I love this dish and I do this recipe at least twice a month. My husband is not a huge salmon fan because of its smell but the mustard glaze flavor camuflaged the real salmon flavor which is fantastic and he now loves it!

Easy and delicious but a bit mustard-heavy...I cut my sauce with a little bit of reduced fat mayo and found that it helped with the overbearing mustard taste. I also added some crushed green peppercorns to the sauce, which really added some pizzaz. Fast, easy and healthy - I would recommend!

I made this for 6 of my girlfriends and everyone raved! It is super easy with tons of flavor. I served it with parmesean rissoto and a salad and we just loved it! I have also substituted chicken stock for the white wine if I don't have the wine (or if we are having a bottle of red with dinner). You will make this one over and over!

We used both salmon and Mahi Mahi and loved it with both. The mustard was not overwhelming at all. I halved the recipe because I was only making two servings but will make the full sauce for 2 servings in the future.

Not a very accurate recipe. I did the exact times that it called for and my salmon came out completely undercooked. The herb mustard glaze was way too strong for the light salmon, it overpowered it. There might as well have been no salmon. I'm a little disappointed, Giada usually has better recipes

The mustard sauce adds tremendous flavor with minimal effort. I used chicken broth instead of wine. I also needed to cook my salmon a little longer than Giada's suggested times, so next time I'll wait a little longer to put the mustard sauce on. Tasted wonderful!

I made this salmon because I wanted a healthy dinner that still had flavor. This recipe is great! The salmon was really moist, and the mustard was a great topping...not too overpowering. The only thing I left out was the rosemary, because I hate it. Very easy to make!

I made this for the second time tonight, and it was extremely well received by everyone in our house, including my husband, who normally hates salmon, and my visiting parents. I did make a couple of changes to the original recipe, which helped quite a bit. First of all, I only used one tablespoon of whole grain mustard, rather than adding the second one to the blended mixture. Secondly, I added about 1/4 teaspoon of lemon juice to the mixture. This dish was extremely easy to make and is definitely a keeper!

This dish truly is as easy as it says. The salmon was tender & juicy & hte mustard glaze was delicious. i did not use all of the mustard glaze because I felt it would be too overpowering. I also cooked it a little longer before putting the glaze on to prevent it from burning. Absolutely Delicious!! & good for you!!

I bought my Salmon from a high-quality fish market and it made all the difference. It was like butter! I follow the recipe to a T, but then I add about 1/4 cup of crushed pecans to the top and broil it for another minute. It was delicios and nutty and had a crunchy crust. I serve this recipe when I want to impress and it always gets rave reviews!

The mustard sauce with the salmon was the perfect combination. I didn't have dijon mustard so I needed up using spicy brown mustard. It worked fine (it made it a little more salty then if I had used the Dijon) I would absolutely make this again!

I thought this was soo good. There were a couple changes i made...some people complained about the sauce tasting too strongly of mustard.. instead of adding 2 cloves of garlic i added 4 (didnt give it too strong of a garlic flavor) and i followed another reviews directions... cooked it on the stove over medium high heat for a 2-3 mins and then put it in the oven for 10 mins at 350, then i broiled it for a min (keep an eye on it so it does not burn!) all in all i liked it a lot and will make it in the future.

This was quick and easy to make. Be sure that your salmon is far enough away from the flames in the broiler so it doesn't burn. I used a thin layer of the glaze so to not overpower the fish and then added some panko bread crumbs. It came out perfect!

The flavor of the herb mustard glaze was nice, but it burned quickly in the broiler, while the salmon was still very rare. I would recommend using thin cuts of fish and broiling as low as possible in the oven.

I really do not like the taste of salmon. I have tried it in many different places/restaurants etc...However, this mustard sauce is so flavorful that it just makes the fish taste so much better. It brings out the flavor of the salmon and it is now my new favorite receipe for salmon. I'm sure the sauce will taste just as good on other kinds of fish as well. I was keeping my fingers crossed on this dish though and turned out to be just as I thought it would be WONDERFUL. I will be making this one over and over again. This is the only way I eat my salmon now. My husband is not the biggest dijon fan, so he thought it was a bit rich. I, however, cannot get enough of it. Grey Poupon makes a dijon mustard called "Mild and Creamy" and I have used just that in this dish and left the whole grain mustard out. It did seem to be a little milder and still delicious. I have also used dried herbs in this simply because I was out of fresh ones. It was good as well, just make sure not to use too much! My favorite thing to serve with this is Jamie Deen's couscous recipe. It was on Paula's Family Cookoff show. Definitely try this!

I'm all about healthy, simple and tastey. And, boy did this fit the bill! HOWEVER, I made it a bit simpler and more convenient to what I had on hand. First, I used dried thyme and rosemary--yup, call me traitor but it worked. Just needed to reduce those by 1/3. AND (to add insult to injury), I skipped the mini food processor and just mashed it in a bowl. Let the marinade topping sit for 10-15 minutes to relax, 'ya dig?

I've always made salmon with dill but this recipe has changed my prepoaration of salmon. Since I'm on WW I did substitute white wine vinegar for olive oil. I did use dried herbs instead of the fresh and the dish was delicious. I also mixed it all in a bowl vs the food processor. Thanks Giada for a new taste of salmon.

I followed the recipe closely and was just a little disappointed. Maybe my broiler was too hot but the "caramelization" more resembled burned and the mustard sauce, while delicious, completely overwhelmed the fish. It was good, but I'd say, not worth the effort. My recommendation would be to not put the fish too close to the broiler and be sparing with the sauce.

I like this-esp how easy and healthy it is. But, I held of on the 5 star b/c it was missing something, I thought. Next time I make this, I'll top it with some toasted almonds or pine nuts. Also, this is a very rich piece of fish-don't make too much! Still, a very good and simple dish.

I was a bit hesitant to make this at first since I usually like my salmon with just a bit of lemon, but I'm glad I did! The flavors were amazing and did not overpower the salmon at all. It is a delicate fish and needs to be cook only until it is opaque, about 10 minute each side depending on the size. Always have your fish-monger cut the size for you so you get filets which will cook evenly. Five big stars for this recipe!

I really liked this. We're trying to slim down, so it's nice to find healthy recipes that are still packed with flavor. This was so easy and quick to prepare too. Plus, there's no need for a cutting board, and the pan gets covered in foil, so dishes are really a snap!

This Salmon dish was easy and very tasty! I've made it several times now. I was getting bored with 2 salmon dishes I've always made (grilled salmon and stovetop smoked rosemary & dill salmon). This is a very tasty salmon recipe that is easy to prepare and is great for everyday and dinner guests. The only thing is that it takes me much longer to broil it so that it's cooked all the way through and that makes a challenge not to burn the mustard or dry out the outer layer of the fish.

Giada uses whole grain mustard but I could not find those exact words on any mustard jar at my grocer store so I bought Stone Ground Mustard and I think it's probably the same thing and boy, did it ever make the recipe! Do yourself a favor and don't leave it out of the recipe. My kids, usually picky eaters when it comes to sauces, absolutely devoured this salmon!!

What a great recipe for a quick, easy, healthy, and delicious dinner. My only advice is to watch the time it is under the broiler so it doesn't get too dark. Mine started to brown up very quickly. Perhaps I will put the broiler on "low" next time and really watch how long it's in there. This one is ready in a jiff!

I loved this dish from the moment I saw it on the show. I had planned on making it for my in laws but did not get the opportunity to do so. I continued to save the recipe for future use. Add some wine & jazz music and you're set! I highly suggest this dish for a nice dinner at home. It isn't heavy, yet it is so full of flavor that you don't feel like there's something missing. What is best about it is the aromatic herbs with the mustards, when they cook they make the salmon taste like a heavenly delight! (plus its not that hard to make) Buon Appetito!

this was super simple and so delicious... my boyfriend (who generally dislikes salmon) even gave it 2 thumbs up and said he'd eat it again anytime. substituted dried rosemary and thyme since i didn't have fresh, and also changed the cooking method since i tend to burn things under the broiler (i started the salmon in an ovenproof pan on the stove for 3 minutes and then put the pan into a 350 degree oven for 10 minutes -- came out moist and flaky).

This is something I would expect at a black tie wedding dinner... I just whipped this up for my husband and I for a quick dinner, and he thought is was AMAZING.. I only prepared two fillets, so there was a little more glaze on each piece... It was sooooooo good... I just served it with a little belgian endive salad, it deserved so much more! This has to be the easiest and tastiest dish that I have tried from the Food Network recipe book. The salmon was moist, tender and the "glaze" had the perfect amount of seasoning (It did not overbear the dish.). I will definitely try more of Giada's recipes because they are easy to follow and more mediterranean in style. Thus, her recipes tend to be less complicated and less fattening than most cooks on the channel. My husband was in heaven while eating this dish. The only tip I would give is that if you like your Salmon JUST cooked through, then broil it a couple of minuted longer.

Made w/ fresh wild alaskan king salmon. It was a bit overpowering for such good fish, but still good. Cooking time was perfect. So moist and just starting to flake. I had young rosemary so I didn't chop it before putting in food processor and ended up with a fairly strong rosemary taste. Paired w/ Jurancon wine. Yum.
