I've tried a ton of red velvet cakes and this is one of the few that uses butter instead of vegetable or canola oil, and you cannot beat the taste of butter over oil. For those who thought the cake was too dense or tough: make sure you cream the butter and sugar long enough!! The butter should be nearly white and extremely light. If using a standing mixer, you should beat it for about five minutes, and probably ten minutes if beating it with a hand mixer. The creaming process helps aerate and tenderize the cake, so its extremley important. Also, dont overmix after you add the flour. Everyone just raved over it! The cake was super moist and flavorful. The only things I changed was I added just a bit more cocoa powder and I only used 1 ounce of red food coloring (in my opinion this was plenty). I believe the secret to getting this cake to come out moist is to not over cook it. I baked it for 20 minutes like the recipie said and they were perfectly done. The icing was so delicious. I love the combination of the cream cheese and marshmallows. I will definately make this cake again. It was by far the best red velvet cake I have ever eaten! Paula never disappoints! There is a "tasteless" food coloring that you can use... I believe that Wilton makes it. You won't get that chemical, gross taste of red dye. They also make little jars of coloring gel that are very concentrated... you can't measure, but you can eyeball the color you desire by adding a bit at a time with a toothpick (using a clean one with each addition so as not to contaminate the gel) then mixing to get the color you want. These gels work great with frostings too. For those of you that think too much red is too much, have never spent any time in the south or in Texas... too much is even better! I halved the amount of food coloring and vinegar, as some other reviewers suggested. The first night, the cake was OK ... we ended up eating a slice every night for a week, and it just got moister and tastier as time passed. I've had such good results with Paula's other recipes. This cake was a total MESS. The middle layer cracked in half and caused the whole cake to slip and slide around. It took me about an hour and a half, but it was definitly worth all the work. However, the recipie called for 2 ounces of red food coloring, or 8 of those little bottles! I used one full bottle, which was 7 less than they called for, but it was still more than plenty. The only other thing i would suggest would be to process the coconut in the frosting so there are no big peices. Also, make sure you dont overcook and spray the cupcake holders, because mine stuck a little to the paper. This is DEFINITELY my favorite cupcake i have ever had. I think next time i will try a different kind of butter substitute to cut down the fat, because there is 3 sticks of butter between the cake and the frosting!! Ty this recipie, its SO worth it. Everyone loved it. It was a tad dry, but found out from a baker that you should never overmix this cake. Just make sure the flour in blended good and then stop mixing. READ Carefully. It does tell you what to do with the butter. Come on people there are lots of factors that change a cake, including weather. I made this cake and it just sat and sat and sat. That is how I can judge the recipe I ended up throwing it away. I think the cake was too heavy I mean it had to way like 3 lbs. After reviewing the recipe and comparing it to others, I am thinking the problem is the 2sticks of butter. Just too much so next I will try 1 stick as seen in other recipes or maybe i will do 1/2 and 1/2 butter and shortening and see how that turns out. I followed the directions to a T- although I did put in less food coloring than what the recipe called for (only because I didn't have the full 2 oz.) Definitely try this recipe, and make sure that the ingredients you use are fresh. I had problems in the past with stale baking soda, etc. but once i replaced my ingredients, all my recipes have come out great. The batter, and cake is very floury (and yes, I specifically chose cake flour) I added a little oil, and even a little more sugar to my batter because it just wasnt as sweet as I thought it should taste.. I used 1 oz of food coloring only, and it was just fine (for color)- wasnt the maroon color, but certainly red. The ICING was more of a runny consistency versus a nice thick cream cheese recipe. I chilled the icing for a while and went back over the cakes, and it was a little better. I just made it last night. Took a little bite just now, and Im still not impressed. I substituted Paula's carrot cake icing which is in her cookbook because I did not have marshmallows. It was delicious this way and the cream cheese gave it more of a tang. I love the festive red color and the icing is really good too. Itis a very mosit dense cake with a light chocolate flavor. Very rich and yummy! I could taste the food coloring but I would definitely make it again, just minus a bottle or with an additional tsp vanilla. I have cooked this cake on and off for the past year or so and have received so very many accolades for this cake. Last year I actually won a company dessert contest using this recipe; however, I did not use the coconut (not a coconut fan). I had wives' husbands asking me to make it or give the recipe to their wives. I had one mother wanting to make a pan for her and her daughter just before the daughter's wedding!! It has been a large hit with friends and family members. When asked where the recipe came from I just smile and say its a family recipe, so guess what Paula you know have an African American daughter through the birth of the Red Velvet Cake. All jokes aside I give all the credit to you Paula. The recipe is perfect just the way it is and it is DELICIOUS. This cake reminds you of what southern cooking is suppose to be, just plain.....GOOD. There was no cream cheese frosting or coconut. In the original recipe you cook flour and milk together and let cool in frig then add it to a mixture of sugar, butter and vanilla. The result is a frosting that that is light and fluffy and tastes like vanilla ice cream. Not a recipe for beginners and unlike anything I have seen on food tv. People have changed the recipe over the years to make it easier. However, nothing will compare to the original. I can say that because last week I made the WORST red velvet cake EVER using the Waldorf recipe. I should have known. Using a "Paula" recipe never fails. I followed another user suggestion and added 1/2 cup of unsweetened applesauce to the wet ingredients, as well as increased the cocoa to 4T, for a stronger (yet still light) cocoa flavor. I actually made cupcakes this time. I used an oven thermometer to make sure that my oven was at exactly 350, and baked them for exactly 17 minutes at that temp. They are perfectly moist, light as air, melt in your mouth red velvet cupcakes. I used a pastry bag with Paula's icing to decorate the tops in pretty delicate swirls. I am so excited to bring these to work tomorrow, as I am a California girl now living in the SOUTH and I want to prove to my Southern Belle co-workers that I can hold my own!!!!! Thanks Paula!!!! I melted the mini marshmellows for 30 seconds, stirred..then I put them in for another 30 seconds and watched until they puffed up above the bowl. Not the full 30 seconds, but maybe like 20 seconds. I then stirred and added immediatley to the creamed mixture then blended to incorporate, I then added my sugar. This way it got mixed in before the sugar did and diddnt get all goopy as some people here had problems. I am definitley going to use this frosting recipe on carrot cake and anything else that calls for a cream cheese frosting. I had to make a second batch to frost 3 9 inch layers. The only thing that happened was that I didn't think to check how much food coloring I had left, and I only had one tube (.25 oz) of red. I used the whole tube and it still came out a nice shade of red. I feel like 8 of those .25oz tube would have been an insanely intense hue. It was fantastic and everyone raved about it! Since most red velvet recipes only call for 1 tsp vinegar, I followed their lead. The batter didn't taste chocolaty enough, so I added an additional tablespoon of cocoa. Also, 2 oz food coloring seemed like too much, so I only used 1 oz, and the batter was definitely red enough. I made cupcakes with the batter, and while they tasted good, they were dense and did not rise like most. The frosting made them taste better, but the melting of the marshmellow was too messy - just use fluff and 1/2 confectioners sugar.
