Yes, this was a VERY time-consuming recipe. Why do this much work when you can get a similar, yummy result by making the Taco Casserole recipe from the back of the Ortega Taco Shell box? Check out the recipe when you get a chance. I use shredded chicken in it, and modify it a bit by adding a layer of refried beans. It's quite delicious!

I was expecting big things from this recipe because Emeril's recipes are usually good and I like casseroles. This was NOT GOOD though. It was time consuming and uses a lot of ingredients and despite all the ingredients there is not a great flavor and it is totally nothing special. I would not waste my time ever making it again.

Outstanding flavor. I added a layer of black beans and simplified it by just using canned cream of mushroom soup with some fresh mushrooms. I slow cooked the chicken all day in a crock pot as well, so it was juicy and tender.

My husband and I liked it, it was good. Considering all the work that goes into it, it tastes like you opened cans and threw it together. I don't think I will be making this again, maybe if it didn't take so long, or if it tasted like you put a lot of work into it. I did however love the mushroom gravy, I will make that again on its own.

The crust was just too soggy and the flavor overall just wasn't there in the casserole. A major flop; we ended up tossing most of it.

I made this for my in-laws and they loved it!!! Although this is quite time-consuming, and there are tons of ingredients and steps that need to go into it, it's WORTH IT! The one thing that I wish I followed was to let it cool slightly before serving. The presentation will be much better if you can serve it in squares, rather than a pile of mush! Trust me, you will love this dish!

I've never reviewed a recipe before, but this one made me so angry I signed up. There is no need to leave the chicken in the hot liquid so long. Turning the heat off after the liquid comes to a boil, then letting the chicken sit for ten minutes is plenty of time to have tender, moist and flavorful chicken. This method renders the meat dry and tough. I was so mad at myself for following this sketchy recipe.

It's not a recipe to make in a hurry, by any means. And next time I will saute the onions and bell pepper before baking since they were still pretty crunchy. I will probably make again, it was pretty tasty but I'll try to simplify a few things.

I like making a batch of this and splitting into two smaller casserole dishes (there are only two of us in the house)and freezing for a night I don't feel like cooking. It is a reliable recipe and great alternative to typical casseroles.

I thought this casserole was really great. It tasted like a super good mexican resteraunt dish. My family loved it. It does take a bit to make it, but for a small family of 4 you can divide it in half and freeze haldf for use at a later date. It was really excellent.

Cowboy Chicken Casserole???? I don't know who named this dish but it obviously doesn't fit the dish. For one thing the ingredients just are rediculous in terms of "Cowboy." Dry white wine, "unsalted" butter, "white button" mushrooms. Please get a grip. What cowboy out on the range is going to have or better yet care if they have dry white wine and button mushrooms. And I am sure they wouldn't care if their butter was salted or unsalted. I am sure they would have preferred beer to dry white wine anyway. This should have been called New York Chicken Casserole. And on top of everything, the casserole wasn't very tasty and it was very time consuming.

Although there are quite a few steps to this recipe, it's well worth it. I used Emeril's southwest seasoning from the store instead of the individual ones in the recipe. Also, I roasted and finely chopped the jalepenos added them to the tomoato sause to even out the flavor. My family loves it. A keeper for our house.

I am new to Mexican food...but this is delicious. The poached chicken has a wonderful flavor, and the end result is fabulous. Great rolled in tortillas as well! Easy to prepare, and freezes well.

We enjoy casserole dinners from time to time, and love spicy foods. This was a bit mild for our taste for South of the Border food, but I put extra condiments on the table, hot sauces, salsas and sour cream and made a spicy red and green bean salad to accompany it. It was a big hit. I have to add that the mushroom sauce has such a great flavor that I plan to use it for other dishesthat require a mushroom sauce.

I decided not to boil the chicken, I went to the local market and bought a pre-roasted chicken, in fact I got a couple of them, cut the breast meat into bite sized pieces. The other thing I did was to fire roast several Pablano Chiles until the skin was chared, then pealed off the char, and remove the seeds and cut them into strips. I layed down some of the chips, then a layer of the roaste Pablanos, then more chips; chicken and basically followed the rest of the recipie. After getting it all combined and oven ready, I too thought it looked a little dry, so I added a tad more Chicken broth and white wine. This served 6 comfortably, it was very well recieved by my guests. Next time I might consider trying to add a little beans in the form of chile. I also suspect this would be delightful with some pork or beef!!! Emeril, thanks for sharing!

I made this for my husband and I. We love mexican food and I'm always looking for something that freezes well since it's just the 2 of us. This did take quite a bit of time to prepare. I thought it tasted good, but I was not keen on the tortilla chip crust on the bottom. It turns out kind of mushy and you do not need 12 cups of it. I think I might try it again next time without the crust and then just serve chips or even tortillas on the side with it. I also did not use the jalepeno's. I had forgotten them when I went shopping. It tastes fine and has a nice mild kick without them.

This is a great recipe and all guests like it. Many have asked us for the recipe. It takes us longer than the 30 minutes of prep time(time given by Emeril) when we make the casserole from scratch (we are not professionals), but it is worth the effort when you taste it and see your satisfied guests. Made this yesterday before Emeril did his thing with it on TV last night. The way he did it was not quite the same as the recipe...and if you don't have all your ingredients prepared by little elves in the back of the house it takes far more than 30 minutes (more like 60-90 minutes) to "prepare" it. Hints - you don't need 12 cups of tortilla chips. You could not get 12 cups of tortilla chips into a 9x13 casserole! 4 cups tops. I didn't have whole milk and used 2%..and I didn't have a cup and half so I added extra chicken broth. The mushroom mixture didn't get anywhere nearly as thick as his did but it still tasted great. When it was all put together I thought it looked a little dry so I poured the remaining chicken stock (from cooking the chicken) over the top of it. It was a big hit and it definitely makes 8-10 servings..in fact, I'd say 10-12. It's very filling so serve up small portions! Sour cream is a condiment for everyone to add to their taste at serving.

This one is well worth the time it takes to prepare...It's sure to be a crowd pleaser. I added sour cream and black olives to the mix for a melt in your mouth taste sensation-reminicent of a genuine Tex-Mex creamy Chicken Lasagna. This also holds up well, is easy to slice; so it's great to make ahead, and freeze, into individual micro-waveable containers for quick meals & on-the-go lunches. Definitely a winner!

Yes, this recipe is very time consuming, but well worth it -- even my son, who is VERY picky, ate 2 plates full of this casserole. The bottom tasted like the outside of a tamale to me. I did saute the onions and peppers before putting them in the caserole, that worked better, they weren't still crispy when the casserole was done. I used red peppers and omitted the jalapeno, as my family doesn't like really spicy food. My daughter begs me every week to make this -- Not really a "every week" meal, because the preparation time is so long, but definitely worth a once a month distinction!

I hate to give a bad review because I really do love Emeril. This recipe was time consuming and I guess that is why I expected more. It wasn't just down-right horrible but considering the time spent, it was way below par. My husband thought it was too much of a casserole type meal and we were both expecting a Mexican dish. I appreciate the rating system on foodnetwork.com so that we can decide if we want to spend the time and money on preparing the recipe.

This was yummy, and easy if you break it up over a day. I did sautee the peppers and onions for just a smidge before adding to the casserole, and I do think that maybe adding half and half or heavy cream instead of milk in the mushroom gravy might make the flavor pop even more. I also used less cooking liquid than called for on the chip layer (and yes, you do NOT need 12 cups) My only complaint is that it was a bit salty, and we use a lot of salt here. It reminded me quite a bit of chicken enchiladas. We served it with sour cream and tortilla chips. Thanks!

I was expecting something out of this world for all of the time and complicated steps to put this together. In the end, I think I could have made something just as good with some less complicated spices and some ingredients out of cans. Don't get me wrong, I highly value fresh, homeade ingredients, but in this case it just wasn't necessary. In short, I think Emeril needs to get over himself and not try to complicate an otherwise simple end product.
