I highly recommend taking the advice regarding the salt- I used half a teaspoon and thought that it was enough. Be careful about the size of pan you use- the one I used was rather large and therefore the frittata came out really thin, it would have been better were it slightly thicker. Overall it was really great and I'm planning on making again in the near future.

It was ok...

This was a good dish, I went with all the suggestions that people had left and should have just gone by the recipe. I did cut the salt down and it was the perfect amount. I used goat cheese which was good but I was like to try it with creme cheese, I also doubled the salmon. Unless you LOVE salmon I wouldn't recomend this. I like salmon but I thought it had a little too much.

Yum!

Double the salmon, 1/2 the amount of salt... and for godsakes don't count on 2 tsp of evoo to prevent this from sticking to your skillet. It took some elbow grease to removed the cooked on egg. I also used 3 eggs and 6 eggs whites, still yummers with low fat cream cheese too.

Good Recipe BUT...Ammend the amount of SALT

This recipe was good on Christmas morning, but 1 t of Kosher Salt KILLED the dish for me. The only way I could eat it was to make scrambled eggs that I could have with the Frittata on the side. The recipe should read 1/8 t salt, and then prior to serving, salt to taste. Whoever came up w/ ONE t salt must have been trying to kill me with salt.

great and sooo easy!

This makes a great light supper. I used half the cream chesse and double the smoked salmon. My picky husband (aren't all chefs?) thought was great! This would also be great for brunch. AND it's ready in 20 mins!!!

simple and filling

If you have all the ingredients on hand, this is a quick and simple dinner when you don't know what else to have. Because it's summmer and we didn't want to run the oven, this was cooked completely in the skillet. Keep heat medium low, cover and cook for about 8 minutes.

Simply lox-urious!

Super easy, tasty brunch dish, which my boyfriend and I quickly devoured. My only change to the recipe was adding a few minutes under the broiler to lightly brown the frittata at the end. Besides conjuring up the always satisfying bagel-and-lox flavor combo, the cream cheese provided a much needed balance to the saltiness of the smoked salmon. In fact, my only gripe is that the dish was a bit too salty for my taste, but that's easy enough to remedy just by using less salt the next time I make this recipe--which will definitely be soon!

very easy/quick and good breakfast

This couldn't be much easier to do. Not a lot of ingredients. Good served on a bagel.

This is a easy and tasty recipe. I used goat cheese instead and it's great. I served it with homemade belgian waffles and fresh fruit. My family loves it even my 18 month-old son.

This dish was way too salty. I'd suggest using 1/2 teaspoon of Kosher salt instead of 1 teaspoon. Other than that, the dish was yummy! The cream cheese was PERFECT! I didn't make my clumps small enough and ended up with big gobs of cream cheese in the final dish. Even though I messed up a lot, my sister (and I) thought it was delicious!

not what I had wanted it to be

Maybe it was the cook and not the reciepe, however I followed the reciepe to the letter. My dish turned out flat, too salty, and not as creamy as I thought it should be.

Loved it!

it is the best frittata that I had in a long time. The cream cheese melts in your mouth. I have substituted the chives for french onions.

This was a great, simple fritatta to make. I used regular salt instead of kosher, so it was a little salty. next time i would add minimum salt, and add a little sauteed red pepper. it was delicious though, and even my kids liked it!!!!

I received rave reviews serving this Christmas morning to our family. I used goat cheese in place of cream cheese and added a couple of tablespoons of whipping cream. It's so easy to prepare I'd serve it next time I entertained at brunch time.

FANTASTIC ALTERNATIVE! My wife does not eat meat, but does eat seafood so I altered the recipe smoked salmon (instead of ham) goat cheese (instead of parmesan) regular muffin pan instead of mini I shredded the smoked salmon with a fork I cut the goat cheese into lots of very small pieces and added right into egg mixture It took around 16-17 minutes to cook since I used a regular muffin pan (didn't have a mini one). Turned out great! :-)

It's that Simple?

This recipe is extremely simple, especially for someone with limited cooking ability, like myself. It tasted great and my friends beg me to make it for them every time they come over for breakfast (and lunch and dinner!)

Easy isn't the word to describe this

This Frittata is easy to make even for those of us without the gift for cooking, and it tastes good! It was a hit at a brunch I threw for friends with epicurian tastes. I recommend it to anyone who wants to wow them with little effort.
