This is a great recipe. I made it in my slow cooker. I substituted a can of black beans for one of the pinto beans. Overall it was very tasty and would serve a large crowd. Will definitely make again :)

I guess one of the best compliments a cook can get is when someone tells them "I am full, but it is so good I can't stop eating!" Easy to make, healthy and yummy. I use fresh corn instead of can and organic tomato products.

This soup (which is more like a goulash) is delicious. I made it as directed in a slow cooker and used Monterey Jack cheese and sour cream as toppings. The crunch of the corn chips really adds to the overall enjoyment of the soup. It makes a LOT, so plan on serving a crowd, although I think it should also freeze well.

This is a super easy recipe that will feed a crowd. I made it in my crockpot and even though I was worried at the start that it wouldn't be "soupy" enough it was fabulous by the time it was done. Everyone who tried it asked me for the recipe!

I've tried different taco soup recipes but this one has been the best so far. Paula used tortilla chips in the episode that featured this recipe. But it probably would taste just as good using corn chips.

I loved this soup. Along with some of the other readers, I had problems finding some of the tomato ingredients. Instead, I used the following combination: Diced tomaotes with green chilies, Diced fire roasted organic tomatoes, and plain stewed tomatoes. That was as close as I could get to the overall ingredient list. I also only put in a few green olives as I think the overall qty would have been too much. I made this on the stove, and there wasn't hardly any water to the recipe, so I added 4 cups of water and let this simmer for a few hours (the house smelled great!).

I made this recipe in my crockpot and cooked it on low for 6 hours. The recipe makes a lot. The combination of flavors is wonderful and the beans and beef add a healthy combination of proteins for our dietary needs. I topped off the soup with cheese and sour cream. It would definitely make this soup again. I'm bringing the leftover soup to work tomorrow and I know my co-workers will love it too!

We thought Paula's taco soup was great & our guests loved it. We used one pound ground beef & one pound chorizo, and added a little garlic, and some jalapeno for more heat. Tossed everything in the dutch oven for 3 hours & it was perfect. Would definitely make it again.

This recipe was very easy and it is the way I love to cook as far as just put in the crock pot all day and it is done by dinner time! I can actually say that I did not have all the exact ingredients at home so I subsituted somewhat, and I also used my left over taco meat from the night before. I can say that it tastes very good and my fiance is Mexican and he says it is very good, and he is a better cook than me so that can tell you something about the recipe!

The Taco Soup recipe is so easy to prepare, it is delicious, and it makes a very attractive meal when topped with cheese and sour cream. I substituted one can of black beans for one can of the pinto beans and used only one can of green chilis. Everyone wanted seconds and a copy of the recipe.

What a colorful dish and full of flavor. Great for a huge gathering! Being from Texas I added my own changes, instead of 2 cans of pinto beans I used one and added a can of black beans (drained). I added a package of ranch mix and only one package of taco seasoning. Lastly, I sprinkled a little cilantro for flavoring.

Loved this soup. I used a larger can(28 oz.) of diced tomatoes, added a chopped jalepeno pepper, some garlic, and it seemed a bit too thick so I added a 12oz can of V-8 to thin it down a bit. Used 1/2 ground turkey and 1/2 ground beef to cut the fat. Great job Paula, I will make this again and again!!! Healthy, hearty soup!

This was the BEST soup!!! I have made it several times already. It is so easy to make and very flexible. I have experimented with different beans. I like black beans, and used them in place of kidney beans. I am thinking of trying it with chicken and also maybe with shrimp!!! For vegetarians, try making it without the meat or add soy crumbles!! THis was YUMMY!!!!!

I made this soup on the stovetop rather than crockpot. I think it could use about 2 cups of water as it was more of a stew than a soup, and if I could do it over, I would add the ranch dressing a little at a time, as I thought the overall taste was too salty.

I originally planned to cook this in the crock pot, but instead waited until I got home from work to cook in a stewpot. Very quick & easy...and oh so delicious! Couldn't find Mexican stewed tomatoes, so used regular. My family doesn't like a lot of the spice, so I did cut back on the chiles... everyone loved this and has asked me to do again soon. Absolute fave!! Thank you!

I made this for a church group that included little kids and my wife who thinks taco bell mild sauce is spicy. It was tasty and filling. The only complaint I got was from those adults with a normal palate who thought it was wimpy. I will make two separate batches next time, one per the recipe and one with some heat.

This recipe is extremely delicious! Although I do alter it a bit. It called for too many tomatoes for my taste, so for the whole recipe I only add 2 cans of diced tomatoes with green chiles instead of all the others called for, and I omit the 2 cans of green chiles. I also omit one of the two cans of pinto beans. It is a regular weeknight recipe in my house and the kids love it too!

I was skeptical when I saw that water or some kind of broth was not an ingredient. I ended up having to add 3 cups of water for it to be remotely considered a "soup". Also the flavor was kind of bland (even before adding water), so I added an extra packet of taco seasoning, 1 tsp of salt, and 1/2 tsp garlic powder. After the additions, it ended up being very good.

This is a very versatile recipe that you can alter to suit your needs. I used tofu instead of beef and it was absolutely not lacking in flavor at all. I also added some different beans and vegetables and it came out delicious! I think it's a great cupboard meal as most of the ingredients are things you'd just have on hand on a regular basis. Also made a huge amount, had leftovers for three days!

This was so simple to prepare. I threw it all in the crockpot before lunch and it was ready by dinner. If you were short on time, it would be just as easy to prepare on the stove in about an hour. It tasted great and our friends were asking for the recipe before they finished the first bowl! I added about 2 cups of water while it was cooking to thin it out a bit, and next time I will probably omit the green olives, as they don't taste to me like they belong in a Taco soup.

I made this into a Weight Watcher friendly soup/chili/stew by cutting down to 1.25 pounds of ground turkey and using only one can of pinto beans instead of two. I also changed the number of servings to 8 instead of 16 and according to the recipe builder on the WW site, it's only 6 WW points! Totally delicious, especially when I added a few points of tortilla chips and light sour cream. BTW, I took the spicy down a notch by only using one can of chiles. There are a lot of cans that don't necessarily sound like they'll be good together, but it was good, EASY meal -- even without a slow cooker! I'll definitely make this again!

We really enjoyed this soup. I made a few changes though based on our family's food preferences: I use shredded chicken breast in place of the ground beef and I add a bit of water to make it more of a soup instead of a chili. Even my 2 y.o. son eats this soup and asks for more!

We tried this soup on New Years 2008 and left out the olives but everything turned out to be so delicious. I also added chili seasoning and lime and it really gave the soup a kick. We made it in a big pot on the stove. It let us try it and add new spices. Loved it!

Made this last night & it was a hit with the wife & one of my daughters & her family. I left out the green olives as I don't care for them. When it was all together, it didn't seem to be "Soupy" enough. (I also drained the juice from the beans) So I added 1 3/4 cup of water & that seemed (to me) to be about right for a soup. I also added some garlic (one tsp) & some of Emeril's Essence (one tsp I like spices). The daughters husband loved it ! I'll be making this one again, often !

I was surprised how MUCH this made.... the pot I normally make soup in was just about completely filled (I didn't use the crock pot this first time, did it on the stove--will try crock pot next time). I used three cans of pinto beans (since I don't care for kidney beans), a 16 oz package of frozen supersweet corn instead of canned, and one 28 oz can of crushed tomatoes and one 14 ounce can of chopped tomatoes and jalapenos. Used two packages of taco seasoning, since I like more spice. (Omitted the packet of ranch dressing mix, since I was out of it. Not sure that it would have changed the flavor much--which was quite good). It doesn't really need the corn chips.. would be better with fresh corn bread instead. But this recipe is definitely hearty, definitely easy and definitely worth making more often. And for me it wasn't really a soup so much as a stew... very thick, "stick to the ribs" sort of meal. Darn good job Paula!!

I've made this twice now and just love it. The first time I made it I thought it was a little on the bland side. So, the second time around, I seasoned the ground beef with taco seasoning while cooking it up. I found too that if you purchase cans of tomatoes with the chiles already in them, it's not necessary to add the separate canned chiles. I added a couple of teaspoons of dices jalapenos too. Gave it a little extra kick. Very simple to make and very tasty. Thanks Paula!

This soup was super simply and easy to make...Great for a busy grad student! It made tons and also freezes really well. I used black beans instead of kidney beans (personal preference), and omitted olives (personal preference)....would definitely make it more spicy for next time, would be great with a jalapeno, or some red pepper flakes.

I cooked this at the same time I was preparing breakfast. So easy and quick! Came home to a great smelling house. The family loved it. It should be called chili! I loved this recipe. I replaced the ground beef with ground turkey and it was a hit with my husband (who usually comes up with better recipes than I do!). This hit our "must repeat" list. I made it early in the day and stuck it in the fridge until an hour before guests were going to arrive. We served it with corn tortilla quesadillas instead of chips. Ole!

This didn't taste at all like tacos, it was really chili with corn & olives... it had good flavor and was very filling though. I'll probably make it again for a crowd as it makes a lot!

This is a great recipe. I modified it to use 1 lb of lean ground turkey and 1 lb of turkey sausage. I used dark red kidney beans in place of pink and 1 can of black beans and 1 can of great northern beans in place of 2 cans opf pinto beans. Served with crusty bread - Yumm! Makes enough to freeze for quick, hearty additional meals in a hurry. Thanks Paula.

Most of Paula's recipes are good and this one is no exception. However, it makes a huge amount of soup and does not lend itself to cutting down the amount of the recipe because of the size of the cans used to make the soup. If you have the capability to freeze any remainders of the soup, I'm sure it would freeze well. For 2 to 4 people however, you probably will have a lot of leftovers. Much too delicious to have to toss the leftovers. We followed the recipe exactly, except for the green olives, and it was delicious.... and filled our large crock pot to the max. Can't say enough zbout what a great soup this is!

I am so pleased with how easy this recipe was. I very seldom make anything from a recipe but saw Paula making this and knew I had to try it. I also add can of black beans to soup and the corn juice to give it extra flavor. My mom always kept the corn juice for veggie soup to give it more flavor. That is why I add the corn juice to my soup.

When ever we have a party I always make Taco Soup. Everyone loves it. It's always the first thing to go at a potluck. I usually mix ground beef with ground turkey and sometimes use only turkey. Can't really tell the difference. This recipe is a keeper!

I make this recipe in a slow cooker and let it simmer all day long. It's especially fantastic for group gatherings like Super Bowl Sunday and lazy Summer get-togethers. One change I make is to substitute lean ground turkey for the beef. It cuts a few calories and shaves off some fat too. Enjoy!

This recipe was given to me by a friend with a couple of variations that make it even easier to put together. I use a can of Rotel instead of the green chilies and the tomatoes with chilies. We also use homony (I think I spelled it right.) I have a 15 year old at home and I work, so to make things even easier for her (and myself)I brown the hamburger and freeze it in 2lbs bags so that all she has to do is literally throw everything in the pot!! It's great to come home after a long day at work to have dinner done!! We Love it!!

I made this soup and it's OK. I thought it was a little spicy ( and I LOVE Spicy). I loved the ranch seasoning, and it definity stood up to the tomato flavor. Call me a snob, but it just wasn't that sophisticated of a dish and it reminded me of something that my mom made growing up...throwing everything in a pot and calling it soup. Maybe it's like a once a year thing. But Paula, I still love you and your recipes!

I've made this a couple of times. It's not much different than chili. But the taco seasoning does make it a little different. I use ground chicken or turkey instead of beef. I like this because I can keep ingredients on hand at all times to make it (lots of canned ingredients), all I need to buy fresh is the meat.

Okay, so Oklahoma doesn't get THAT cold, but this is still the perfect soup to chase away the chills. I only made half of it since it is only my husband and me. I substituted ground turkey and only used the Rotel and diced tomatoes to make up for the extra soupiness from cutting the recipe in half. It is tasty as is or even with a few adjustments, well worth a try.

This recipe can't get any easier. Basically, you're just opening up a bunch of cans! I have children who do not like spicy food, so I modified this recipe just a little. I cut the recipe in half (it makes a lot) and I omitted the chiles. It still tasted great.

I followed the recipe exactly and cooked it on the stove. Cooking the turkey was the only real cooking involved, as everything else just had to be thrown into the pot. I used fat free yogurt and lowfat cheddar on top, and it was such a great meal. We have lots left over for the week, and I'll probably freeze some, too. Great recipe!

I made this the other night in my crock pot and brought it over to my parents' home for all of us to enjoy. Added some fresh slices of avocado, a dash of shredded cheddar, and tortilla chips to line the soup bowl. They couldn't get enough of it. I mean...they only had one bowl but I could have put those bowls back up in the cabinet without washing them (that's how clean they were). I had no doubt that it was going to be good because I just love Paula (not to mention her gorgeous sons).

I made this soup with a little revision. I just used Rotel tomatoes with chilis and lime juice and plain diced tomatoes. It seemed rather thick so I added a box of beef broth and added some more spices to make it a little more hotter. It was a real hit with my family and friends!

My mom came to visit and I made this as a no-fuss dinner while she was visiting. We liked this recipe so much that SHE has made it for other people several times since! Great tastes and VERY simple to make as long as you have the ingredients - the only thing to watch out for is that my first batch ended up more like a chowder because I had more ingredients than liquid. If you're looking for that soupy texture, add another cup of chicken broth.

I love the simplicity of it, great for sports nights on the go. Dinner is ready whenever each one gets home. This soup is great to make, pretty much make it to your own tastes.
