowering. It didn't stay together in the pan and all the filling fell out (there has to be an easier way, maybe a 9 by 13 pan). I would also omit the sauce. It was way to strong and a little went a long way.

The richness of the Golgonzola cheese is balanced perfectly by the intensity of the lemon juice. Delicous and easy to make. I wish it wasn't so messy but I think I could do it much better a 2nd time through.

I read other people's reviews and added more toothpicks. This worked out great for me. Juicy, tasty. I loved it and so did my company. I used mozzerella instead of gorgonzola. It was still great.

I thought this was great, the amount of filling can accomodate more than two pieces of chicken unless you prefer to have them overstuffed (like I do). My friend and I have vowed to utilize this topping for more than just chicken because we love it so much! Good job Food Network.

Cook and prep time combined places this dishes total time at 1.5-2 hrs. Which isn't so bad if it is worth it in the end. Well, it was not. The flavors do not mesh well together and the "Lemony Sauce" is way too strong for this dish. Avoid this one... like the plague.

I made this delicious chicken recipe for my family and they LOVED it.This dish had soooomuch flavor. Usually my kids turn up their noses at spinach but they ate everything on their plate and then asked for more chicken and spinach. I did use frozen spinach due to time restraints and it still turned out great. Thanks for introducing a very healthy yet flavorful dish...YUM!!

On the show, the chicken was transferred from the pan to to oven. The recipe doesn't mention that though. It takes longer to cook in the oven, but it tastes better that way

I've never made stuffed chicken breasts before, and I'm glad I found this very tasty recipe! Instead of pounding & rolling the chicken, I cut pockets into the breasts and put the stuffing in those.

My husband and I made this entree for a dinner party last night -- our guests all LOVED it! People oohed and aahed at the scent of the sauce and chicken as we were cooking. I thought the crumbled bacon in particular added a nice flavor and texture inside the chicken.

This was great and my wife and I instantly added it to our recipes to serve for dinner parties. I substituted a smoked provalone for the gorganzola (not available at our small market) and it really brought out the bacon flavor in the stuffing. Be careful and take your time on the sauce - let it cook way down and a little will go a long way.

I should have listened to all the comments on how difficult this recipe is. I consider myself a pretty good cook, but this was considerably difficult and sloppy. Who ever can get it sealed with one toothpick my hat's off to you! Good luck you'll need it.

All in all, this was a pretty good meal. I cut out the bacon. I also think there is a bit too much lemon in the sauce for my taste. Overall a great idea though. With a slight adjustment this will certainly be a repeat for me.

I made this dish before the spinach epidemic. Thank Goodness! It was fabolous. I was looking for way to upgrade chicken breast and this worked like a charm. My very particular family was very pleased with this new meal. Though I did prepare the dijon sauce, we really didn't use it, because the chichken had such great flavor all on it's own.

I made this and my husband and I really loved it. 1 day I was buying ingredients to make it and the store was out of Ricotta Cheese. The deli manager sugessted a Feta cheese with tomato and Basil and said just not to use as much. I followed his advice and it worked great.

I used the basic idea of the receipe but with a twist. I omitted the Gorgonzola (because I didn't know how it tasted and didn't have any on hand) and added some extra ricotta. I'm still a bit confused on the proper way to stuff and fold the chicken breats but I managed to get them together. After I cooked the receipe, I used a tomato basil sauce (from Tyler Florence) instead of the lemony white wine sauce and it tasted delicious. I'll be making this receipe again soon!

I was a little worried to make this after reading the reviews. I pounded the chicken as much as possible and then only put a little stuffing in. I rolled it and placed the side that had some openings up in the pan. By the time I flipped it, I think the egg cooked enough to hold the mixture together. It didn't leak too much. Just a shame, because you can't used a decent amount of filling and it was very tasty. Mine also came out a little dry, but that's the cook not the recipe.

I made this recipe the other day and it was 'okay', the wine sauce came out a little to mustardy for my taste. The filling was good. However I did do a little altercation I dredge the chicken in flour (mixed with adobo seasoning) and instead of beating & wrapping the chicken I just cut a little and made a pocket in the thickest part of the breast and stuffed it that way. It seemed to have worked. Will I do this recipe again? Yes, but I will most definitely change the wine sauce.

This was pretty easy, but i did take a few shortcuts because i didnt have everything i needed. I didnt have any homemade chicken stock, so i took a chicken bullion cube and boiled it in some water to make a chicken broth... i would say if you do this dont add salt to the sauce because the chicken bullion is salty enough. also i lucked out because the breasts i bought came packaged in a rolled fashion, so it was pretty easy to put in the stuffing. also, for the stuffing, I wouldnt add salt to that either as the bacon gives off plenty of salt. all in all pretty easy, very tasty.

I made this recipe for my wedding and although my husband and I enjoyed the blue cheese, we thought it was a little overpowering and decided to used a ramono instead. It turned out equally delicious. Our guests loved it too. I used butcher's twine rather than toothpicks, which held the chicken together much better. The twine also made a good marker for cutting the chicken into coins. This is a challenging recipe but well worth it.

Although the end product tasted great, it was quite messy and took a lot of innovation to get there. Had a really hard time getting the chicken around the stuffing and keeping everything inside. Not sure I would make it for a party b/c the end product definitely looked misshaped.

Delicious stuffing, especially when scraped off the bottom of the pan. It completely fell apart, but the chicken was thin enough to cook thoroughly. I'd try it again; probably just takes practice. Don't present to guests without trying it out first!!

Made this for dinner last night. Husband LOVED it and he usually likes something simpler, no sauce or alot of seasoning. Used mozzarella chesse in the stuffing b/c I didn't have Gorgonzola, which DH would have loved. Will use leftover stuffing for pasta shells since the recipe makes quite a lot. Frozen chopped spinach thawed and drained well works fine. Sauce was excellent! Would use that on fish, grilled chicken,etc. Make the rolls ahead and chill in frig as one reviewer suggested. Sear on all sides about 10 mins. total, then sauce.

Wonderful dish. Makes me feel like a chef as I am preparing. The chicken breasts really need to be flattened out in order to provide enough room to roll up all the ricotta mixture. I actually substituted the gorganzola for goat cheese since it was all I had on hand, but it tastes terrific! Thanks Giada!!

This was the best stuffed chicken ever. I had some problem rolling the chicken but with lots of toothpicks it came out fantastic. I'm sure i will get better at it over time. Actually I think I used about 4 toothpicks per chicken. I made a spinach risotto and a nice spinach salad. Everyone raved.

Its pretty difficult to roll the chicken, I think this was due to my choice in breasts, as mine were rather narrow. Several things need changing though: 1) no egg in stuffing, the stuffing is too runny to roll up, otherwise 2) half a lemon, otherwise the sauce is overpowered 3) Use butchers twine instead of toothpics, it holds the rolls together better, and you aren't picking them out of your teeth while you are eating. I also let my rolls rest in the fridge for about 10 minutes, as the sauce was very moist after heating.

This is a tasty dish but I found that it works better with the following changes. Use a few toothpicks to seal each breast shut. Instead of pan-frying, coat the stuffed chicken breasts in bread crumbs and bake in a 400degF oven for 45 minutes. Sauce is optional. If you do make it, use 2 tbsp of lemon juice instead of a whole lemon.

I made this for my family and my mom adored it. Gorgonzola isn't my favorite cheese, and the sauce was a little strong flavored for me, but it was definitely a hit with her, and I had a lot of fun making it.

I've made this recipe a few times now and everyone who's tried it says it's unbelievable!!!!! The only thing I changed with the recipe was instead of cooking it in a skillet, I baked it in the oven drenched in chicken broth. Also, instead of using the white wine, I substitued it with chicken broth. I also use more bacon to enhance flavor. This recipe is easy to make and isn't time consuming. I enjoy making this often and encourage everyone to try it too. Thank you food network.

Creating the stuffed chicken so that it doesn't leak is a difficult chore, but letting it leak some doesn't hurt. It just results in a chicken that isn't as pretty for presentation to guests. Also, I would double the wine and chicken stock for the sauce, because by the time it reduces to a sauce consistency and you add the other components it ends up tasting more like mustard than anything.

This dish is really impressive for guests and tastes incredible. I used half of the lemon and mustard for the sauce because the whole amount was too tart for my liking. This dish is really wonderful. I served it at a dinner party and everyone raved about it. It takes quite a few steps though so I don't think its easy. Some of the cheese does fall out of the chicken but if you use enough toothpicks the majority stays in.

Left over with way too much filling. Chicken fell open in pan and filling came out. Sauce tastes like bile. Very disappointing. Took a lot longer than 30 minutes. Cooking bacon. Then cooking spinach. Then Cooking sauce. Then finally preparing chicken. Then put the chicken in pan and it falls apart! What Do I Do Now? Make Chicken Lasagna? Started at 4:00 Just finished at 6:00 p.m.

Instead of making the sauce recipe, I used 1/2 lemon, 2 tbsp dijon mustard and 2 tbsp honey for a dipping sauce. I eliminated the lemon in the stuffing to avoid too much lemon. I loved the original recipe but made it a second time with a different twist.

Like some of the others, I had a hard time rolling the stuffing into the chicken. I believe I pounded the chicken too much. So I rolled up the breasts on each side to make a gulley & fried them in just a little of the bacon grease. Then I mounded the stuffing in the middle and put the lid on the pan to cook the stuffing. It was excellent!! My husband and I loved it with the sauce. Even good the next night!

I had to do a little "creative" arranging for this dish because I could not get the chicken to roll right, but the taste was FANTASTIC!!! I had some of the stuffing left over so I served it as a dip with crackers while the chicken cooked.

I shopped for all the ingredients-- which took some time as Trader Joe's was nearly out of everything I needed. Rolling the chicken was not as easy as I thought it would be, but in the end everything turned out great & delicious! It's so great to have good food to enjoy, even on a low carb diet!

It wasn't as bad as y'all made it out to be. The only thing was that if you do bake it in the oven for 35 min at 350, make sure you baste it or cover it with foil cuz it comes out dry. I also found that if you roll it and then try to saute it, the inside doesn't cook, so I just slit the middle and stuffed it that way so it was easier to cook.

The blends of flavors in this dish make it so delicious. After making it for the two of us, I made it for a dinner party of six, and heard over and over again..."This is really good." This dish is becoming a favorite of mine for entertaining. To reduce last minute cooking on the stove, I place the browned breasts in a baking dish and bake for 20 minutes @ 375 degrees. Only problem is that the prep becomes messy when the chees is too loose.

I found this recipe much more difficult to prepare then I originally hoped. The chicken was still raw when I cut it open and I even added about a minute of extra cooking time to each side of the rolls. The sauce was good and I will use it again for other recipes, but this recipe turned into tenderized chicken breast with a ricotta/spinach/ gorganzola topping. Not so easy.

We thought this was very flavorful. Instead of pouring the lemon sauce over the chicken at the end ( never did get it to thicken into a sauce consistency) I put some of the sauce in the pan I while I was cooking the chicken. It helped tame the overly lemony (and I lOVE lemons) taste while adding flavor to the chicken. I found that tying the chicken with that cooking string helped keep all the contents in and I loaded the chicken with the stuffing. This definitely took more than 30 minutes, more like an hour but was worth it!

I used two chicken breasts or 4 halves, which I thought was double the amt, so I doubled everthing for the stuffing and sauce. I also did not pound/thin out the chicken enough I think, so the stuffing was falling out, I could not really roll them, or keep them rolled. There was too much oil in the pan. I want to try again and not double the ingredients for 4 half breasts and pound them thinner.

This was an incredibly easy and delicious recipe, very impressed. It wasn't time consuming and that gave you more time to enjoy it. Tip - I noticed most of you said you have problems pounding the chicken flat enough - Tyson and Perdue sell Thin and Easy Chicken Breasts. They are already sliced thin for sandwiches. They roll up great and fry easier and quicker than using regular sized chicken breasts. You can find them in the regular chicken selection in the meat section of the store.

This was such a great recipe and came out SOOO well. I cooked this for my anniversary and my boyfriend loved it! I had a little problem getting the chicken thin enough and getting all the stuffing inside but it was still good! If you can get chicken that is already pounded thin, that will help alot.

I told my husband when he left for work that tonight I had a special recipe and he was going to be treated like a King. Of all the recipes I have tried from the Network and other sources he has never reacted as negatively as he did to this one. Even though I doubled the sauce and cut the lemon in half it still overwelmed the dish. Every ingredient lost it's identity to the lemon. He wouldn't finish his meal and we are talking about a man who always cleans his plate. I am just fortunate that I made him a nice shrimp coctail as an appetizer and had enough wine on hand to enable him to forget about that awful meal.

I totally understand everyone's comment about stuffing hard to keep in the chicken. I used a ton of toothpicks and I added 2x more baby spinach to make the stuffing more solid. Half of the spinach I put in was uncooked. This seemed to do the trick. After all was done and I cut it - it plated beautifully. I kept the sauce on the side because it was strong but nice. Loved this recipe.

I simply love this recipe! I admit the pounding, stuffing and toothpicking sounds a little easier than it is but it is all worth it! I also agree with other reviews that mention too much stuffing/filling but I simply buy more than 4 chicken breasts. I have made this for a very picky friend who was suitably impressed! I would eat the sauce on everything! It really adds a great tang to this dish. It also freezes extremely well. I don't care for blue cheese so I use mozzarella.

The stuffing was way to hard to have the chicken breast wrapped around it. At first I didn't think the chicken was pounded down enough, then I pounded a little bit more because the chicken wasn't wrapping, and the chicken fell apart. i like the idea of this dish because it incorporates many of my favorite ingredients, but it just wasn't put together well. my chicken ended up dry, the stuffing wouldn't fit in without spilling all over, and the sauce was way too lemony.

This recipe is relatively easy to make and tastes good. The only issues I had weas with the sauce, which seemed a bit sour. If you don't like sour, you may want to cut back on the amount of lemon that you use. The stuffing for the chicken is very good and you can make enough of the stuffing to fill as many chicken breasts as needed.

It was not that difficult to make but the sauce is too lemony and it overpowers the taste of the chicken. If you love the taste of lemons you will like it. Otherwise, use less lemon juice or don't use the sauce at all.

Really delicious, and fairly easy if you aren't afraid to pound the meat - I found that a meat mallet is the way to go!! The sauce was delightful and everyone at dinner just raved at the wonderful combination of flavors. You do have to like lemon, or tone that down just a bit, if not!! It was a winner!! Remember to roll carefully and make sure the filling is in the well pounded chicken!! I have even dipped the rolled chicken in a bread crumb mixture and lightly browned in olive oil, then baked, adding even more flavor and yes, a few more carbs!!

I made the recipe a little more kid friendly by coating the chicken in bread crumbs and using fontina instead of gorgonzolla. I didn't think the recipe was as messy as others have said. Kids and husband flipped over it. I'll definitely make it again. But cutting the chicken into mediallions? I thought that was unrealistic and just served them whole.

The chicken was a little bit difficult to pound flat enough to work with so make sure you use an appropriate sized chicken(we used a fryer). Overall was very good, the tangy wine sauce complimented the stuffing well but I was unable to really appreciate flavor of the stuffing. I would recommend this for a night when you and your partner want to spend some time in the kitchen together, it's more fun that way!
