If you like your artichokes a bit more on the crunchy side, try this: 1) After lightly soaking in lemon juice, drain and pat very dry. 2) Cook other ingredients seperate from the artichokes per her recipe. Add garlic and a good amount of salt for more flavor. 3) Remove from pan the topping mix you just cooked by placing topping into a side bowl. 4) Add a very small amount of olive oil in same frying pan, and add artichoke bottoms 5) Although the cooking surface does not come in contact with the inside "cup" portion of the artichokes, let them spend equal time frying on top and bottom. A small amount of charring may result, but it just adds to the flavor. 6) For extra flavor, add crushed crutons and parm cheese in the cup part of the artichoke. After it begins to adhere and melt, you can flip it and create a little crust as the chesse cooks directly on the pan. Don't leave it for more than a few seconds! 7) Remove and add toppings.

Tasted canned. Cooking the canned chokes made them totally disintegrate. I couldn't bring myself to serve this. It went directly down the sink.

I love artichokes any way they are prepared. However the tomato and seasoning overpowered them. I think I prefer a simpler preparation to let the artichoke flavor come forward. Where in this recipe does it say that these are "crispy"? It's been referred to several times in the reviews. Maybe I missed something? Crispy artichokes sound like something at Applebees- perhaps not bad, but something I'd rather not eat.

Flavorful, and the dish has a great appearance. Hint: Sauteeing isn't a cooking method to crisp things up. You a lot of very hot oil for a crisp effect. Hope this helps.

I used artichoke tops instead of bottoms. Tops are tender and sweet whereas the bottoms are large and old. It tasted fresh and tops are so much cheaper. Artichoke tops are found in the fresh produce section.




The spices are delish in this dish!

The only thing I did different than the recipe says is I added only one tsp. of Italian seasoning. I thought it might be too spicy if I went with the whole amount. (Just personal preference) They were great! The flavor is awesome! Make sure you salt and pepper them when they are finished cooking, like the recipe suggests, because then you can add just the right amount of salt and/or pepper for your taste.

The taste was awesome, and mine didn't get mushy like some other reviewers have mentioned. Artichokes are pretty durable little veggies.

I used frozen artichokes since I don't like the consistency of canned or bottled. They came out good and tasted great! Hint: Sauteeing is not a cooking method meant to make food crispy.

They retained their shape but all the cooking of already-cooked artichokes made them very, very mushy. If you make this dish you might want to cut way down on the cooking time and increase the seasoning quite a bit.
