It was the best chili we've ever had! The chocolate and cinnamon give it a flavor reminiscent of mole but it's still got real chili "kick". We couldn't find the masa harina, so we mixed some flour w. a little cornmeal and that was OK. I would also recommend using a Dutch oven like his -- we only had a non-stick stock pot and (obviously) didn't get any good carmelization on the bottom, which would have only added to the richness of flavor. OUTSTANDING AUTHENTIC CHILI CON CARNE 07/05/2007 at 07:41pm User: Anonymous User Rating: followed recipe to a tee! down to the lard, mexican corn flour, and the beer. i think these incredients are what makes the recipe smack of that authentic mexian flavor. used the dutch oven, heated it really hot, seared the meat in batches and the vegetables and the meat carmelized beautifully. the lovely brown bits and fatty pieces deglazed nicely when the veggies were added. the meat was buttery tender and succulent. the only thing i'd do differently is add less of the cinnomon and chocolate. total success and i'll definitely make this reciep again. and again! You can't substitute corn meal or flour for masa harina and get authentic flavor. I've made it with cubed chuck and also had the butcher grind it to chili size. We prefer ground. I did not use lard, though, just olive oil. There are a just a few things I am going to "tweak" for next time. I will cut back a little on the onion, jalapenos and chicken stock, and will add a little more chocolate, tomatoes, and tomato paste. I felt like the heat from the peppers was a distraction from the other spices, and I would like for the flavors from all of the ingredients and spices (smoky and sweet) to be a little more balanced. My original review is now missing(as other low scorers)? The chili was thin, bland and yet hot at the same time. All of my guests hated it!I tolerated it due to the expense of making it. It might have a bit to much cinnamon for me as I equate cinnamon with sweet instead of savory. However, the color was dark and rich, the meat was more than tender and everyone loved it! It was a huge hit. I left out the olive oil but I did use the lard. The masa harina was a bit hard to find but I finally tracked it down and it does matter. I heated the beans on the side because my husband doesn't like beans in his chili. I only used two bottles of beer. Towards the end of the cooking, I took about a cup of liquid out and added about 1/4 cup more masa flour, whisked it until well blended, and added it back in. I made the the day before, refrigerated it so I was able to remove the visible fat from the top. Reheated it, added the chocolate and voila! Cheese, cilantro, red onion, and sour cream on the side for people to add as they wanted. I also made elbow macaroni (a midwestern thing my husband taught me). A friend made his own cornbread in a cast iron skillet and we served that with sweet butter and wild cranberry sauce. All my friends loved it and I think it will be an annual menu. You don't have to use a Dutch oven! Use a 3 quart pan to saute everything, follow recipe to the 1st beer to deglaze then pour all into stock pot to complete. The texture and complex flavors are awesome! The bittersweet chocolate adds an interesting hue but don't over do it, 2 ounces is plenty. Also I combined both beef chuck and pork shoulder. Just fabulous, am making it again this weekend. This long and involved chili recipe was disappointing. If followed exactly, the recipe was so hot it about blew my head off. The taste was more bitter than chili-ish. It was unclear when reading the recipe whether or not the jalapeno seeds were to be cleaned out of the jalapenos or used in the chili. Any thoughts? The chocolate gave it an unexpected flavor, but good. We added 1/2 C of sugar to cut the bitterness. With each serving we stirred in either sour cream or guacamole (rockamole from the same show - excellent!) which seemed to cut the bitterness. It was a lot of work for a disappointing flavor. Reminds a New Mexican of home cooking 02/05/2007 at 09:47am User: J from Boca, FL User Rating: First of all, adding the jalapenos to the pot would make this chili WAAAYYY too spicy for most...we diced ours and left them out for the chili-heads in the bunch to top their bowls with. We halved the recipe and it was plenty for 5 adults with a few bowls leftover. The cinnamon and chocolate come through more in the aroma while cooking than in the flavor...if you taste them very strongly, you've probably put too much in. The chocolate does mellow the sharper flavors of the chile and the tomatoes. And it is very much like Grandma's New Mexican chili, enough that FIL called her to tell her about it. It's no harder to make than any other stew and once everything's in the pot, you can ignore it for awhile. As for the posters who felt it was too watery, don't add all the liquid right away. Add until it looks good, check on the pot periodically and add more if needed. We wound up putting in 1 bottle beer, 1 12-oz can tomatoes, 1 14 oz can chicken broth (halved recipe). I added half the chicken broth at first and slowly added the rest as the pot cooked. We'll make this again, probably with a little less chili powder to accomodate more sensitive palates, jalapenos on the side and always half the recipe for our crew. It took me most of the afternoon, but I like to cook, so I don't mind that. I cut up the meat myself, so that was part of the time involved to prep. I followed the recipe very closely, except that I only used two beers. I used a dark, sweet beer....Killian's Red. I was going to add all three bottles of beer, but my husband and I decided to drink the third bottle....you know, just to be sure it had the right taste for the chili. And it did! Seriously, we just tried a "sample bowl" of the finished product and it is delicious! I am going to let it simmer another hour or so, uncovered, to reduce it more and concentrate the flavor. But, the texture looks real good...not too thick or too thin. I added one other ingrediant....a stick of canela, which is Mexican cinnamon. Canela has a very mild flavor and it's softer than a regular stick of cinnamon. I don't believe they're interchangeable. I just thought it would add to the authenticity of this recipe...a Mexican, or mole flavor with the chocolate, masa harina, manteca, and all. I think it's worth five stars! My husband absolutely loved it and so did I. He said the flavor reminded him of mole, I would agree the difference is this had a rich bold flavor. A tip for others, leave the pot lid cracked to evaporate the liquid throughout the cooking process. This intencifies the favor and helps thicken the chili some. The chocolate makes the difference in this dish. I added three good tablespoons of cornstarch diluted with water of course at the very end. This brought the whole dish together making it a think robust chili. I like sour cream with this chili, no cheese is neccesary. Michael Chiarello your the best! We had such high hopes for the outcome with the lovely smell in the kitchen, but it was unpleasantly spicy and left a remorseful flavor on the tongue. We tried to jazz it up to make it more patettable but to no avail, even with a sweet corn bread we had to make our apologies to our guests. The chocolate was no help at all but added to the intense bitterness. We are going back to our own recipe for chili Con Carne. We couldn't even save it for left overs. It took some tweaking, the texture was a little too runny and I didn't like the chunks, so I used a hand blender to blend to the desired texture. The flavor was good. I've used chocolate in chili before so I knew it was important.
