Substituted pork tenderloin for chicken, otherwise followed recipe. Both boys, 21 and 16 loved it, as did my wife(no age recorded)!

I questioned the combination of mustard, marsala and mascarpone, but it was excellent. It did take twice as long to "reduce" or thicken as the recipe called for, so add some time to the prep.

Thick and gloppy
12/20/2005 at 08:25pm
User: Jenny from Madison, WI    User Rating:
The sauce was too thick and gloppy for me. I thinned it down with some milk but still too much for me. I usually like rich sauces but not this one - it needs to be lightened up big time. My husband isn't a fan of mushrooms. I tried cutting the quantity in half but it didn't help - he didn't like it either. We will not be trying this again.

User: Christal from Ontario, CA    User Rating:
The recipe was very easy to follow, with simple ingredients. The sauce was not as spicy as I expected, probably could adjust the amount of dijon mustard to taste.

Pretty good

User: Anonymous    User Rating:
I'm a beginner cook and had trouble coordinating the pasta and chicken so the sauce dried out a bit by the time the pasta was ready. I also decided to skip the butter in the pasta and that was a mistake as the pasta was not as tasty. Probably would be better in a second attempt

This recipe is delicious and easy, too! I used egg noodles instead of fettucine because that's all I had and I used a mix of chicken breast and chicken thighs. The second time I made it, I made extra sauce with more mushrooms because it was so yummy! Easy dish to serve for friends or the in-laws :)

My husband, who has a huge appetite and is almost impossible to fill, thought this recipe was excellent, but couldn't finish because the meal was just too rich. I thought the taste was there, but I had to agree with him. I only ate half my meal. I prefer chicken marsala without the mascarpone.

I was very afraid of this recipe, but I wanted to try something different so I did it the exact way the recipe read. Even my picky kids ate it. Really disappointing!!!!
11/14/2007 at 02:07am
User: Roula from Burlingame, CA    User Rating:
Love Giada, but this is a disaster! Watched the episode, then downloaded the recipe, and followed it exactly. Ended up having to throw it all out in the trash. The dijon just killed it. 2 tablespoons of dijon mustard!! Do you know how potent that stuff is. It just ruined it - too bitter. Maybe a teaspoon would have done the trick. And another thing, 8 ounces of mascarpone cheese is just unnecessary! Someone needs to tell her that a little goes a long way!

Superb!

User: Carrie from Coeur d Alene, ID    User Rating:
My husband and I were disappointed with how bland this dish is. We also felt that for the amount of calories mascarpone adds to this dish, we'd prefer to just stick with a classic fettuccini alfredo when we are indulging. This by the way is my first "miss" with Giada's recipes. She is my culinary hero.

The flavor of this sauce was amazing and absolutely delicious on the chicken. However, I served it with pasta and the sauce was too rich when eating it with just pasta. You really have to be careful how much of this sauce you eat, or you will regret it after dinner. Overall this meal was as yummy as something you would order in a good restaurant and it would definitely impress dinner guests!

heart attack

User: Anonymous    User Rating:
Have made other Chicken Marsala recipes and this one is very heavy. Check out the sat. fat on the marscapone, it's 35%. Everything is sauteed in oil and drenched in oil. The dijon does not show up in the flavor. Needs more.

Tasty but gloppy
10/15/2006 at 10:43pm
User: PEGGY from Antelope, CA    User Rating:
Excellent flavor but I have to agree with some of the previous reviewers who commented that this sauce is just too thick. I ended-up having to add about a cup of chicken broth at the end to loosen it up. Next time I'll try halving the amount of cheese--should still be plenty rich enough. Also will not let as much of the mushroom juices and wine cook-out. The recipe instructions don't say what to do with the remaining 3 T. of butter. Add it at the end? Also, I recommend not slicing the chicken pieces as it makes it too easy to overcook them.

do over? nah...
10/15/2006 at 06:10pm
User: Anonymous    User Rating:
I want to start by saying that I think Giada's recipes are hands down the best ever on Food Network. I have made over 20 of them and they are all fabulous. However, this recipe was blah, and the sauce definitely needed to be thinned with some pasta water. More importantly, the mascarpone cheese alone packs more than 1000 calories, not to mention 5 T of butter. For such a decadent dinner, I would rather splurg on a simple classic fettuccini alfredo.

A little too rich
10/14/2006 at 11:47pm
User: Erika from bakersfield, CA    User Rating:
This was a good dish, but a little too rich for my taste. I also think the Marsala wine I used was a little sweet, so definitely use a drier Marsala as Giada suggests.

This is a fine recipe if you leave out the mascarpone - makes it way too rich. Plus, I think Giada's obsession with using mascarpone in almost every menu ignores the fact that it is not widely available and when you can find it, it very expensive.

We were a little concerned at first with the Marsala wine..it has a very strong smell. But, after putting in the dijon mustard and mascarpone cheese it all came together and the whole aroma change..absolutely wonderful. This is very rich, I recommend having a nice green salad and some crusty bread with it.

This recipe is pretty good and I would make it again, altho my family wants the chicken cut up into small pieces. The large pieces did not get cooked enough, and I had to cook them more than what it called for. I think one inch cubes would be great.

I must admit I was slightly hesitant in using the dijion with the mascarpone...but having prepared MANY of Giada's recipes, I knew she would not let me down. The dish was such a hit at my house that the 6 servings I made only fed 3 people...one of which is a 4 year old! I will be adding this to my regular arsenal of recipes...definately a great idea for a dinner party! It was SO easy too! I did not have chicken breasts on hand, so I used some veal stew meat that I had in the freezer (and I cut the browing and cooking time) and it was melt-in-your-mouth delicious!!! Thanks to Giada for always making me look good! ;-)

Amazing and creamy

Awesomely unhealthy

User: Anonymous    User Rating:
I would have given this recipe a 5 star rating for flavor because it is excellent, however, this is one of the most unhealthy dinners you can put into your mouth. The mascarpone cheese has 120 calories per tablespoon and 13.5 grams of fat. That's PER TABLESPOON. At 16 tablespoons for a recipe for 4 that computes to 480 calories and 52 grams of fat (8 grams saturated) PER SERVING. And that's only for the mascarpone cheese. Scary but it's soooo very good. Have this one for special occasions and have just a little bit.

Not great

I am a big fan of Giada's recipes but this was probably my least favorite. It was way too rich and certainly not good for you especially with all of the Mascarpone cheese!

This chicken marsala is one of the best I've ever had: the use of the marscapone gives the sauce such richness and the mustard gives it that "zing". Delicious; a great party dish as a little goes a long way. Thanks Giada, another winner

This was delicious!! I didn't use as much mustard as it called for..maybe 1 heaping Tbs. and I didn't use the 3 Tbs. of butter on the pasta...I knew there was enough butter/oil in the Marsala already. I also used Penne not fettuccine. Although a little heavy and not a waist watching recipe, it was still very delicious and would make this again in a minute for company or a special occasion. I would recommend this completely. Very scrumptious!!!

I really liked this and so did my family. My only problem was that the sauce/gravy looked like dirty water. I think it was the mushrooms. I sent the recipe to a girlfriend and she made it for a "Girls' Night Out" at her house. Beautiful. She used a different type of mushroom.

I was attempting to double this dish. I thought I had the right amount of all ingredients but I didn't. I made due with what I had and it still came out delicious. I had all the right amount of ingredients to double the dish except the mascarpone cheese and wine. I only had 8 oz. of cheese and a 1/2 cup of Marsala wine. I only used what cheese I had and added extra red wine. I also added a little chicken broth at the end. It still turned out very good. It wasn't very heavy and was creamy. I will make again. My whole family enjoyed it.

First let me say that I loved this dish...It was like eating out at a restaurant, only I don't like to eat that fattening at home. The marscarpone cheese put over 100g of fat in the whole dish. Too much for my taste. My husband thought the taste was a little too strong for him. I wonder about using a much smaller portion of cheese and substituting the rest with something else?

I cooked this recipie for a date i had a week ago. Theyve had chicken marsala before, but the mustard and marscapone mixture was something Hes never tried before. He made a face at the sound of mustard. But when that chicken hit his pallate he was floored. It was spicy, zippy, and the chicken and mushrooms melted in my mouth. USE REAL MARSALA WINE though, not that cooking wine. Thanks again Chapparel Murrieta Californa
