Made this as a side dish for Thanksgiving. Everyone loved it. Substituted Vegetable broth for the chicken broth/water and also increased the volume of the broth by about a quarter cup so that all the cauliflower heads were soakking evenly in it. Also used extra virgin olive oil cooking spray to coat all the cauliflower heads more evenly than drizzling olive oil over them.

Have made this several times and it's always a popular side dish, even for those who say they don't like cauliflower. It does very well at room temperature on a buffet table as well as hot from the oven. I've also added sliced Roma tomatoes, and used grated cheddar when I ran out of Parmesan.

I have always hated cauliflower, and have never ever cooked it before. But he made it look so tasty and so easy on his show, I had to try it. So tonight I tried all his recipes from this episode, and they were all very good. I have found cauliflower is not the enemy. It was quite good. The fresh grated parmesan though was not for me, it was too tart and made a flat hard cooked layer instead of molding to each piece or being melted and soft which is what I was expecting. But still overall it was tasty.

I didn't LOVE this recipe like I do most of Dave's stuff, but strangely enough, my husband (who hates all veggies) loved it! I halved the recipe too but found the white wine too much. Maybe I have to use a different kind of wine. Also, I didn't mix the parmesan cheese w/ the bread crumbs and when I cooked it, the cheese became this hard, chewy, gooey crust over the cauliflower.

User: JERRICA from Miami, FL    User Rating:
I hate cauliflower with a passion, but tried this anyway, and was glad. It is the only way to cook cauliflower that I've ever enjoyed. I halved the recipe, and it came out great, although I suggest not halving the topping, which of course is the best part. I substituted spray olive oil for the real thing, water instead of broth, and nonfat ricotta for the cheese, to cut back on the fat. These also worked great.

The best way to eat cauliflower!
06/16/2006 at 05:02pm
User: Abbey from Austin, TX    User Rating:
This is my favorite vegetable dish. The sauce that ends up in the bottom of the pan is so good spooned over wild rice or sopped up with fresh bread. This is a great way to get some really wonderful nutrition into your diet. The preparation is a little tedious (picking apart all of that cauliflower), but I like to make a big batch and keep it in the fridge, because it holds over very very well. The sauce thickens a bit when you reheat it and is absolutely delicious

This was so easy, quick and tasty. We loved it. It reminded me of a caulifower dish my italian cousin use to make when I was a child. It was so very yummy. The only change that I made was to use 1/2 parmesan and 1/2 romano cheese. Other than that I followed the recipe as is. Would not change a thing it was AWESOME!

My husband did not care for this at all. I followed the recipe exactly, and my husband tossed out his portion and told me not to make this again. I liked it, but he is not a big fan of cauliflower and if he does eat it, it has to be drowned in Velveeta. I would recommend either making the pieces smaller or baking it longer.

This was an easy veg to make and I am always looking for something made with cauliflower. I would suggest baking it longer than the recipe states if you like your veg more on the soft, rather than 'al dente' side. Otherwise, very easy and had a nice flavor (I added more parmesan).

Dave, welcome to the Food Network. After trying this fantastic cauliflower dish, I can't wait to see what else you've got up your sleeve. I like cauliflower, but rarely eat it any way other than steamed or microwaved. I loved this dish for its depth of flavor AND its simplicity. Will definitely make this again, even on a week night and definitely when I have people over.

The olive oil (w/bread crumb mixture)was just too much. The end result was just not a good taste at all. Cauliflower is so mild and all these overpowering flavors just ruined an otherwise yummy veggie.

Neither my husband or myself or big fans of cauliflower; in fact, I'd say I almost dislike it! But this dish is DELICIOUS. The topping is scrumptious--you almost feel like you're having lasagna! I noticed a couple of people said the cheese came out hard on top; I mixed it into the breadcrumb mixture before spreading it on, and it melted perfectly. I also added extra garlic. It's definitely tasty enough to be the main course--and we're not vegetarians!

I don't usually go out of my way for cauliflower - but I had some left over and needed to use it so I tried this recipe. It was so delicious - I could have eaten the entire pan! I was surprised that some reviewers said it was bland - as this is such a flavorful dish (and I hate bland food). The other thing to note is the cheese - one person said the cheese all sunk to the bottom rather than staying on the cauliflower. I think it really matters how you grate it. I used a block of Parmesan Reggiano and grated it on the large side of the grater (Dave said the coarsely grate it). The cheese melted all over the cauliflower and was delicious! I was actually disappointed that there wasn't cheese on the pan to snack on :) Definitely don't use pre-grated cheese or the Kraft Parmesan in the can - it would be a drastically different dish if you did!

This is an excellent side dish. It has loads of flavor, it's very easy to make, and it appeals to just about anyone's palette (including those who don?t particularly like veggies). The only drawback? it?s so delicious, you have trouble leaving room for the main course.
