A little bland, but good 07/12/2008 at 07:51pm User: Anonymous User Rating: Slightly bland as written, so I add a little more vinegar, fresh dill and pepper. Delish! delicious! 07/12/2008 at 04:50pm User: Laura from Tell City, IN User Rating: My family loved this. I'm sure we'll be making it all summer long with the cucumbers from our garden! I used dried dill, instead of fresh, and it still turned out wonderful. Bland 07/09/2008 at 04:30am User: Michael from San Jose, CA User Rating: This is a nice start to a worthwhile recipe, but as is, I think it's far too bland. Next time I'll try to perk it up by reducing the mayo (maybe to 1:1 with the sour cream) and adding some 1/4 to 1/2 tsp of hot sauce. If that doesn't taste great, then maybe some additional herbs. Dill alone in all that sour cream & mayo is just too ordinary. served with potatoe salad which was a mistake 05/30/2008 at 07:54pm User: Kay from Woodburn, OR User Rating: I believe I would of like this dish better if I hadn't pair it with potato salad. Both were covered with dressing(mayo). I like a crisper cucumber salad. I served it at a BBQ..the potato salad was a hit. Not many people ate the cucumbers. Maybe I did something wrong however I followed the recipe and I had a great cucumber.I might try it again without serving potato salad also. A Crowd Pleaser! 05/05/2008 at 10:18am User: CATHLEEN from Fuquay Varina, NC User Rating: Easy and wonderfully refreshing! too much dressing 09/05/2007 at 08:13pm User: Valerie from Alpharetta, GA User Rating: this just tasted like cucumbers covered in mayo. I used about twice as much dill and still wasn't tastey. Not a keeper for us. Yummmmmy! 08/20/2007 at 08:43am User: Felicia from Centreville, VA User Rating: Quick & easy salad. My neigbor and I devoured the entire bowl after it had chilled. We just couldn't stop eating this one! I also served it on a bed of lettuce. Very refreshing! A big hit with the family!! 07/09/2007 at 05:07pm User: Valorie from Hardin, KY User Rating: This was a perfect cold salad for a summer meal. This recipe was great! Excellent Potluck Side 06/17/2007 at 10:19am User: Deborah from Dale City, VA User Rating: I made this for a year end softball team potluck and it was a huge hit. It was so easy and went over well with all ages. Inexpensive to make a potluck quantity of. Highly recommended. Delicious! 05/30/2007 at 05:16pm User: Corie from Quartz Hill, CA User Rating: I am so happy that I found this recipe! My whole family loves it..especially my husband! We had our children and grandsons over for dinner and I made it for the first time. It was a HIT! My husband heads for the cucumbers now whenever we get to the market. I make a really big batch and it still goes fast. It's easy to make and it's a hit with the family. Cool and refreshing 03/20/2007 at 12:56pm User: amy from Burke, VA User Rating: I made this for my weekend "summer picnic". The only thing that I did extra was I blotted the cucumbers before puting them in the cream sauce. This was so good, I will definitely make this again. Love it! 02/27/2007 at 05:00pm User: Vonna from Saint Cloud, FL User Rating: I ate this like I was never going to see another cucumber again! I was worried about the combination of flavors, but it came out perfect. My boyfriend doesn't even like mayo and he loved this salad. I will definitely make this again! nothing could be easier 01/15/2007 at 09:23pm User: LISA from Kent, WA User Rating: Made this dish as part of my Christmas dinner. Wanted something a little different than the traditional green salad so I made this as well. Not only was it simple but delicious. With a mandolin, slicing the cucumbers was a breeze. I recommed that you prepare this the morning of your event so it has time to chill(with the exception of slicing the cucumbers) but not the night before, because the dressing can become thin. Easy and delicious 01/14/2007 at 01:30pm User: Anonymous User Rating: This recipe was easy and delicious! Even my teenagers loved it! Yuck! 01/11/2007 at 11:48am User: Anonymous User Rating: Didn't have enough flavor, or salt. Cold cucumber salad 01/03/2007 at 08:56pm User: Suzanne from Savannah, GA User Rating: This was only an average recipe. This is perfect for a summer side dish--cool and refreshing!! Thank you Paula for this trip back to my childhood!! Great! 07/28/2006 at 12:26pm User: Ann from San Antonio, TX User Rating: My whole family loves these cucumbers. They keep in the fridge for several days (if they last that long). One of my favorite recipes! Easy Peasy 07/14/2006 at 06:18pm User: Whitney from Fayetteville, NC User Rating: Very nice side dish for the summer time. I add a little hot sauce for some extra flavor and bite. Creamy & Delicious 07/01/2006 at 07:57pm User: Anonymous User Rating: This salad is so creamy and yummy. Loved it! refreshing 05/24/2006 at 03:12pm User: tracy from el cajon, CA User Rating: This salad was so refreshing. The process to drain the cucumbers was a little timely but really important to keep the salad from getting slimey. I would probably even drain them a little longer next time. Fantastic Cucumber Salad!!! 05/22/2006 at 07:50pm User: Laura from Lake Elsinore, CA User Rating: Well, all I can say is I can't get enough of this cool crisp delight. Easy and Wonderful 05/22/2006 at 12:54pm User: Anonymous User Rating: This refreshing salad is a great appetizer or side dish, and is particularly nice at a barbecue. It did seem like it was missing something though. I added 1/2 teas. dill in. Was awesome! Wonderfull & Refreshing 05/18/2006 at 03:27pm User: Kevin from Gainesville, GA User Rating: I dont know about you, but you give me a cold salad, and I'm happy. The crunch of the cucumbers, and the taste of dill drvoe me wild. Thanks uss Wiley Yum! 05/15/2006 at 05:30pm User: Anonymous User Rating: If you like cucumbers, you'll love this simple, tasty salad. Needs more seasoning 05/15/2006 at 02:22pm User: LINDA from Chicago, IL User Rating: The only seasoning is fresh dill and a little black pepper? Try adding some garlic or onion powder (or thinly sliced onions) or a splash of lemon juice (it won't curdle the dressing) to jazz it up. Just cucumbers and the creamy dressing is pretty bland. I have the same complaint about Paula's squash casserole from another show. Sounded and looked good, but in reality it needs something! Good 05/12/2006 at 04:13pm User: Tonya from Brandon, FL User Rating: This is a really good summer side dish. Delicious 05/06/2006 at 04:35pm User: Anonymous User Rating: A keeper - will make again!!!! Fantastic! 05/05/2006 at 06:06pm User: Anonymous User Rating: Just like my mom used to make, but I didn't have the recipe. I added fresh mint leaves, also, which gave it an additional bit of freshness. Will definitely make it all summer long with our over-abundance of cucumbers in the hot Sacramento Valley. Thank you, Paula! We love this! 05/02/2006 at 06:58pm User: stephanie from brandon, FL User Rating: It's such a great cool treat. My kids love it as much as I do. It's quick and simple and now a family favorite around here. Carol's review 04/29/2006 at 01:00pm User: Carol from Lakecity, MI User Rating: wonderful Soooo Good 04/28/2006 at 12:19am User: JEAN from doylestown, PA User Rating: I'm a senior citizen (complete food junkie) and have been eating cucumbers and cream for ever. This is the best I have ever tasted. I happen to like some slivers of Vidalia onion in the salad. I've made this endless times. Sometimes I need to add a tad of milk so the consistency pleases me. I've been a fan of Paula's since she was on ready set cook. Keep the faith. sour cream only! 04/25/2006 at 11:17am User: Anonymous User Rating: i love this salad! it's so fresh and light. i would suggest only using the sour cream though, leave the mayo out of it. it weighs it down. Great for a picnic 04/13/2006 at 09:51pm User: Rhonda from Marble, NC User Rating: I made this receipe for a family picnic and everyone loved it. I cut up some red onion with the cucumbers and let them set with the salt and vinegar it tasted great with the fresh dill. This was a re-freshing dish for Spring and it will be on my table at Easter. Thank you Paula for another great recipe for my family. bland cukes 03/13/2006 at 01:20pm User: DEBORAH from parkersburg, WV User Rating: this receipe did not have enough flavor like the basic cucumber and sour cream and onions that i like I needed this 03/05/2006 at 08:42pm User: Marla from Anna, IL User Rating: I was so glad to see the show with this on. I know its something simple but I didn't know the ingrediants to use. My fiance pretty much licked the bowl. Cucumber salad is one of his favorites and he loved it! Thanks Paula More Cucs, Less Dressing! 03/02/2006 at 08:40am User: Michelle from Blue Springs, MO User Rating: Our three preschoolers LOVED this recipe! My husband and I, however, prefer a little more cucumbers and much less dressing. We all enjoy cucumbers, and we usually have them with just a little salt and pepper, vinegar and oil. I think we'll just stick with that. You know the old saying, "If it ain't broke, don't fix it". :) Old Recipe Lives Again 02/27/2006 at 09:32pm User: Daniel from Marietta, GA User Rating: This is a recipe that my Mother and Grandmother used to make for picnics. It is just fantastic. Keep them coming Paula Cold Cucumber Salad 02/27/2006 at 01:39pm User: Anonymous User Rating: Amazing. Not what you expect it to be, but much better!! Very good 02/26/2006 at 03:06pm User: Joan from Nisswa, MN User Rating: I don't care for cucumbers, but I made this for our guests and it was a hit. I put some thin sliced red onions in it after reading the reviews and it was perfect! Thanks Paula, love your show! Fantastic 02/22/2006 at 12:17pm User: Maureen from Palmdale, CA User Rating: This salad was so delicious my husband and I could not stop eating it. For something so easy, it was criminal that it was so good. I did add some red onion slices because my husband loves onion and it really added to the salad. But as Paula says the beauty of a recipe is that you can change it. I can't rave enough about this recipe! Just like home 02/17/2006 at 04:36pm User: Kym from Tenino, WA User Rating: Thank you for this recipe, I remember my mother making it when I was a teenager and I loved it, but never knew how it was done. When I made this it was as good as I remembered, for a few minutes I was right back home. cold cucumber salad 02/15/2006 at 09:20pm User: ruth from Elbridge, NY User Rating: very very good Paula 4 stars 02/11/2006 at 07:01pm User: tanya from san leandro, CA User Rating: I think that Paula Dean is funny and down to earth,I alread get some good idea when I watch her show. Cold Cucumber Salad 10/08/2005 at 04:13am User: Cynthia from Dent, MN User Rating: This salad was excellent. Very creamy and the dill added so much flavor. I used an unusual cucumber in the salad that had a very unique flavor. The cucumbers were the yellow variety. About the size of a small baseball. I will definitely use this salad recipe again. Variation 10/01/2005 at 03:37pm User: Anonymous User Rating: I was out of dill so I substituted 1 tbl. dried mint leaves. Delicious! Very refreshing 09/25/2005 at 09:01am User: SUZANNE from Miami, FL User Rating: The first time I made this I followed the directions exactly. It was good but I thought it needed something extra. The second time, I added garlic and razor thin slices of red onion. I liked it better and will continue to make it this way. The rest of the base is perfect! salads 09/22/2005 at 04:38pm User: karen from Alpena, MI User Rating: wonderful, have been looking for this recipe for a long time Delicious!!! 08/11/2005 at 12:03pm User: Vickie from Altoona, PA User Rating: This has now become our favorite recipe for creamed cucumbers!!! One of the nicest features of this recipe, is that the dressing doesn't become runny since the use of the salt and vinegar draws out the excess moisture. They are even better the next day!!! kids new favorit side dish 08/02/2005 at 02:01am User: LAVADA from st.marys, GA User Rating: this was so simple to make .i was surpised how well the children liked it because i usaly can not get them to eat cucumbers.andd i never new about draining the cucs first untill i saw you do it on your show. Coo Coo for Cucs 08/01/2005 at 09:27am User: STACIA from Galesburg, IL User Rating: I am 9 months pregnant and made this salad 2 weeks ago, pretty much as written except for I used chives instead of dill as that is what I have in my garden. I don't know if it's the salad or some crazy pregnancy craving, but I have made it THREE times in two weeks. I can't get enough! It's quite good, and I can't stress how much taking the time to drain the cucumbers makes all the difference. Another great & easy Paula Deen recipe. Refreshing but Salty 07/25/2005 at 09:09am User: MELINDA from Cambridge, MA User Rating: This salad is tasty, but the kosher salt made the cucumbers really salty. I had to pack this for a road trip so I individually dried each slice with a paper towel. I made this with fat free sour cream and fat free mayo for my diabetic dad, and it tasted pretty good! Loved it. 07/24/2005 at 08:37pm User: Anonymous User Rating: Great salad. Make sure to let the cucumbers drain. The final product was watery. Perhaps I should have served it right away. Made this for a party 07/06/2005 at 09:56pm User: LEIGH from Long Island, NY User Rating: And it was the best recipe for cucumber salad ever! Creamy and delicious. Just like Mom's 07/06/2005 at 10:29am User: NANCY from Beaumont, CA User Rating: This recipe is exactly like my Mom's and Grandma's recipe, except that they added sliced green or white onions to the soaking liquid. When combined with the dressing, the onions add extra zip and crunch. Thanks again, Paula:) great salad 07/04/2005 at 07:33pm User: maria from Moreno Valley, CA User Rating: very good salad thank you Paula your the best Wonderful On A Hot Summer Day! 06/29/2005 at 08:59pm User: Meridith from Toccoa, GA User Rating: I have tried to make cucumber salad before...but the extra step with salting the cukes and letting them drain made for an amazingly creamy salad. No watery mess! So creamy and cool to eat when it's hot out! Wonderful Summer Salad 06/29/2005 at 09:18am User: ESTELLE from Letohatchee, AL User Rating: Took to a cook out and they were fighting over it. They raved about how great the salad was and I actually ran out before we had gotten to our main course! As Paula said, you MUST take the time to drain the water from your cucumbers otherwise the salad does not look as pretty nor taste as delicious. yum - yum 06/23/2005 at 06:54am User: Mary from Belleville, WI User Rating: Cool, crisp summer side dish Cold Cucumber Salad 06/12/2005 at 10:00am User: Jan from Gray, TN User Rating: This recipe is just wonderful and refreshing. Instead of sprinkling the vinegar on the sliced cucumbers with the salt, I added the vinegar to the mayo/sour cream mixture and a pinch of sugar. Definitely a keeper! not so great 05/07/2005 at 07:13pm User: DIANE from tunkhannock, PA User Rating: I usually love Paula's receipts but this one was a little disapointing Not one of the best 04/10/2005 at 06:42pm User: BONNIE from uniontown, OH User Rating: A little disappointed, missing something. I won't make it again. cold cucumber salad 04/04/2005 at 06:51pm User: Anonymous User Rating: I loved this. I used less mayo and sour cream to lighten it up and it was just fine. If you want an extra kick, I bet feta would work perfectly. lighter and tastier 04/04/2005 at 11:56am User: DAVID from Denver, CO User Rating: I make a similar salad frequently but replace the sour cream with more plain yoghurt and cut down on the mayo. I also add paper thin slices of sweet red onion for extra zip. Four stars 04/03/2005 at 12:55pm User: AMBER from chino, CA User Rating: It's a good concept. Healthy, tasty cucumbers dressed up with fresh dill and creamy mayo and sour cream. It's a refreshing side dish. My husband and I both felt like it was missing something though... it needs some kick. In addition to the fresh dill, I sprinkled some dried dill as well to enhance the flavor, but that didn't really give it enough flavor. I may try using the base for her pea salad and through in some crumbled hard-boiled egg and chopped onions. We'll see. I might make this again. |
