It had the exact right consistency and I was impressed that I could make it because I'd always heard that risotto was so hard to make. Not sure that red wine risotto is the best though. One comment: I learned via eating this dish that I'm not a big fan of parsley... the parsley taste came through very strongly in this recipe. So perhaps if you are unsure about parsley, you should decrease the amount you use in this dish. Overall, though, very good! I will definitely make this again.
