Delish 07/14/2008 at 03:28pm User: Sandra from Palmdale, CA User Rating: I have made it several times and crave it often. We love you Rachel Ray! nice 07/06/2008 at 06:01pm User: Anonymous User Rating: My family enjoyed this dish Yummy meatloaf muffins 06/30/2008 at 05:28pm User: Anonymous User Rating: This is simple to do and the payoff is great. Very tasty and good as leftovers as well. Easy and delicious! 06/10/2008 at 12:36pm User: Beki from San Antonio, TX User Rating: This has been one of my favorite recipes to make since it's super easy to make and cooks really fast. They are always a hit when I have people over. I've tweaked this recipe a few times to fit my guests...try zesty breadcrumbs for an added kick! My husband raves about it 05/31/2008 at 12:28pm User: Anonymous User Rating: I have never used the celery, I will probably try that the next time I make it. My husband tells everyone I make the best meatloaf, cause of this recipe. It ROCKS! Fantastic - made mini loaves instead of muffins 05/19/2008 at 06:54pm User: Jolene from Beverly Hills, CA User Rating: Try this recipe using an eight slot mini loaf tin and increase the cook time by 5 minutes. Great for freezing individually! AMAZING! 04/15/2008 at 04:46pm User: Shauna from Flagstaff, AZ User Rating: I love meatloaf, and don't usually follow any given recipe. I'm in college, and also work, so I don't have much free time. I saw that it calls for BBQ sauce AND salsa AND grill seasoning (all favorites), and decided to try it. I had mostly ground beef, but not enough to fulfill the quantity in the recipe, and I added 2 uncooked bratwurst links, removed from their casings. It turned out wonderfully, and I immediately recommended it to my family. I can't wait to make it again! A Family Favorite 04/01/2008 at 05:24pm User: Kelly from Southaven, MS User Rating: My husband has always made the meatloaf in our house as one of his "dishes". I tried out these muffin meatloafs and they were a hit. I am now the official "meatloaf maker", and this has become a family favorite. My mother-in-law loves to take our leftovers and freeze them 2 to a bag, to take out for her meals. Tasty 03/22/2008 at 10:22pm User: kim from wichita falls, TX User Rating: I love the kick in this recipe nice change of pace. My 3 year old loved it as will with extra ketchup of course. We Love this Recipe 03/16/2008 at 07:52pm User: Shelley from Indianapolis, IN User Rating: I have always been a meatloaf lover, the way my Mom always made it. My husband on the other hand NEVER liked any meatloaf until I made these, he eats at least 6 of them! I make this recipe at least twice a month! It's a real comfort food, and it is so YUMMY! Thansk Rachel! best meatloaf ever 02/20/2008 at 08:12pm User: Laurie from Jonestown, PA User Rating: I have tried many recipes for meatloaf and this is my all time favorite. My family loves this and the individual portions work out great Great! 02/18/2008 at 11:26am User: Anonymous User Rating: This was the best meatloaf recipe i've ever had. Fabulous & Fast 02/17/2008 at 12:34pm User: Kristen from Philadelphia, PA User Rating: I can't say enough. My 4 yr old & I just made these and they are delicious! Very easy to make and great taste. As Rachael says "Yummo!!!" Wonderful! 02/15/2008 at 01:39pm User: Anonymous User Rating: Very tasty and falvorful. I will most def make this again. Lots of flavor 02/08/2008 at 04:52pm User: Lynn from Chester, MD User Rating: Absolutely delicious! Only downfall was having to clean the muffin tins when I was done :-( so so 02/04/2008 at 06:55pm User: Anonymous User Rating: I liked the idea of individual portions so I could freeze the leftovers. However, I could do that with my own recipe. I felt that 2 TBS of grill seasoning was too much. Also, 1 cup of bread crumbs seemed a lot. If I make it again I will modify the recipe quite a bit now that I have tried it as is. Even the hubbie loves it! 02/02/2008 at 02:30pm User: S from San Jose , CA User Rating: I couldn't ask for more! Everyone loved it. I had no complaints and they all asked for seconds! WA POW!! 02/01/2008 at 03:05pm User: Katherine from houston, TX User Rating: I made this awesome dish yesterday and mam oh man my fam. love it! I never watched rachel ray only her about her but , she sure does make it look easy and it is. I left the cleaning to my husband! YUM-O 01/30/2008 at 11:14pm User: Ursula from mcgrath, AK User Rating: So easy, so good. I used some mushrooms 'cause I didn't have green peppers on hand. I don't even like meatloaf but this was so good. I made it for my aunt who wanted meatloaf and I ended up loving it!!! Thank you for another great recipe, Rachel!!! great, easy comfort foot 01/30/2008 at 07:28pm User: Paula from Stillwater, OK User Rating: this was very easy to fix afer a hard day at work...family loved it. Better title: Soggy bottom meat muffins 01/29/2008 at 01:10pm User: Anonymous User Rating: While I love the idea of this recipe, it calls for far too many veggies that produce more liquid in your meat mix than you want. When you add in an excessive amount of breadcrumbs you wind up with soggy muffins. Yummy! 01/28/2008 at 09:41pm User: Anonymous User Rating: This recipe was great! I didn't have celery or bell peppers, so I chopped up some zucchini and carrots in my mini chopper and added those, about 1/2 a zucchini and a whole carrot, and no one even noticed! My 18 month old and 3 1/2 year old gobbled these down, and that is a feat! Thanks Rachel! 30 Minute Meals! 01/28/2008 at 09:34pm User: Stephen from Oak Creek , WI User Rating: I really enjoyed this recipe, I usually don't follow recipes and I didn't follow it exactly, but it was great for me. I had never made meat loaf before but do consider my self a decent home chef. I had always thought meatloaf would be similar to what you saw on old tv shows. Like a hard brick. "Boy was I wrong" -say like Rachael. Anyways, good stuff. We loved it! 01/27/2008 at 07:14pm User: Anonymous User Rating: What a great idea--I will never make meatloaf in a loaf pan again! This tasted great & is perfect portion control for my husband and I. We ate 2 each & froze the remaining muffins for future meals. It took about 30 minutes to cook, but my oven heat appears to be off some. I'll make this often now. Thank you for easy meatloaf! 01/27/2008 at 02:17pm User: Nicki from Bountiful, UT User Rating: I LOVE this recipe! My family loves meatloaf, but its normally such a hassle to make unless I have lots of time. But not anymore! I made the meatloaf muffins the day after the show aired and my family loved them! And they were so fast! My husband especially loved the fact there was so many "end pieces", he loves the chewy parts and they are on every single piece of this! Best meatloaf I've ever made 01/26/2008 at 12:23pm User: Donna from Columbus, OH User Rating: I must say that this meatloaf was so good I didn't even want to share it with my boyfriend. I modified the sauce because I didn't have barbecue sauce. I used tomato sauce, worcestershire, dijon mustard and A1 cracked pepper corn sauce and I must say it was moist and delicious. Putting it into a muffin pan just put an extra special twist on a traditional recipe. Way to go Rachel. Very Disappointed 01/25/2008 at 09:06am User: Beth from Shrewsbury, MA User Rating: I made these meatloaf muffins last night. They looked fabulous, smelled great while cooking, but the taste was very odd. My husband, who eats anything you serve him, didn't like the taste, either. The smokey BBQ/salsa/Worcestershire sauce was a strange flavor combination for us. On the other hand, the cream cheese potatoes were silky smooth and quite good, which I will make again. DEEEEEE-LISHHHHH 01/24/2008 at 06:41pm User: Jean from Mt. Washington, KY User Rating: I didn't have the celery, but it didn't really need it. I will definitely make again. Loved It! 01/23/2008 at 07:02pm User: Debbie from Lino Lakes, MN User Rating: My daughter's boyfriend said I should open up a restaurant! The recipe was excellent as written, I'm sure, but I didn't have barbecue sauce on hand, so I used ketchup mixed with the salsa. Nice topping for the meatloaves. Meatloaf 01/22/2008 at 11:43am User: Kimberley from Huntington Woods, MI User Rating: As a budding new cook, my 9-year old son enjoyed making and eating these individual sized meatloaf muffins! Will definitely make again. DAVES MEATLOAF MUFFIN REVIEW 01/20/2008 at 09:02pm User: david from webb city, MO User Rating: i ADDED A COUPLE CHIPOTLE PEPPERS IN ADOBO SAUCE TO THE OTHER VEGATABLES AND IT GAVE IT A NICE SUTTLE KICK. MY ENTIRE HOUSE ENJOYED THESE. yumm-o 11/23/2007 at 06:05pm User: lori from waipahu, HI User Rating: This was so good and so easy to do. I didn't have the smoky barbecue sauce so I substituted Hawaiian barbecue sauce and also made the cream cheese mashed potatoes. Definitely try this one. surprisingly good 11/17/2007 at 04:02pm User: Lori from Birmingham, AL User Rating: I was a little hesitant about the barbecue sauce and salsa; However, it made the dish!!!! My husband and I loved the flavors, and of course, they were better the next day reheated!!! I do agree with the other reviews that this really isn't a 30 minute meal, but it is very good. I will definitely make this again!!!! Excellent 11/17/2007 at 10:58am User: Kori from Vancouver, WA User Rating: I'm not usually a big Rachel fan but this recipe is fantastic. The meatloaf is moist, spicy and has that crispy crust on top that you want from a meat loaf. Just remember to spray everything because these little guys stick badly. Quick, easy, dee-lish 11/11/2007 at 07:08pm User: STEPHANIE from Erie, PA User Rating: We made these up and had more left over than we have witha regular meatloaf. Not b/c we didn't eat (we sure did) but just b/c the recipe helps with portions, etc. It is a true 30 minute recipe (not all that I've tried are) and is great w/ a side of mashed potatoes. Don't skip the bbq sauce topping. :) Fun,yummy, easy, rich 11/04/2007 at 11:27pm User: Eileen from Apple Valley, CA User Rating: These were quite yummy but a little rich tasting. I used bullseye original BBQ sauce. Next time I will half the amount of the bbq sauce, salsa, and worseshire, and the grill seasoning. I think these are good and depending on your taste and the type of BBQ sauce you use, the quality will very. Just keep in mind that they did tend to be on the saltier side. I also let them rest a few minutes before attempting to remove them from the pan so they wouldn't break up so easily. Awesome!! 11/01/2007 at 07:49pm User: Jean from Gray, ME User Rating: This is the best meatloaf recipe I have ever tried. The meatloaf muffins were extremely tasty and so moist. Fabulous idea. Loved them!!! My son (19) and daughter (28) loved them as well. I brought some to work for some of the 'girls' to try and was asked for the recipe which I gladly shared. This is a recipe I would cook for guests and not stress about it. I have made them several times already and, each time, they were perfect. Thank you for this terrific recipe. Delicious, quick, and easy! 10/29/2007 at 08:08pm User: Cheryl from Tinley Park, IL User Rating: Quick alternative to baking your traditional meatloaf. I usually skip the muffin part though & just make it as a loaf. Tastes great and easy to make 09/22/2007 at 08:36pm User: Lisa from Albany, GA User Rating: I just happened upon this recipe on foodnetwork.com. The "muffin" idea sounded different. Invited the family over and everyone loved it. They were amazed that they cooked in only 20 minutes. Definitely a repeat - from someone who has never been a meatloaf fan! no more mushy meatloaf 09/21/2007 at 11:51am User: raquel from providence , RI User Rating: I love meatloaf, and I have finally found a recipe that my guy likes too! I did however have to make this recipe a few times befor perfecting it. a lot of people didn't care fot the consistancy of the meatloaf. If the veggies are over processed in the food processor, you will not be successful. onions and peppers hold a lot of water, so you can also try cutting back a little. also different sala brands are more watery that others, also keeping in mind that tomatoes hold quite a bit of water, to be let out in cooking as well. bbq sauce consistancy should be factored in too! Good luck, happy cooking! Delicious Dinner! 08/29/2007 at 11:43am User: Anonymous User Rating: Meatloaf was so good- it stayed very moist. Also, try the cream cheese mashed potatoes on the bottom of the recipe page- to die for!!! Thanks Rach! perfectly sized and tasty 07/14/2007 at 02:10pm User: lonnie from el mirage, AZ User Rating: The muffin sized meatloaf was very good. My husband who hates meatloaf actually liked these and said he'd like me to make them again. Mine turned out a little too spicey for the kids though. Not sure why so spicey, I followed the recipe exactly. Anyway, I would recommend it! very very good 07/07/2007 at 05:49pm User: Ericka from Dubuque, IA User Rating: I tried this recipe and my husband and kids loved it. This recipe is becoming a family classic! yummo! 06/19/2007 at 07:05pm User: Cheryl from Brandon, FL User Rating: I did not use the celery or the bell pepper for this recipe and it was still full of flavor. Very Tasty 06/11/2007 at 06:24pm User: Emily from laplace, LA User Rating: Usually the word "meatloaf" sends the family running for cover. Not this recipe! My family loved the taste of the meatloaf and the kids loved that I served it to them in muffin cups. It was a great treat! My 1st Meatloaf Success! 06/10/2007 at 01:30am User: Ja'Net from Laurel, MD User Rating: I love meatloaf but I've always been really reluctant to try to make it myself. The medallions sat in a lot of liquid in my muffin tins in the oven, but after letting them sit for five minutes before serving, the liquid was soaked right back up into the meat. yum.yum 05/02/2007 at 01:08pm User: Anonymous User Rating: easy, great for small families, freeze for qicck dinner on a late worknight Best meatloaf 04/13/2007 at 06:59pm User: Chuck from Daytona Beach, FL User Rating: This version is the best tasting and easy to prepare. This is a must have recipe for everyone. My stepson is a real picky eater, and the only way i could get him to eat any meatloaf was to add sausage..this recipe is the best. EJ had 6 muffins alone. Hate Meatloaf, u wont now 03/03/2007 at 12:26pm User: Anonymous User Rating: My husband does not like meatloaf. This was a great recipe becuase it was like eating a hamburger, he enjoyed it. Making portions was very helpful when u wanted to have a quick grab to go lunch for work. Excellent meatloaf! 02/25/2007 at 01:26pm User: Erica from Beverly, MA User Rating: My husband and I LOVE this recipe. I make it with ground turkey so it is a little lower in fat. Cooking the meatloaf in the muffin pan is a GREAT IDEA! It gives you more surface area that is caramelized in the oven. Mini-meatloaf... perfect! 02/18/2007 at 03:45pm User: Anonymous User Rating: The portions for this are excellent... and you can mix and match your own toppings so everyone can have exactly what they want! I love that they are in muffin tins- takes no time to cook, and the flavor was fantastic. It was very moist- not like a lot of other meat loafs i have had! I loved the combination of the smoky bbq sauce and the salsa. The potatoes were a hit as well- super easy and really tasty. The only thing was this did not take me 30 minutes to cook- much longer! Well worth it though. This is the meatloaf recipe I'll be using from now on! Muffins to Loaf 02/16/2007 at 03:49pm User: Judi from Odenton, MD User Rating: This is a good recipe but instead of taking the time to do the muffin thing, I made it as a loaf and cooked it a little longer. Super easy! Excellent! 02/07/2007 at 09:34pm User: SARAH from Hidden Valley, CA User Rating: These are so good! My boyfriend loved them too! You're making me look like a good cook Rachael! Thanks! A No Fail Recipe! 02/07/2007 at 03:59pm User: Kim from Evanston, WY User Rating: This is truly a no-fail recipe. The market didn't have ground sirloin, so I used extra-lean ground beef. I forgot the bell pepper, and I mistakenly put the bread crumbs in the wrong bowl and had to dig some of them out of the sauce. Nonetheless, these were wonderful! The muffin I took out to test for doneness fell apart a little, so I let the others set for about 5 minutes before taking them out and they came out fine. Also great the next-day - easy to take to work for lunch. Fantastic Idea! 02/07/2007 at 09:22am User: Anonymous User Rating: I love the muffin tin idea, I only had a Texas sized muffin pan so it made 6 large portions instead of 12 regular. I had to increase the bake time to 30 minutes and they came out great. I have a friend who does not like veggies so I was able to portion some without the veggies and then add in for the rest. Worked perfectly, everyone was happy! Also love the BBQ/salsa sauce, nice change from the ketchup/tomato sauce combo I usually use. This recipe is a keeper! Big Hit with the Hubby 02/05/2007 at 03:59pm User: CorySue from Winter Haven, FL User Rating: Very easy, cooks fast and the hubby was ver happy. Great Weeknight Meatloaf (and Sandwiches) 02/03/2007 at 11:15pm User: Stacey from Kirkland, WA User Rating: My husband and I love these. We top them with catchup when they're done. I make them one night and then have them for lunch sandwiches the next day as well. The Best Meatloaf EVER! 01/27/2007 at 10:36pm User: Sheila from Golden, MT User Rating: Besides being quick cooking- 20 minutes - HELLO! these were so delicious and each one had it's own carmelized crispy outside that really made them special. They were easier to serve and looked better on the plate as well. BRAVO Rachel TOlson 01/26/2007 at 06:32pm User: Anonymous User Rating: What a great way to make meatloaf. Used venison vs. beef. Excelletn. Meat loaf for the kids 01/25/2007 at 02:54pm User: stacie from winter springs, FL User Rating: This is fun for the kids and helpful for me. They don't like plain jane meatloaf, so this lets them have fun pretending they are "muffins". My kids love to help out so this takes some of the prep off of me. I like anything that gets the kids to the table and have fun while they are eating dinner. Fantastic 01/24/2007 at 05:55pm User: Anonymous User Rating: So delicious! My picky in-laws loved the recipe. Even said it was the best meatloaf they ever had. The green beans from the episode are great and so easy also! Highly recommended. Meatloaf with Pizzazz 01/20/2007 at 09:10pm User: Anonymous User Rating: This recipe is great! Very easy, although not really "quick", my husband loved it. Our daughter Bethynnie loves to pretend she's Rachel Rae and is constantly saying YUMMO when we have this meal! THANK YOU!!!! Excellent Recipe 01/17/2007 at 08:55am User: Deanna from Winchester, KY User Rating: This is a very easy and quick recipe and it is delicious. I'm not much on 30 minute recipes because they usually don't have much flavor, but this one is a keeper. Even my husband loved it and he is not a meatloaf lover. kid pleaser 01/12/2007 at 07:05pm User: Yvette from Las Cruces, NM User Rating: And an adult pleaser, too. Shimes Sweet n Sassy 01/02/2007 at 07:10pm User: rebecca from wesley chapel, FL User Rating: Easy recipe! Tryed Shimes Sweet N Sassy Salsa as a substitute for any generic salsa. Shimes has a unique smoky flavor. Used corn bread crumbs from last nights black eyed peas. Worked great for a sweet, smokey taste. Family begged for more! Thanks RR yummy muffins! 01/01/2007 at 06:27pm User: ELIZABETH from Greenville, TX User Rating: These are juicy and flavorful, and only took 1/3 of the time that a loaf takes! I love love love this recipe! Thanks Rachel! Husbands will love this 12/11/2006 at 06:47pm User: Anonymous User Rating: My husband said the meal was out of sight and it was soooo easy. Thanks Rachel for making my home a happy one tonight. Very Tasty 12/10/2006 at 09:34am User: Anonymous User Rating: What a wonderful meatloaf this is. I am not a fan of meatloaf for starters, but then I tried these and now I'm hooked!! Don't miss out on this one. Give them a try!!! Delicious 12/02/2006 at 06:24pm User: Anonymous User Rating: These were pretty good. I hate meatloaf, but wanted to try to make one to remind myself that I hate meatloaf. These were good. I loved the idea of making them muffin sized. If I make these again, I'd probably leave out the barbecue sauce. It adds a smokey flavor, and I'm not fond of smokey flavor. Regular ketchup on top might be better. Big Hit 12/01/2006 at 10:16pm User: stefani from Florissant, MO User Rating: Very simple and simplely delicious. It was a big hit with the family. EXCELLENT DINNER 11/19/2006 at 04:11pm User: Anonymous User Rating: That was fabolous!! My family enjoyed every bite of the meatloaf muffins with sauce. It didn't take that long to make. The smashed potatoes were great also. Thank you Rachel!! Tamala Bond Naples, Italy Gina 11/13/2006 at 03:47pm User: Anonymous User Rating: The whole family and our guest loved this recipe! Really moist and flavorful! A keeper for sure! Awesome Meatloaf 11/13/2006 at 02:55pm User: Darlene from Fredericksburg, VA User Rating: This is my familys favorite dinner. I am not crazy for meatloaf but this recipe changed my mind. I will have to agree with other comments on this recipe taking longer than 30 minutes to prepare but it is well worth it. Meatloaf Muffins - Mmmmm Good! 11/12/2006 at 03:46pm User: Billye from Blanchard, OK User Rating: These muffins are wonderful. They are easy to fix and they get done much quicker than a meat "loaf." Try them. You'll think they're great. Delicious, Fun and Easy 11/12/2006 at 03:19pm User: Pamela from Urbana, IL User Rating: I made these meatloaf muffins with my kids last night for dinner. They were delicious, the kids had tons of fun helping and they are so easy to put together. We also made the smashed potatoes suggested and had a great fun night together! loved it 11/11/2006 at 02:37pm User: LaToya from Washington, DC User Rating: When I first saw the recipe on the show it was a must that I try it. Great Dinner 11/10/2006 at 08:28pm User: Anita from Newport Beach, CA User Rating: I made this along with the cream cheese smashed potatoes and the green beans with bacon. It was excellent. I also make this ahead of time and take it on our boat. All I have to do is warm it up. Awesome! 11/07/2006 at 10:05pm User: Anonymous User Rating: I've never really cared for meatloaf until I tried this recipe! It is fantastic and a big hit with my husband and kids...thanks Rachel Ray! Yummy!! 11/07/2006 at 06:34pm User: Anonymous User Rating: My husband loved this dish. I just made it in a loaf pan instead of a muffin tin. I also used a hot & spicy BBQ sauce. It was easy and delicious!! Delicious! 11/07/2006 at 09:50am User: Caldwell from Clayton, MO User Rating: I'm not usually a meatloaf fan, but these were fantastic. Another great one from Rachael! I'd love to know how to do the recipe as an actual loaf, though... the muffins tend to fall apart a little bit (which wasn't a big deal... they were still wonderful.) I will absolutely make this again! So yummy easy! 11/06/2006 at 04:54pm User: Anonymous User Rating: This recipe is perfect for my family of four, our boys loved that they had their own loaves and were able to help prepare it. I loved how easy and yummy it was. 1st Meatloaf 11/01/2006 at 11:48pm User: Anonymous User Rating: Delicious and very easy! Easy, cute, bland 10/31/2006 at 08:20am User: adriane from spring, TX User Rating: Although, this is a great recipe...I had to tweak it a little. It's okay, but the flavor leaves much to be desired, and a little dry. I changed up the recipe, and it worked better. I must say, however, this is a great beginner's recipe, to get started on! Made great sandwiches too! 10/28/2006 at 12:01am User: Katie from Canby, OR User Rating: My husband loves Mexican food and meatloaf runs a close second, so I couldn't wait to try this recipe. It was a huge hit! We both loved it. Very moist and flavorful. Our 11 month old son even enjoyed it! And the best surprise was what good sandwiches the leftovers made. I just spread BBQ sauce on each slice of bread, mushed down one meatloaf "muffin," and topped it with some lettuce. YUM-O! super tastey 10/26/2006 at 03:43pm User: Shannopn from hemet, CA User Rating: Very moist, use lean meat. Excellent flavor, good size portions for kids Yum! 10/26/2006 at 11:17am User: Anonymous User Rating: Easy, messy, fun! Fantastic! 10/25/2006 at 10:25am User: Anonymous User Rating: I thought this recipe was wonderful. It turned out perfectly. I love it! Don't hesitate to make this! Just make sure you use ground sirloin!! Crumbly meatloaf muffins 10/24/2006 at 03:58pm User: Anonymous User Rating: I saw this episode and thought it was a great way to change up regular old meatloaf. When I tried it, they did not hold their shape as "muffins" and just crumbled out of the muffin tin onto the plates. Not as cute & pretty as on the show. Quick !! 10/23/2006 at 01:20pm User: Tramere from fayetteville, NC User Rating: Meatloaf usually takes rather long to cook but when i saw the show i was amazed esp. by them being cook in muffin pan. Not only were they quick as well as easy but pleasing to the eye. Yum-yum-yum-O 10/19/2006 at 03:05pm User: Sharon from Placerville, CA User Rating: I made this recipe with 1 lb of ground turkey and halved the other ingredients. Used Mrs. Dash and lots of onion, no salsa. Excellent! YUMMO! 10/18/2006 at 12:52pm User: Jennifer from Chagrin Falls, OH User Rating: I made this dish for my family last night with the smashed cream cheese redskin potatoes, and everyone raved about it. The flavor was great. I used original flavor Open Pit barbecue sauce, because we are not fans of the smoked flavor, and they were still excellent. Thanks once again Rachael! Great idea 10/16/2006 at 05:36pm User: Elena from Rochester, NY User Rating: Making the meatloaf in muffin tins is a great idea! My family loved the recipe too. The barbeque sauce is a nice change from catsup. Meatloaf muffins 10/16/2006 at 11:51am User: Anonymous User Rating: Great taste and pefect combination with potatoes and beans. Has become new family favorite 10/14/2006 at 10:28am User: Tammy from Omaha, NE User Rating: After years of making the same recipe, this one has become the new family favorite. My daughter, husband and best friend all gave it a five star rating. It makes something simple seem a little more extravagant. Very good! 10/13/2006 at 08:57pm User: Jessica from SA, TX User Rating: I accidentally forgot the salsa.. I may try it next time. But without the salsa it was still full of flavor and very tasty. The kids loved it. thanks! It's Lick Your Plate Good! 10/11/2006 at 01:27pm User: Gina from chicago, IL User Rating: I've made this recipe several times, and everyone loves it! I use spicy BBQ sauce, which adds a nice kick. My dad told me that I can make this dish for him anytime. It's really quite yummy. meatoaf muffins with BBQ sause 10/10/2006 at 03:38pm User: Anonymous User Rating: These little meatloaf muffins were great. I will definately make these again. It did take a little longer than 10 minutes prep time. The 20 minutes cooking time was correct. I suggest to use the ground sirloin as the recipe calls for. Also let the muffins rest for about 5 minutes before removing them from the pan. different 10/09/2006 at 04:06pm User: Amanda from Fairview Park, OH User Rating: not bad...love the muffin idea Yum. That's all I can say. 10/07/2006 at 11:44pm User: Jennifer from Crystal Lake, IL User Rating: Everyone in my family loves the end pieces. With Meatloaf Muffins, everyone gets what they want. I recommend Sweet Baby Rays BBQ sauce with this recipe. Also, for extra juicy meatloaf, puree half of the onions and green peppers instead of chopping them all. Meatloaf Muffins - Excellent and Easy 10/07/2006 at 01:33pm User: Jean from Centreville, VA User Rating: These were very easy to make and are perfect for people who live alone or for people who only cook for two...they were delicious and I was able to reheat them with some jarred spaghetti sauce for a quick and easy spaghetti and meatballs...wonderful!! Really Tasty 10/06/2006 at 08:48pm User: Ta Mia from Los Angeles, CA User Rating: I made this meal for my family tonight, and it was amazing. The mini meatloafs wre so good. At first I was a little skeptical about the salsa and the bar-b-que sauce, but boy am I glad I tried it..The only thing I did different from the recipe was use a garlic and onion cream cheese, although a little salt had to be added it was still great.....This will def be a winner for many more meals to come. Thanks Rachel Ray!! Kids love it! 10/06/2006 at 06:48pm User: Anonymous User Rating: Using RR recipes is easy and is a wonderful way to let the grandkids help out in the kitchen. They loved to have their 'own' meatloaf that they each helped to make. Eating healthier has never been easier! Thanks Rachael! EXCELLENT the next day 10/06/2006 at 10:31am User: Anonymous User Rating: The night we ate these, we were in a bit of rush, so we didn't let them cool down enough, leaving the muffins rather soggy and bland in taste. But the next as leftovers?? WOW. Soooo good. Much firmer and the flavors were developed. I do think the next time I make them, I'm going to cut back on the BBQ sauce a bit. Served them with my own recipe for low fat mashed potatoes and some green peas (which also hold up to next day consumption) and my boyfriend requested this dinner again. Good and Easy! 10/05/2006 at 10:00pm User: Janna from Greer, SC User Rating: This was a simple and tasty way to make a variation of the typical meat"loaf". Delicious! 10/05/2006 at 09:12pm User: kathy from orlando, FL User Rating: Rachel, this was so good....I cooked the meatloaf muffins, and your recipes for seared greens w/vinegar and the herbed orzo w/peas. Everything was superb! This is the first time I have ever rated any recipe(s) but everything was so outstanding, I had to give you five big stars. Thank you, Kathy C Orlando, FL awesome 10/05/2006 at 11:11am User: Anonymous User Rating: I really liked this recipe however I think with a little bit of ground pork would have tasted better. Instead of breadcrumbs I put crushed sour cream onion potato chips, adds a lot of flavor for it. meatloaf made great!! 10/04/2006 at 12:52pm User: Sharon from San Bruno, CA User Rating: This is the best meatloaf i have ever eaten, and the very best part is the time it takes to cook, i work and do not ever make meatloaf during the week as it takes to long, now i can have it when ever i want.. we love it..!!! Sharon Yumm-o!! 10/03/2006 at 11:40pm User: Anonymous User Rating: I am a huge meatloaf fan, but don't usually have the time to make one, these meatloaf muffins are perfect for those nights! They're the perfect serving size too. Yumm-o Rachael! delicioso!! 10/03/2006 at 10:11pm User: Ashley from Bayamon, PR User Rating: This was so easy to make! My 7 year old son helped me! The meat loaf is so delicious, it melts in your mouth! Everyone has to try it! I added calabaza and carrots to mine. only taste the barbecue 10/02/2006 at 08:09pm User: lois from mansfield, TX User Rating: I made this meal for dinner for myself and my husband and we both agreed(we have completely different taste) that this was a much to strong barbecue flavor. We much prefer the meatloafs with a tomato based flavor. The concept however was great. Using the muffin tin not only reduced my clean-up, it also made great serving sizes. I would use the concept, just not the recipe. Oh my goodness! 09/30/2006 at 09:21pm User: ACARA from SAN DIEGO, CA User Rating: This was the first time I had ever made meatloaf and it was a homerun in my house. It was very easy to make (took much more than 30 minutes because I chopped everything by hand) and so, so delicious. Very moist. Instead of buying grill seasoning, I just used what I had; salt pepper and fresh garlic. Besides the bbq sauce, salsa and veggies probably provide plenty of flavor as it is. Great recipe! Very Good 09/30/2006 at 04:05pm User: Jan from Mars, PA User Rating: This is a good quick recipe for dinner! I have two guys to cook for and they loved it! I will definitelymake this for them again. a little mushy 09/29/2006 at 11:49am User: Anonymous User Rating: These were great, but a little mushy. I love that crispy outside texture that a meatloaf should have, and then the soft texture on the inside. I think that i diced my veggies too much and they gave off too much water, which was why the meatloaf did not set up. Also, I had more than 12 muffins, I had to make a separate loaf pan with the recipe. However, all of the tastes were excellent. Just do not add any extra water into the meatloaf given off by the veggies once you food process them. so-so 09/28/2006 at 10:17pm User: RITA from juneau, AK User Rating: Rahter dry with no flavor. Think I would use dry onion soup to put some zip in the flavor. Also, some horseradish and would use chili sauce instead of barbeque sauce! :-) Yummy Meatloaf 09/27/2006 at 12:07am User: KELLY from Palmdale, CA User Rating: This was very easy to make although it took closer to 45 min. My kids weren't too fond of it only because it was a little spicy with the Montreal Seasoning (will cut in half next time). Husband loved it!! Smashed potatoes were an awesome side. Definitely will make again. Yum! 09/25/2006 at 01:17pm User: Anne from Indianapolis, IN User Rating: This recipe was very easy (although I tore apart my kitchen getting everything together!) My husband hates meatloaf and he even said it was the best meatloaf he's ever had and went back for seconds! We'll definately eat this again! Meatloaf Muffins with Barbecue Sauce 09/24/2006 at 05:48pm User: Rocio from Whitter, CA User Rating: I love this, because it is individualized and quick. Excellent Meal.... 09/23/2006 at 12:05pm User: Jessica from Brooklyn, NY User Rating: I made this meal for my brother-in law he love it... I don't even cook on a regular base... Thank you Rachael Ray.. I love your cooking.... great recipe 09/21/2006 at 09:34pm User: Anonymous User Rating: This recipe was easy to make, quick and had ingredients that I always have in my kitchen. My husband loved it and we had left overs for lunch the next day simple and good 09/19/2006 at 05:51pm User: Ann from Leavenworth, KS User Rating: This recipe is so good. It's spicy yet not too--and be sure to team it up with the mashed potatoes. It's a keeper. Change it up a bit... 09/14/2006 at 02:44am User: Cynthia from Kokomo, IN User Rating: I had to change up the ingredients just a bit... Instead of the sauce suggested, I mixed a steak sauce with some ketchup and soy sauce. I left out the celery and cooked it in a regular loaf pan for about 35-40 minutes. IT WAS DELICIOUS!
