Since several said the batter was runny, I tried an experiment. First, I lightly toasted the coconut prior to mixing with the condensed milk. Then I whipped the egg white to stiff peaks. I don't know what I did wrong but they did NOT turn out nearly the same as Ina's. After folding in the egg whites, the batter was extremely runny and the minute I put them on the sheet pan, they spread out because they were so liquidy. I added tons of coconut to make the batter stiffer (knowing that they would not come out good but I did not want to waste the batter so I took a chance). The end result - I had to throw them out. I love Ina and I have tried a lot of recipes and I am surprised that this one failed. Any one knows why the batter was so runny?? When I saw Ina make these on her show, I thought they looked good and might be worth a try. Besides, they looked very easy to make (so my daughter could help me), and I had all the ingredients on hand. They were incredibly simple to mix up and toss in the oven. The baking time was right on, and they lifted off the parchment paper with no problem. I let them cool for about 20 minutes, and then tried one. And another one. And another one. I cooked mine on silpat liners and the bottoms of each macaroon burned, even though I reduced the cooking time by about 5 minutes and used an internal oven thermometer to make sure the temperature was correct. The egg whites ran out of the cookies while they baked and turned black. Also, the cookies came out quite chewy, not light and fluffy as most bakery purchased macaroons tend to be. I made one batch on normal parchment paper and the other batch on a silpat. The ones on the paper stuck on it. In Germany we only eat them at x-mas time.So, I looked up a old german x-mas cookie book, that my mom gave me. In the book it said to put a cold wet towel underneath the parchment paper for a couple of minutes and then the macaroons would come right off. I will try that next time. The only problem I had was as the cookies baked, the coconut stayed puffed in the center and some liquid pooled around it and cooked. They kind of looked like melting ice cream balls. They still tasted great, though. The next batch, I flattened before baking and that fixed the problem. I tried melting chocolate chips and coating one side of the cookies--delicious! I live in the southeast and have learned not to make this recipe on a humid or rainy day. It's easy to overbake.
