I read this recipe and knew I had to try it. The combination of the pancetta, goat cheese, and cherries was so incredible. All of the ingredients in this recipe worked so well together. This is a great recipe to make for guests however, I will be making it again for my family as well.

impressive to serve when hosting dinner party..delicous fall salad..I served for thanksgiving..instead of mixing the pancetta dressing in with the greens, I served atop the goat cheese on the greens..wonderful presentation

I served this for a Tuscan party recently. It was unspeakably delicious. Warm with tart cherries and soft tangy goat cheese and the salty, crisp pancetta - it's just perfect!

Usually, I try out recipes before serving them to dinner guests. However, based on the previous reviews, my dinner guests were my guinea pigs this weekend. I didn't put the cheese in the oven, as mine was already very soft. I just pinched pieces off, and mixed them in with the greens prior to pouring the warm dressing on. I also didn't have dried cherries, so I used dried cranberries instead. This salad was FANTASTIC! All of my guests, great cooks themselves, raved about the dish. The warm dressing melted the cheese beautifully and it was a great combination of sweet and salty. This dish will definitely be a staple in my entertaining repertoire!
