However, it was too salty to eat no matter how much extra rice I added. Perhaps the recipe is best in small portions. Its a very tasty recipe, and the constancy is perfect. The best thing is its not as nearly as oily or greasy as the resturant's. My boyfriend orders Mapo all the time, and even he liked this recipe better. I can eat this over and over and not get tired of it. Next I'm goign to try to substitute the tofu, with eggplant instead. I'm sure it'll be just as good. I'm not sure what's missing but a little different. However, not bad, especially if you wish to try the dish for the first time.I don't think you will be disapointed. I live next to chinatown and often get ma po dofu. My only 2 complaints about this dish is it isnt too spicy. There is no way to kick up the spicy factor using the ingredients. The second, there is a lot of meat for this tofu dish. Still, the taste is really good and really compares to the tofu dishes I buy in chinatown. Both times, I used a firm Tofu because 'regular or soft (not silken) tofu' - just did not sound right. I missed the airing of the show. 2nd time, I marinaded the tofu in the sauce overnight! Interesting note - this dish provides over 21g of Protein; can leave out the pork & use as a vegetarian dish & still get the Protein we need! Personally, I love the flavor the pork yields. Also, I added a dash of sesame flavored chili oil and a pinch of coarsely ground red chilis. My veggie-eating wife loved it. Thanks, Sara. Big mistake since it disintegrated during cooking. The flavors were great regardless of tofu texture. |
