I thought they were great, my husband loved it. The only tiny draw back was it was just a tad to oily.

I din't have the ingredients needed for the salad portion of this meal but the dressing came out wonderful. Used Apple cider vinegar in replace of the sherry vinegar. Will make again.

I've made this recipe several times and everyone loves it! I'm not a fan of raw red peppers, so I subsituted roasted red peppers and they were wonderful with the rest of the ingredients.

the amounts of vinegar to oil do not make sense to me. I thought the ratio was three to one..three oil to one vinegar. jane thompson

This was a great salad and very easy to make. I also used the sheep feta and it was wonderful. I left the pitted kalamata olives whole and that worked fine. The dressing was easy to make and very, very good. Thanks Giada!

First the changes: I used 1/4 of a red pepper, and I used red wine vinegar because I could not find sherry vinegar out of three grocery stores. This salad I will definitely be taking to a potluck sometime and making it many times more. VERY GOOD!

I made this for a family dinner and EVERYONE loved it and wanted the recipe. My changes to the recipe included the use of fresh oregano and a touch of honey to the vinaigrette. Outstanding!!! Joan C. Houston, TX

DRESSING WITH A PLEASING BITE TO IT

I OFTEN FIND SALAD DRESSINGS ON THE BLAND SIDE (NOT ENOUGH ACIDITY). THIS ONE HAS A NICE BITE TO IT WITHOUT BEING TOO HEAVY ON THE VINEGAR. I USED A SHEEP FETA WHICH GAVE ANOTHER LAYER OF BRIGHTNESS. I'LL BE USING THIS RECIPE REGULARLY.

I made this salad as a precursor to an extravagant dinner for my husband's birthday. Little did I know, that salad was our favorite dish! We make it all the time now.

Very Italian

We enjoyed this salad. I used red wine vinegar in place on the sherry vinegar since I couldn't find it anywhere. The oregano and kalamata olives, along with the feta cheese gives this a real Mediterranean flavor. But be careful when adding the dressing to the greens - it is quite strong, but delicious if you don't overdo.

lots of flavor

I really enjoyed this salad. I used red wine vinegar instead, and added sundried tomatoes instead of bell pepper. The dressing is more than enough, and I didn't use it all. I will definetly make this again.

Nice flavor....

This salad turned out great! I almost didn't make it, but decided to go for it while the pasta was finishing. I liked this even better than the pasta! I used red wine vinegar instead of sherry vinegar. Also, I did not use the red pepper. Excellent!

loved it!

When I first made this, I winged it. I didnt look up recipe, but went from what I remembered from the show. I forgot the oregano and the feta cheese, and it was still a great salad and salad dressing. to me, that is a great recipe, when you can forget an ingrediant and it still tastes good!

Loved it, very tasty

This WAS stress-free Italian. The dressing is really easy. I didn't have sherry vinegar on hand, so I just used red wine vinegar. Also, instead of the feta, I used curls of Parmesan cheese. The salad is so refreshing...everyone loved it! It tasted GREAT!

Sherry Raspberry Vinaigrette
01/21/2006 at 02:49pm

I used this vinaigrette recipe as a base for a raspberry vinaigrette, and it was absolutely divine. The only thing I changed was the amount of sherry vinegar to 1/4 cup and then I added three tablespoons of Chambord (raspberry liqueur). It was great with a simple mixed green or spinach salad with edible flowers for garnish.
