She made them look easy enough, so why not try them at least once. I started thinking about this recipe and looked it up. A trip to the grocery store to get bananas and baking powder later, I was mixing up wets and drys and I was on my way to cooking these up for dinner. Pancakes for dinner? We don't care! I have been on a Oatmeal Raisin cookie kick here lately so might as well go with it. I have made Oatmeal Raisin Cookies 2 times in the last 2 weeks. Anyway, the first pancake was raw in the middle. I ate it anyway and cooked the second one. And cooked, and cooked. These take forever to make because you have to cook the oatmeal in the middle. I wonder if quick oatmeal in those little packets would work better? And surprisingly I didn't like the raisins in them too much. They gave an off flavor, I might put them in later next time so mine can go without raisins and my best friend's can go with them (he thought they were perfect, he wouldn't change a thing) and I could barely taste the banana that I put in. I followed other people's advice and only put one in. Because I didn't want banana nut bread. Overall I will try these again, but these tasted more like a bowl of oatmeal in pancake form rather then a cookie. I am not complaining though. We had overnight guests when I made these pancakes and I received rave reviews! There's nothing exotic so it's a breeze to mix up. The batter is thicker than normal pancake batter so they take a little longer to cook...or maybe I just didn't take the time to spread them out. Definitely a recipe I'll keep and make again! This is my version: 1 cup pancake mix, 1 cup oats, 1/3 cup brown sugar, tsp cinnamon, 3/4 cup milk, 1 egg, tsp vanilla extract, 3/4 cup raisins, and I doubled the walnuts b/c i think they're the best part. These pancakes don't even need syrup! they're so great but the batter is pretty dense but the pancakes come out thick and fluffy. Definitely a keeper! I did substitute a bit thoughto amp up the nutrtion. I substituted skim milk for both the sour cream and whle milk, and instead of regular flour, I used unprossed whole grain flour. He's usually a pretty picky eater, so I didn't tell him they were oatmeal and banana or he probably wouldn't have eaten them. I made half a recipe, left out the raisins, added mini choc. chips, and cut the butter in half. They were really pretty good and nice and filling. I added a little more sour cream than the recipe called for to make up for the lack of moisture that the bananas would usually contribute. Consistancy and texture turned out fine. Of course, adding the fruit and nuts would make this recipe great vs nice (needs that raisen sweetness) and I will make sure to have them in my cupboard next time. I make them pretty small. It makes it easier to get them cooked right. When I made them as big as Rachel did they weren't cooking evenly. Although I made a few changes to accomodate our diet it still came out delicious. I omitted the banana, used egg beaters instead of eggs and substituted apple sauce for the sour cream. I also used fat free milk and only used 1/3 cup of brown sugar instead of 1/2c. I was out of raisins so I just increased the nuts to 1/2 cup. I used Promise fat free margarine for the melted margarine and used nonstick spray for the skillet. And for those cutting back on sugar I used Smuckers sugar free maple syrup. This was really fabulous. Will make again. Next time for my grand kids, they will love this. Even my 11 and 13 yr old boys, die-hard Aunt Jemima fans, had seconds. I left out the nuts, only because I didn't have any, and cut down from 2 bananas to 1. I was thinking applesauce would probably make a good substitute if you wanted a less banana-y flavor. The ultimate test was today, when I reheated the 2 left over pancakes. I couldn't believe it, but they were as good, if not better than yesterday! It is worth noting that since the texture of the batter is heavier than regular pancakes it takes a little longer to get them uniformly "done" in the center. I set my electric griddle to 300 degrees and used 1/4 c per cake. Make a couple of test ones to get the timing right. Enjoy!
