She mixed an Egg to the meat, pretty much a vital ingredient to hold the meat balls together. She also used Mushroom Soy in addition to the Light Soy. The mushroom soy is what gives these big meatballs their nice dark color. The Soy isn't a big deal but the egg sure is! I added more than 1 can but less than 2, and it was too much liquid for my taste. Also, instead of using just pork, I mixed pork with ground turkey so that the meat was a little "leaner". Finally, I used more soy sauce than suggested for the meat flavoring, and added scallions at the end. Next time I may add a little chili sauce upon serving for some heat. With the chopsticks also and wok LOL. I loved it. I'm eating it as we speak. It is so simple. I think it's a great dish for entertaining. One thing I learned from Rachael Ray on 30 min meals. I can't imagine using 2 cans of chicken broth for this recipe. I would have had soup. I added cornstarch to thicken the broth prior to serving. It is truly gracious and traditional Chinese. I rarely follow a recipe to the T and I didn't here as this was submitted by a viewer. I added 1 teas finely grated fresh ginger and one very finely diced scallion to the pork mixture. I followed the recipe thereafter, but cooked the savoy and meatballs for exactly 8 minutes as they demonstrated on the original show. This is an excellent recipe that can stand alone and be low carb or be enhanced with other dishes for a very nice Chinese meal. It can also be made more wonton soup like with the addition of more broth. It is very versatile and is truly outstanding. It will definitely be repeated...weekly perhaps. Both the mushroom soy and the egg were left out of the recipe. I'd like to know who changes the recipes before they go on the website or are these typos? A lot of other hosts get slammed when an ingredient is missing. Maybe it's the website's fault. Also, the fish recipe from this episode is wrong. The fish was not steamed with the onions. First of all, I found the cooking time considerably longer than 15 minutes, which would have been fine if it was good, but it was NOT. There was no depth of flavor. I added chopped water chestnuts to the meatballs (I highly recommend this) and substituted a small box of chicken stock for one of the cans of chicken broth to intensify the flavor of liquid. But it still didn't taste very good, and more importantly, it did not taste RIGHT. I am considered an excellent cook, but I was at a complete loss at how to fix this recipe. I cook all the time and I am known as an excellent cook but this recipe just didn't do it for me. I had to doctor it up (additional soy sauce, sesame sauce and garlic chili sauce to name just a few...) and only then was it decent but not great. I did thicken the broth with a cornstarch slurry or it would have been more like a meatball soup. In the taped episode, she did suggest you thicken it as well yet it was not mentioned in the website recipe. |
