A novel use of barley 10/05/2005 at 02:21pm User: JOANNE from Shirley, NY User Rating: Only barley only in winter-hearty soups, this was a nice, innovative way to put barley back on the table year round. My husband made a point sev'l times of stating his approval of this recipe. Two cups of liquid was too little to cook it in though; I had to add another 1/2 cup broth. Also, as much as I like the taste of lemon, it was too tart; perhaps it was a recipe error using a 1/2 cup of lemon juice? I will make this again but will use a good vinaigrette dressing instead. If you like barley, it's worth a try. I think I used a little extra lemon and it was just great. The barley had a great texture, it was a real treat. Be prepared: unhealthy people don't usually eat it. However, those who are tired of mayonaise, pasta, and bulky side dishes at gatherings are grateful for the change of pace! I cut the parsley in half and added fresh mint to equal the 2/3 cup and a finely chopped clove of garlic. So I added just a little better, I sprinkled a touch of feta cheese on top (looks nice, and adds a lot of flavor), and added garbanzo beans to the mix for protein. Then, it can be eaten as a convenient, take-to-work, one-dish meal that really gives me a lot of energy for the afternoon. I also don't like tomatoes, so I substituted a whole avocado, cut up into pieces, which was really good. |
