Tasty, but NOT easy to make

The first time I made these, the phyllo stuck together, tore, etc.. They were too big and didn't cook all the way to the middle. The second time, I used a different brand of phyllo that wasn't dried out and I cut the sheets in half. I kept the sheets between damp towels. They were easier to do and easier to eat. The level of difficulty should really be listed as intermediate. All told, they were crisp and very tasty the second time around - especially with the pesto.

My guest's were impressed. This is a great recipe in the fact that you can add things to it. I modified the recipe by adding diced shrimp and Old Bay to the cream cheese mixture and served with pepper jelly instead of Pesto. Everyone wanted the recipe. Working with Phyllo is always a hassel, but it was worth trouble.

I've never worked with phyllo dough, but these appetizers looked so good, I had to try them out. I followed Sandra's instructions and it wasn't hard at all. On top of that, my husband, who is not easy to please, was just nuts over them! I cut them in half and served them with store bought pesto, and they were all gone in no time! We give them five stars and you can bet I'll be making them for our next family get-together to impress my in-laws!

dont understand what problem others were having with this becoming soggy, they were a perfect delight. I let them cool, as most things need to cool a bit to sustain its normal condition, they solidified and i was very proud to serve them as the next batch was ready to be taken out and enjoyed. I WIll make these again and again. Tamers

I caught this particular episode, so I actually saw them being made. I was hesitant to try them after reading all the reviews, but did anyway. Mine turned out very crispy, but I baked them on a sill (?) pad like Sandra Lee did on her show - don't know if that made a difference. The cream cheese was actually VERY bland. I will definitely make them again, but will try using a flavored cream cheese next time. Also, on the show, she cut the phyllo sheet in half - did not use a full sheet and piped the filling down the middle instead of on each end as this recipe calls for. This is not the first time I have noted differences in recipes from the shows to these that are printed!!

I was a little hesitant b/c of the mixed reviews for this recipe but this turned out to be a must have for any future parties. I made these yesterday for a bridal shower and they were by far a favorite. Mine were not limp at all and the flavor was great. I did add a little garlic salt and onion powder for flavor. The pesto for dipping really made a difference as well. I didn't want to mess with the butter so I actually used cooking spray instead of butter and it worked perfectly!

My straws were a bit soft but not what I'd call soggy. They were really bland though. Not exactly the hit of the party.

It took a little bit to get the hang of rolling the straws, but by the end I was doing good. Everyone loved them. My kids aren't really into trying new things but jumped up to try these as soon I as took them out of the oven. I think next time I will experiment with the filling. Maybe put more filling in each one or try something totally different. Perfect party food as well. Thanks so much for such a fun and wonderful recipe.

On her show she cuts each one in half before adding the filling. Everyone loved them I would double the filling to each one though. I also added garlic and some spices to the mix. Really with this recipe the sky is the limilt. Apple pie filling ground up and baked in them yummy. I love ya Sandra. Always take my tips from you. Ever in St. Paul, MN let me know I would love to take yourself and husband out to the best country club in the cities. The invite is always open. You are my inspritation when it comes to doing things (cooking, table scapes or things like that) If you ever do a show in St. Paul let me know. These were so good. My teenager saw the show and wanted to try these. She and I worked together and followed the recipe with an addition of 1/4 tsp cayenne pepper and 1/4 tsp garlic powder (not garlic salt). They were just marvelous. Thank you!

Crispy and brown on the outside. I think these seem limp to people because they are long. I cut mine into smaller bites and they really are crispy on the outside.




If you like crisp cheese straws use a different recipe.

I've tried everything to make them crisp up. Hotter oven, longer cooking time, less cheese, etc. Nothing works. They always come out limp. I just watched her make them on tv and they were soft and limp then. That's just the way this recipe is. If you like crisp cheese straws use a different recipe.

I served these at our Super Bowl party today along with a few of this show's other recipes. They were a hit!!!!! I cut them into smaller pieces so people could have smaller portions if they wanted. These taste so good.

Phyllo makes them very light & flaky. If serving at a party, I would cut them in half for easier handling. I also liked them cold. Next time, I plan to add chopped green chili's to the cream cheese and use picante for dipping. Another idea would be to add crabmeat and use sweet & sour dipping sauce - ala crabmeat rangoon in another form. Delicious!
