However, I do not use the olive oil--I don't find it needs it. I also think you can use less feta, and I don't use the orange zest and don't miss it. It was a bit too salty though, next time I will omit the salt in the dressing as the feta is plenty salty enough. I don't much care for radishes but I still used them and was pleasantly surprised. Cooked they definitely mellow out some and were quite nice. This will meal will definitely make it into the regular rotation for those nights we need something quick! I also substituted the sherry wine vinegar with an orange champagne vinegar and it was fantastic!!! I added some additonal extra virgin olive oil too. I basically took the ingredients and did my own thing with it which turned out marvelous!!! My picky 9 year-old daughter even loved it.
