Great skewers

This recipe is a great idea. I only used fish and not shrimp or scallops. The marinade was a little odd with proportions, so I ended up tweaking it a little. But this is one of my moms favorite meals and it is healthful and delicious.

This LOOKED fantastic on TV but the results were much different. It was very expensive, and time consuming, to make 4 skewers for my family. Then it all went to waste when the fish stuck to the grill and broke off and fell through the grate. The fish that survived was way overcooked and dry even though I took it off the grill at 6 minutes instead of the recommended 12 minutes. I bet the marinade would taste great if scallops and/or shrimp was marinated then sauteed for 3 minutes on the stove. I plan to try that again.

After seeing the show, I made the fish skewers. They were awesome. I used halibut, shrimp and scallops. The halibut was simply awesome. When I make this again, I will not use the scallops. They were okay, but kind of a pain - stuck to the grill and we really liked the fish and shrimp the best. Great recipe for carb control and the kids (3-5) loved it too!

Forget the shrimp & scallops, I just used cubed swordfish -- skewered with cherry tomatoes and canned pineapple chunks -- and the dish was a grand success. This will become a monthly standard.
