Sprayed on pan and fish. Used fat free Mayo and half the amount. Used Cod ( cheaper than Grouper). Did use regular chees (Jack/Colby) but half the amount and made a thinner layer. Being on the West Coast, we don't get grouper so I used tilapia which is considerably thinner. I followed the advice about the salt and cut it back by a half. (kept the garlic powder and pepper the same though). Don't be afraid of the hot sauce and the chili flakes - it's not hot at all, just well seasoned. Also, perhaps it was the thin fish I used, but before I added the topping, the fish was SWIMMING in butter and liquid. I think you can cut back on the butter and it won't hurt it at all. Finally, I ran it under the broiler to make it attractive. My family loved it. I prepared this dish for my fish finicky family and they all loved it. I made mine with cod, as grouper is not available in our area and it turned out great. I made note of what others said about the appearance of the dish when completed and decided to sprinkle it with paprika and place it under the broiler for a few moments until golden brown. Because of the richness and fat content of the recipe, I would suggest serving it with a broiled or steamed vegetable. Instead of cooking grouper in skillet, try grilling over hot 100% hardwood charcoal with Alder wood chips. Rub grouper with olive oil and liberally sprinkle with "House Seasoning" (see recipe), sear both sides, then set group on indirect side of grill.
