This recipe was simple to prepare and very good. I don't think, however, that it will become a regular at my house, but I am sure I will make it again at some point.

I wish Michael had provided recipe for just enough rub for this recipe. I tried to approximate it and did fairly well, maybe a little too much fennel. The taste is great. I lowered the oven to 325 after the first 10 minutes around and increased the time to 30 minutes. Perfect.

This is a great chicken recipe and easy to make. The fennel spice rub is fantastic and the skin is nice and crisy.
