Don't Salt

Eliminate using the House Seasoning till the very end when the beans have cooked and softened. The salt in the House Seasoning will keep the beans from becoming soft. Did not know this before, but was told by a few "bean makers" and did notice that the beans were not softening when I used the house seasoning...now I know!

Thank You!!!

The smell of the oregano was all wrong. Pinto beans should not have oregano in them. They took 8 hours to cook and not the 5 mentioned in the receipe. I must agree that the house seasoning is too salty. I will try them again, without oregano and the my own version of the house seasoning.

Try My Trick

User: Janine from Phelan, CA    User Rating:
This is a good slow cooked basic bean recipe and is how I always make my beans with a couple of tweaks. I add some chicken boullion flakes to the cooking water and it adds just the right amount of flavor. If you like your beans spicy which we do I add a couple of dried chile pods. I also put in a lot of fresh garlic. I cook my beans in the crock pot on high in the morning and turn to low in the afternoon and this seems to render some good tender beans.

This is a wonderful bean recipe, easy to make, good hot (or cold!). The beans held their shape, but oh, so creamy, just delicious. I didn't put them into the slo cooker until evening, so I cooked them on Low for 8 hours. I've cooked beans on the stove and wasn't nearly as happy with the results, plus I had to be around and tend to them. With this recipe the slo cooker does all the work. Thanks Paula ... Love ya!

when we cook our beans we just start the slow cooker when we first get up. this way you don't even have to soak the beans over night. you just need a little extra cook time. and we like to use andioulle sausage(i'm from southeast texas)this eliminates the need for all that seasoning. you get it naturally from the sausage and beans

About anonymous, that was a disturbing, review, I'm talking mean-spirited, lack of good taste. Of course, just my opinion as that review was theirs.

I didn't even realize that you could get fresh hocks, I thought they always came cured, but found out after the fact that I'd purchased the less flavorful variety. Be sure to get the smoked/cured hocks. Next, I'm not sure why Paula has you add the herbs and spices to the pot before you let it cook for 5 hours, they end up just getting lost in the cooking process. Add them 15-20 minutes before you're ready to serve to get the most out of them.

My family loved them!

My family loved this recipe! I remembered my Grandmother's pinto beans and cornbread and these were every bit as good. The beans have to soak overnight and the house seasoning was a must. I chopped the onion and made the house seasoning the night before and put everything in the crock pot before I left for work. An easy meal! I served this recipe to my in-laws and they loved it. They called the next day to get the recipe to make it for themselves because they wanted to have leftovers!

I love watching Paula's show and trying her recipes and have always enjoyed them. She's a blast! I'm originally from the South and am familiar with all manner of unusual ingredients, Southern and otherwise, but what in the heck is "Steak o'Lean"? When Googled, all that comes up is a country music video by Uncle Earl. The video is cute, but bares no reference to the product. Can anyone help solve this culinary mystery?

I followed the recipe as printed except substituted bacon for the ham hocks. I thought these were the most favorful pinto beans I have ever had. I had read the reveiws prior to making this dish, but decided to try them myself inspite of the luke warm responses. I had to reply immediately because I am completely baffled by the reveiws saying these beans were lack-luster and tasteless. When it comes to pintos, it's all in the seasonings. The House Seasoning is a tasty blend that is the perfect fit for these beans. Adding this recipe to my all time favorites!

These were just how I remember eating them as a kid on the farm! I grew up in Colorado and we ate beans a lot. These were exactly what I remember. Even my wife (poor lady is from the east coast) took a shining to them and ate two BIG bowls of beans. I added a whole Jalapeno with mine to add some more heat. I did this near the end of cooking. I also slow cooked them for 8 hrs instead of fast cooking for 5 hours. It was great.

Paula, Paula....I'm bewildered. Since you're a professional restauranteur, why do so many of your recipes from your cooking show taste BLAND? Is it the fault of the written recipe? Are you pitching to the mediocre palate? Or are you keeping your best stuff secret? If the former, please have it fixed...if either of the latter, what are these recipes for? They don't flatter you, dear Lady.

Delicious Pinto Beans

I was raised on pinto beans but had never cooked them myself. When I got a taste for them, I realized I didn't know how to cook them. Thanks to Paula, her delicious recipe helped me impress my husband with a dish he loves but that I never cooked for him during our 25 years of marriage. I followed the recipe to the tee and I think the chili powder and oregano took it over the top. It was scrumptious over white rice and a slice of ham.
