This has been one of my favorite recipes to make since it's super easy to make and cooks really fast. They are always a hit when I have people over. I've tweaked this recipe a few times to fit my guests...try zesty breadcrumbs for an added kick!

I love meatloaf, and don't usually follow any given recipe. I'm in college, and also work, so I don't have much free time. I saw that it calls for BBQ sauce AND salsa AND grill seasoning (all favorites), and decided to try it. I had mostly ground beef, but not enough to fulfill the quantity in the recipe, and I added 2 uncooked bratwurst links, removed from their casings. It turned out wonderfully, and I immediately recommended it to my family. I can't wait to make it again!

My husband has always made the meatloaf in our house as one of his "dishes". I tried out these muffin meatloafs and they were a hit. I am now the official "meatloaf maker", and this has become a family favorite. My mother-in-law loves to take our leftovers and freeze them 2 to a bag, to take out for her meals.

I have always been a meatloaf lover, the way my Mom always made it. My husband on the other hand NEVER liked any meatloaf until I made these, he eats at least 6 of them! I make this recipe at least twice a month! It's a real comfort food, and it is so YUMMY! Thansk Rachel!

I liked the idea of individual portions so I could freeze the leftovers. However, I could do that with my own recipe. I felt that 2 TBS of grill seasoning was too much. Also, 1 cup of bread crumbs seemed a lot. If I make it again I will modify the recipe quite a bit now that I have tried it as is.

While I love the idea of this recipe, it calls for far too many veggies that produce more liquid in your meat mix than you want. When you add in an excessive amount of breadcrumbs you wind up with soggy muffins.

This recipe was great! I didn't have celery or bell peppers, so I chopped up some zucchini and carrots in my mini chopper and added those, about 1/2 a zucchini and a whole carrot, and no one even noticed! My 18 month old and 3 1/2 year old gobbled these down, and that is a feat! Thanks Rachel!

I really enjoyed this recipe, I usually don't follow recipes and I didn't follow it exactly, but it was great for me. I had never made meat loaf before but do consider my self a decent home chef. I had always thought meatloaf would be similar to what you saw on old tv shows. Like a hard brick. "Boy was I wrong" -say like Rachael. Anyways, good stuff.

What a great idea--I will never make meatloaf in a loaf pan again! This tasted great & is perfect portion control for my husband and I. We ate 2 each & froze the remaining muffins for future meals. It took about 30 minutes to cook, but my oven heat appears to be off some. I'll make this often now.

I LOVE this recipe! My family loves meatloaf, but its normally such a hassle to make unless I have lots of time. But not anymore! I made the meatloaf muffins the day after the show aired and my family loved them! And they were so fast! My husband especially loved the fact there was so many "end pieces", he loves the chewy parts and they are on every single piece of this!

I must say that this meatloaf was so good I didn't even want to share it with my boyfriend. I modified the sauce because I didn't have barbecue sauce. I used tomato sauce, worcestershire, dijon mustard and A1 cracked pepper corn sauce and I must say it was moist and delicious. Putting it into a muffin pan just put an extra special twist on a traditional recipe. Way to go Rachel.

I made these meatloaf muffins last night. They looked fabulous, smelled great while cooking, but the taste was very odd. My husband, who eats anything you serve him, didn't like the taste, either. The smokey BBQ/salsa/Worcestershire sauce was a strange flavor combination for us. On the other hand, the cream cheese potatoes were silky smooth and quite good, which I will make again.

My daughter's boyfriend said I should open up a restaurant! The recipe was excellent as written, I'm sure, but I didn't have barbecue sauce on hand, so I used ketchup mixed with the salsa. Nice topping for the meatloaves.

I was a little hesitant about the barbecue sauce and salsa; However, it made the dish!!!! My husband and I loved the flavors, and of course, they were better the next day reheated!!! I do agree with the other reviews that this really isn't a 30 minute meal, but it is very good. I will definitely make this again!!!!

I'm not usually a big Rachel fan but this recipe is fantastic. The meatloaf is moist, spicy and has that crispy crust on top that you want from a meat loaf. Just remember to spray everything because these little guys stick badly.

We made these up and had more left over than we have witha regular meatloaf. Not b/c we didn't eat (we sure did) but just b/c the recipe helps with portions, etc. It is a true 30 minute recipe (not all that I've tried are) and is great w/ a side of mashed potatoes. Don't skip the bbq sauce topping. :)

These were quite yummy but a little rich tasting. I used bullseye original BBQ sauce. Next time I will half the amount of the bbq sauce, salsa, and worseshire, and the grill seasoning. I think these are good and depending on your taste and the type of BBQ sauce you use, the quality will very. Just keep in mind that they did tend to be on the saltier side. I also let them rest a few minutes before attempting to remove them from the pan so they wouldn't break up so easily.

This is the best meatloaf recipe I have ever tried. The meatloaf muffins were extremely tasty and so moist. Fabulous idea. Loved them!!! My son (19) and daughter (28) loved them as well. I brought some to work for some of the 'girls' to try and was asked for the recipe which I gladly shared. This is a recipe I would cook for guests and not stress about it. I have made them several times already and, each time, they were perfect. Thank you for this terrific recipe.

I love meatloaf, and I have finally found a recipe that my guy likes too! I did however have to make this recipe a few times befor perfecting it. a lot of people didn't care fot the consistancy of the meatloaf. If the veggies are over processed in the food processor, you will not be successful. onions and peppers hold a lot of water, so you can also try cutting back a little. also different sala brands are more watery that others, also keeping in mind that tomatoes hold quite a bit of water, to be let out in cooking as well. bbq sauce consistancy should be factored in too! Good luck, happy cooking!

These are delicious, and great for portion control. The medallions sat in a lot of liquid in my muffin tins in the oven, but after letting them sit for five minutes before serving, the liquid was soaked right back up into the meat.

rachael, i made this recipe once. and all the muffins were gone at one sitting. This is a must have recipe for everyone. My stepson is a real picky eater, and the only way i could get him to eat any meatloaf was to add sausage..this recipe is the best. EJ had 6 muffins alone. Thanks for being such a great chef.

I am not a meatloaf fan but this recipe is great. I changed the recipe up just a little to my liking and it turned out great. It's fast, spicy and fun. My family loves the meatloaf muffin and the best thing is you can freeze the left overs as single servings and anyone can grab one out of the freezer and heat up in the microwave when ever. I had no idea how this would turn out, but I was amazed and my husband and kids liked it too. Those ingredients made a great flavor. I just picked a salsa that was ttoo spicy for me. It was easy to prep and the muffin tin made it cook even faster than the usual hour or more. This is my new meatloaf recipe. The leftovers are great and gone too.

My husband and I LOVE this recipe. I make it with ground turkey so it is a little lower in fat. Cooking the meatloaf in the muffin pan is a GREAT IDEA! It gives you more surface area that is caramelized in the oven.

This was the best meatloaf I have had or made by far. I love that they are in muffin tins- takes no time to cook, and the flavor was fantastic. It was very moist- not like a lot of other meat loafs i have had! I loved the combination of the smoky bbq sauce and the salsa. The potatoes were a hit as well- super easy and really tasty. The only thing was this did not take me 30 minutes to cook- much longer! Well worth it though. This is the meatloaf recipe I'll be using from now on!

This is truly a no-fail recipe. The market didn't have ground sirloin, so I used extra-lean ground beef. I forgot the bell pepper, and I mistakenly put the bread crumbs in the wrong bowl and had to dig some of them out of the sauce. Nonetheless, these were wonderful! The muffin I took out to test for doneness fell apart a little, so I let the others set for about 5 minutes before taking them out and they came out fine. Also great the next-day - easy to take to work for lunch.

I love the muffin tin idea, I only had a Texas sized muffin pan so it made 6 large portions instead of 12 regular. I had to increase the bake time to 30 minutes and they came out great. I have a friend who does not like veggies so I was able to portion some without the veggies and then add in for the rest. Worked perfectly, everyone was happy! Also love the BBQ/salsa sauce, nice change from the ketchup/tomato sauce combo I usually use. This recipe is a keeper!

My husband and I love these. We top them with catchup when they're done. I make them one night and then have them for lunch sandwiches the next day as well.

These were pretty good. I hate meatloaf, but wanted to try to make one to remind myself that I hate meatloaf. These were good. I loved the idea of making them muffin sized. If I make these again, I'd probably leave out the barbecue sauce. It adds a smokey flavor, and I'm not fond of smokey flavor. Regular ketchup on top might be better.

Although, this is a great recipe...I had to tweak it a little. It's okay, but the flavor leaves much to be desired, and a little dry. I changed up the recipe, and it worked better. I must say, however, this is a great beginner's recipe, to get started on!

My husband loves Mexican food and meatloaf runs a close second, so I couldn't wait to try this recipe. It was a huge hit! We both loved it. Very moist and flavorful. Our 11 month old son even enjoyed it! And the best surprise was what good sandwiches the leftovers made. I just spread BBQ sauce on each slice of bread, mushed down one meatloaf "muffin," and topped it with some lettuce. YUM-O!

I saw this episode and thought it was a great way to change up regular old meatloaf. When I tried it, they did not hold their shape as "muffins" and just crumbled out of the muffin tin onto the plates. Not as cute & pretty as on the show.

These little meatloaf muffins were great. I will definately make these again. It did take a little longer than 10 minutes prep time. The 20 minutes cooking time was correct. I suggest to use the ground sirloin as the recipe calls for. Also let the muffins rest for about 5 minutes before removing them from the pan.

Everyone in my family loves the end pieces. With Meatloaf Muffins, everyone gets what they want. I recommend Sweet Baby Rays BBQ sauce with this recipe. Also, for extra juicy meatloaf, puree half of the onions and green peppers instead of chopping them all.

I made this meal for my family tonight, and it was amazing. The mini meatloafs wre so good. At first I was a little skeptical about the salsa and the bar-b-que sauce, but boy am I glad I tried it..The only thing I did different from the recipe was use a garlic and onion cream cheese, although a little salt had to be added it was still great.....This will def be a winner for many more meals to come. The night we ate these, we were in a bit of rush, so we didn't let them cool down enough, leaving the muffins rather soggy and bland in taste. But the next as leftovers?? WOW. Soooo good. Much firmer and the flavors were developed. I do think the next time I make them, I'm going to cut back on the BBQ sauce a bit. Served them with my own recipe for low fat mashed potatoes and some green peas (which also hold up to next day consumption) and my boyfriend requested this dinner again.

I really liked this recipe however I think with a little bit of ground pork would have tasted better. Instead of breadcrumbs I put crushed sour cream onion potato chips, adds a lot of flavor for it.

I made this meal for dinner for myself and my husband and we both agreed(we have completely different taste) that this was a much to strong barbecue flavor. We much prefer the meatloafs with a tomato based flavor. The concept however was great. Using the muffin tin not only reduced my clean-up, it also made great serving sizes. I would use the concept, just not the recipe.

This was the first time I had ever made meatloaf and it was a homerun in my house. It was very easy to make (took much more than 30 minutes because I chopped everything by hand) and so, so delicious. Very moist. Instead of buying grill seasoning, I just used what I had; salt pepper and fresh garlic. Besides the bbq sauce, salsa and veggies probably provide plenty of flavor as it is. Great recipe!

These were great, but a little mushy. I love that crispy outside texture that a meatloaf should have, and then the soft texture on the inside. I think that i diced my veggies too much and they gave off too much water, which was why the meatloaf did not set up. Also, I had more than 12 muffins, I had to make a separate loaf pan with the recipe. However, all of the tastes were excellent. Just do not add any extra water into the meatloaf given off by the veggies once you food process them.

Rahter dry with no flavor. Think I would use dry onion soup to put some zip in the flavor. Also, some horseradish and would use chili sauce instead of barbeque sauce! :-)

I had to change up the ingredients just a bit... Instead of the sauce suggested, I mixed a steak sauce with some ketchup and soy sauce. I left out the celery and cooked it in a regular loaf pan for about 35-40 minutes. IT WAS DELICIOUS!
