I Should Know Better

User: Antonia from Delray Beach, FL    User Rating:
Very heavy, very bland. Made them with onion and chive cream cheese and an aggressive dose of salt and pepper. Dinner was looming near so made a last ditch effort and added bacon. An improvement, but not nearly enough to warrant making these again.

Deeeeelicious!

I tried Rachael's recipe for Thanksgiving this year, and even my mother, who hates cream cheese, absolutely loved it and swore we would never have potatoes any other way again! There was no need for any extra butter or gravy, they were absolutely perfect.

These potatoes were the hit of the night at Thanksgiving! I used the veggie cream--which really did make all the difference. Many of my guests asked for the recipe. This is definitely a keeper!

These are excellent! I usually don't like mashed (or smashed) potatoes with the skin on. (I just don't like the skins) but these were delish! My kids ate a ton and everybody asked for seconds - We'll definitely have them again. Super, duper easy!

smashing hit
11/10/2006 at 03:07pm
User: teena from quincy, IL    User Rating:
I only made 2 changes in these, I added 3 cloves of minced garlic & used 1/3 of a large onion minced (didn't have the green onions on hand) and I used soy milk instead of half & half. Ok I made 3 changes! The garlic was added because my husband likes them that way & I do too! The Yukon gold potatoes are perfect for this. Nice flavor & texture. The cream cheese adds a nice flavor without being overpowering. We'll be having these again. Thanks.

I'm not sure about the cream cheese.. It didnt add very much flavor. I usually just add butter, some cream and roasted garlic and it tastes better. They still got eaten up though and my husband liked this with the meatloaf.

User: patricia from Blue Springs, MO    User Rating:
Following this recipe--I found the scallions over ran the potatoes. I will use less next time, add butter, more milk , flavored cream cheese & possibly garlic salt. I agree with the previous reviewers to these additions for more balanced flavor. Great foundation and the possibilities are endless. Tish---Kansas City, MO

Great if you add a little something!

User: Anonymous    User Rating:
These were very easy to make and very good. They were also attractive with the red potato skin and the green scallions. I used plain cream cheese and thought it was a little bland, so I added some garlic salt and garlic powder, which made them yummy! My husband and 11-year old son loved them. I think I'll try a veggie-flavored cream cheese next time.

Absolutely AMAZING!!!

User: Chris from San Jose, CA    User Rating:
I am an amateur cook that took this recipe on and enjoyed incredible success with it. I took RR's advice from the show & added a vegetable enhanced cream cheese (onion & chive). My girlfriend and I were equally impressed with the results. Among the best tasting mashed potatoes we've ever had. Best believe we'll be making this recipe come Thanksgiving!

Perfect flavor

User: ACARA from SAN DIEGO, CA    User Rating:
I made these potatoes according to the recipe along with Rachel's muffin meatloaf. Tasty but the cream cheese flavor was perfectly subtle when paired with the extremely flavorful meatloaf. I used whole milk and will probably add more next time to make them more creamy. Very easy to make and will definitely be a repeat in my house!

A new addition to my mash potato making ways. If you're not crazy over cream cheese, it's okay because it's flavor is not overwhelming. I used more potatoes than suggested, so I added more cream, maybe if I had more cream cheese on hand, I would have added it too. But it's something I'm making again in the near future.

This was one of the easiest things I've ever made. I agree with a previous poster...add a little more milk. One potatoe over 2.5 lbs makes a difference! For those who miss the butter, I mixed in about 2 tbs so my hubby wouldn't add butter to it later and mess up my recipe! Now I'm ready to try it "fat free".

I saw this on TV Sunday and decided to make it as a side for a roast we had already made for a weeknight dinner. I was skeptical about the cream cheese but it was great. I left out the skins and herbs since I have a picky 3 year-old who I knew would spit those out. He ate two servings. This was so easy and tasty! I didn't even have the recipe, just did it from memory!

This was so easy and so good. I used low fat cream cheese and it was perfect! The chives put the perfect final touch. A "GUEST MEAL" side for sure!

Fantastic and Easy!

My two year-old is very picky. I tried this recipe after seeing it on t.v. & it was a huge success in my house. She ate every bite & even asked for more. Thanks.

I have made these potatoes many times and have gotten wonderful compliments on them. They are also good with a little grated parm in them.

An excellent change to potatoes

This is sooo good. I'll never make regular mashed potatoes again. I did add garlic powder and butter to the recipe
