Hats off to Chef Michael Chiarello for his wonderful toasted spice rub. It is unique and full of flavor. And the "Apple Dressing" is the best home made apple sauce I've ever had! I would of never thought to use McIntosh apples, but they were tart and quick cooking and the whole dish was a winner!You don't have to have a trial run on this recipe...you can go straight to using it on company! This is a wonderful combination of flavors. We like to leave the baked apples (with the addition of cinnamon and nutmeg) as is and on the side, rather than making a sauce. The salad is very versitile. WONDERFUL!!

This rub was really yummy. I tried to grind the spices in a food processor and that didn't work, but the blender did.

I no longer comsume pork products so I made this dish with turkey chops. These were the best turkey chops ever and the apple sauce on top really gave it the PORK chop taste and feel. I appreciated this meal b/c I miss nothing more than eating bacon and PORK chops. But this worked well as a substitute. Thanks

MY famly love this recipe we had a friend over and then loved it. The pork chops were very flavorful. The house smelled heavenly. The applesauce was very easy to make, the chops and applesauce worked wonderful with great results. I will definitly be making this recipe again.

I only made the honey apple sauce (chunky). It was extremely tasty without being overly sweet. Very easy and very versatile.

I tried this tonight and my husband loved it. A great combinaion of spice and sweet.I cut the recipe to serve two and it workked out great.

I've made this recipe at least 4 times. I've never gotten my apples to "color" and I added cinnamon and nutmeg for more flavor.....its is FABULOUS! I have had many, many friends ask for the recipe!

My sister gave me a selection of Michael's spice rubs for Christmas. My husband and I liked them ALL but LOVE the toasted spice rub the most! I found the recipe here and make it up in big batches, seal in vacuum-sealer jars and use it often. I rarely cook pork chops any other way these days!

This dish can be served elegantly at a dinner party, or simply as a family dinner.....My guests loved the subtle flavor of the pork and adored the apple stuffing...this will be one of my favorites from now on...thanks!!

Unlike the previous reviewer i did the whole recipe. I reduced the amount of spice rub because you don't need that much for 4 pork chops. I wateched this series on food network and unlike the recipe micheal puts the pork chop on a mound of apple sauce and pours the sauce over that...i did it like he did it on food network. The taste was pretty good but i can't give it a 5...it wasn't that good...but the apple martini that is in this recipe with the same series is AWESOME :).

I thoroughly enjoyed this recipe. The aroma and flavors were heavenly. My kids never enjoyed a meal so much. This is a keeper
