My daughter loves Rachel Ray! Her favorite show along with Dora the Explorer is 30 minute meals with Rachel Ray! She watches the show and then decides if she wants to make any of the recipes on that days show. We print out the recipe online, she takes her little grocery cart around the market and gets the ingredients, including talking to the butcher or fish monger. She selected this recipe and the Oatmeal cookie pancakes ( with an addition of chocolate chips for "love" she said) to make for her daddy It was easy to make, and very very good. We love this one. it is also great for the morning after a party or if you have allot of people to serve breakfast or brunch to.

I have been making scrambles for years with ham. I never thought of using sausage. Now I make the sausage scrambles with ham steak and bacon on the side every Saturday.

I made this recipe for my husband with the oatmeal cookie pancakes. The combination was excellent, and we both LOVED every last bite. Tons of sausage and cheese, I used extra sharp cheddar, make this filling and delicious. We are going to make it again for his mom for mothers day.

Every Sunday night there is a group of us that gets together for dinner, and one member of the group cooks. It was my turn; it was a hit. Everyone loved the sausage scrambles and cheese. It is definitely hardy enough for dinner and really easy to adjust for a big group.

My husband and I enjoyed this dish. I made it just as directed except I omitted the hot sauce since neither of us are big on spicy dishes. It is a quick, easy meal. We added some apricot biscuits and blueberry smoothies for a filling and satisfying supper.

fattening, but not bad
02/13/2006 at 05:53pm
User: Sally from San Antonio, TX    User Rating:
This wasn't too bad, but (as I always do with Rachael's recipes) I omitted the EVOO (since the nonstick pan served its purpose), used 1/2 the sausage, and probably about 3/4 of the cheese (a sprinkling - I just eyeballed it), and used nonfat milk.

VERY delicious!!!

Make Sure to Use Maple!
01/25/2006 at 10:38am
User: Dawn from Monroe, MI    User Rating:
This was delicious. I couldn't imagine it would be anywhere near as good if you used any sausage but maple. The maple sausage gave it just the perfect amount of sweet. Just as good the next day reheated as leftovers, too.

Beware of cheese
01/22/2006 at 02:42pm
User: Anonymous    User Rating:
I used a good Vermont cheddar for the cheese, but in the few moments extra the eggs sat in the pan the cheese started melt and make a greasy mess of the eggs. Either the cheese was wrong, or the timing was off, but the receipe fell apart in the last few minutes. I saw Rachael make this recipe and I didn't expect a problem. I never thought about the cheese causing an oily mess in the eggs but it happened in less than 5 minutes.
