Absolutely Wonderful 12/25/2005 at 06:25pm User: Anonymous User Rating: .... I love soup!! This is so worth the chopping and puree process. I've made this as a 'trial run' before Christmas, then served it at 2 separate Christmas dinners to people who "arent'" soup people and they LOVE it too!!!! Way too spicy 12/23/2006 at 09:59pm User: MARK from PHOENIX, AZ User Rating: The recipe was way too spicy. The hot peppers completely overwhelmed the flavor of the squash and apple. It was really pretty inedible, even after cutting it with cream and some more squash/apple. It went down the drain. Hot 12/16/2006 at 03:47pm User: Anonymous User Rating: This was a simple yet powerful recipe. The soup was excellent but a wee bit spicy for general family member consumption. The real winner with this recipe is the candied walnuts. Didn't like the spices. 12/11/2006 at 02:17pm User: Derek from Sacramento, CA User Rating: This is a great soup for Thanksgiving. I didn't like the spice rub from this recipe, so I changed the spice addition to the following and I liked it much better: 1 tsp. Cinnamon 1/8 tsp. Allspice 1/8 tsp. Ground Cloves Pinch chili powder Excellent soup 12/10/2006 at 08:11am User: Rita from San Diego, CA User Rating: Great recipe! I made it for thanksgiving dinner and everyone loved it. A little spice, but very tasteful. Everyone was very impressed! Wonderful 12/02/2006 at 03:57pm User: Steve from Rockaway, NJ User Rating: I've made this soup a few times and everyone, I mean everyone loves it!! It's better the day after you make it. For those who reviewed this soup and didn't like it.... You did something wrong. This soup is the BOMB!!!! The walnuts are delicious! 11/28/2007 at 06:21pm User: Rebecca from Bridgewater, MA User Rating: It was a little time consuming making this recipe, but definitely worth it in the end. We had it as our first course for thanksgiving dinner and it was a hit all around. Can't get enough of the walnuts either. I'm making another batch tonight. Its a nice treat to snack on! Fabulous - especially the nuts! 11/27/2006 at 07:39pm User: KELLI from Reno, NV User Rating: This soup was wonderful, but the sweet and spicy walnuts were a huge hit. I put them out in a bowl and nobody could resist. Soup of the ? 11/24/2007 at 01:12pm User: Ashley from Lubbock, TX User Rating: This soup wasn't what I thought it would be. It didn't have a "coutry italian" taste like it was proported to have. The apple taste is almost nonexistant. Amazing! 11/21/2007 at 11:47pm User: Lynnette from Saint Petersburg, FL User Rating: I made this last year on Thanksgiving and it was a hit! I replaced the walnuts with pecans for allergy purposes and I think it worked out perfectly. The soup was the only thing everyone ate every drop of. This is definitely a tradition from now on in my house! WOW 11/21/2006 at 05:11pm User: Anonymous User Rating: this was the most awful thing in my life and i will never ever eat it again. it tasted like a butt. Too sweet 11/20/2007 at 04:00pm User: Nicoal from Grand Prairie, TX User Rating: I made this for Thanksgiving 2006. My entire family simply found it too sweet rather than savory. It was good...but definitely not worth the effort. I'll stick with butternut squash soups withOUT the apples. Sweet 11/20/2007 at 02:01pm User: Anonymous User Rating: That is very appaling! squash soup 11/20/2006 at 04:22pm User: Anonymous User Rating: This soup was awful. My husband typically raves about my cooking and can't get enough. I made this soup and he could barely swallow it down. The flavor is very intense and strange. DELICIOUS and HEALTHY 11/19/2007 at 10:52pm User: morgan from Draper, UT User Rating: My whole family loved this. I loved the additio of the tart granny smith apples to this recipe. DELICIOUS! Compliments to the chef!! 11/15/2006 at 07:52pm User: Anonymous User Rating: This easy to follow recipe helped me in cooking a soup that my entire family loved. I received so many compliments and requests for the recipe - as always I directed them to food network!!! Thank You! WONDERFUL,WONDERFUL 11/12/2007 at 09:06pm User: Anthony from Gobles, MI User Rating: Hands down-the best use of squash and apples ever-I love the spice-if you didn't like it-you messed up the recipe-I think if you threw it out-you probably used all the Toasted Spice Rub and not 2 teaspoonful-the only variation I did was to add about 1/2 cup of half-half-the walnuts were also a hit. Best soup ever! 11/12/2006 at 02:50pm User: Peg from Fallon, NV User Rating: this has such robust flavor in a delicate way! wow, michael has done it again! Stellar Soup 11/04/2007 at 01:12am User: Joel from Rhinelander, WI User Rating: This is a great looking, great tasting soup, and versatile as well. If time constrained you can skip the candied walnuts and even improvise on the spice mix without the time for toasting whole seeds and the flavor and spice/heat still come through to give this hearty soup a wonderful aroma and taste. The first soup I've made other than chowders and chilis and it was a breeze. Delicious 11/01/2006 at 12:21am User: Anthony from Oak Lawn, IL User Rating: A hearty soup for the fall. Definitely worth the preparation. Fantastic 10/30/2007 at 12:42pm User: Mary from Woodstock, GA User Rating: This was wonderful!! Everyone Loved it. This is a keeper and with winter on its way this is a perfect soup for anytime, lunch, dinner, snack, when ever you want it. I made it two days before I needed it and that only added to the flavors. Thank you Michael for sharing!!!!!!!!!! Awesome!!! 10/29/2006 at 05:02pm User: SHAWN from Alexandria, VA User Rating: Made this to try it. It was the best soup I've ever made or had. I highly recomend the to anyone that likes soup on a cold night or served cold on a hot day. Its like crack, for soup lovers. Oh La La! 10/26/2006 at 11:12am User: Nickolette from Satellite Beach, FL User Rating: In my endeavor to satisfy my palate with the aromatic and wonderful flavors of autumn, I set out to try a new recipe for Butternut Squash Soup. To put it simply, this one is heavenly. It is truly better than any variety of squash soup that I've had in hoity-toity restaurants! Try it, you LOVE it! Yum 10/23/2005 at 01:12am User: Amber from Turlock, CA User Rating: Complex flavors in an earthy soup. Warms the soul. I didn't make the walnuts this time and instead used a dollop of creme fraiche. Some fruit and cheese would be great with this but I ate two bowls of soup instead. My own version... 10/13/2005 at 07:53pm User: Lorena from Kennesaw, GA User Rating: This is one of the best soups I have had in my entire life!!! However, I replaced the rub recipe for a teaspoon of cinnamon and half a teaspoon of all-spice, and it turned out easier and even better than the original recipe!!! I know that if I serve this for Thanksgiving, it will be a major hit... Thanks Michael!!! Wonderful Holiday Soup 10/08/2005 at 11:07pm User: nancy from Fort Wayne, IN User Rating: This will by my Thanksgiving soup for this year. Excellent flavor, easy to make. My family loved it! Yum! 10/01/2006 at 09:16pm User: Anonymous User Rating: This was good, a little messy though. It turned everything orange. It is good with a little sprinkle of cinnamon sugar and a pat of butter! Best Soup EVER!!! 09/15/2006 at 05:36pm User: Lisa from Arvada, CO User Rating: This soup was wonderful!! Thank you for sharing it with us Michael!!! Superlative rating for Butternut Squash and Apple Soup 04/19/2006 at 06:48pm User: Lorraine from Marlboro, NY User Rating: I saw Michael make the soup and I realized that I had frozen butternut Squash and apples available. I had another recipe but it didn't have the apples in it so I used Michael's recipe. I made the soup tonight and my husband and I loved it. I deviated from the spices as I didn't have all the ingredients so I used pepper, salt, red pepper flakes and cinammon and it was delicious. Great soup! 03/20/2008 at 05:24pm User: Allan from Minneapolis, MN User Rating: Delicious & easy Love this soup! 03/10/2007 at 08:13pm User: Jennifer from Alexandria, VA User Rating: The first time I made this soup, something was missing. It was missing something. So this time I added Spicy Turkey sausage when I added the leeks and garlic. After blending it, the texture was much more appealing and the taste was AWESOME! Best butternut squash soup I've ever had! 02/26/2006 at 09:03pm User: Susan from Gig Harbor, WA User Rating: This was so good. Like a couple of others, I did not make the spice mixture. I just added 1 teaspoon of cinnamon and and 1/2 teaspoon of curry. Hearty and Delicious! 02/23/2005 at 07:55pm User: JANICE from State College, PA User Rating: My husband insists we serve this soup to his staff as an appetizer for one of our dinners. With Michael's spice rub, the soup has an unforgettable, homey flavor. Absolutely delicious! butternut squash and apple soup 02/13/2005 at 04:26pm User: PATRICIA from Copiague, NY User Rating: Loved the flavor and very easy to make. That squash is just a pain to cut up though! Great combo of flavors - loved it! Why the walnuts? 02/10/2005 at 01:54pm User: Anonymous User Rating: The soup was easy enough to make. Even the toasted spices for the soup were easy enough. However, the garnish of walnuts was a pain to make and added nothing to the flavor of the soup. Simple crouton would have been just fine. this is what i'm talking about 01/29/2008 at 06:15pm User: laura from san francisco, CA User Rating: THIS is the michael chiarello squash and apple soup recipe I meant to review. It's fantastic, and to kick it in the pants even more- add some creme fraiche and chunks of dungeness crab meat. yum. And the toasted fennel spice rub is my go-to spice! I slip it into everything from roasted meats to sweets! Not What I Was Expecting 01/26/2007 at 02:07pm User: Anonymous User Rating: I probably made a mistake, maybe with the spices, but this was not to my liking at all. One of the Yummiest Soups I've Had 01/01/2007 at 12:52pm User: Anonymous User Rating: We just made this soup for a New Year's Eve dinner party (Fruit and Nuts theme) and it was a hit. I used organic chicken broth, and did not need to add the additional water. I also found spicy, candied pecans at Trader Joe's to use in place of making the walnuts. I added a few tablespoons of half and half to the soup as well. I would definetly make this soup again, especially since I have LOTS of the toasted spice rub left! And I might try increasing the garlic amount next time, only because I love garlic. |
